Wow, what a story, thanks for sharing.
I have experienced something similar but with a twist I got to a point in 2015 where the nurse said, yup come off the Metformin. And I interpreted that as "cured, eat anything and ease off exercise". Er..um.. ah, nooo guess, what? Weight back on, levels up... *sigh*. So, for 2016 it has been an interesting year re-planning anti-diabetes insurgency, gradually.. cycling to work, weekly kayaking (has benefit of collecting canal weed) and the most glorious, super-fun ever... historical fencing with military sabre, rapier, longsword. Very hard, but massive fun. The lessons for me; don't ease up, reinforce success, gradually build up (and not rush change) and carefully target activities that are fun, challenging and engaging. Endorphins are our friends!
Oh, and how could I forget, treats are not off the list - they are very much still there just that they are controlled and for special celebratory occasions and part of the "burn, baby, burn carbs plan". And being a rare treat they are so much more enjoyable!
