I heard somewhere that if your body does go into 'starvation' mode, you can end up burning muscle (protein) when you exercise - do you have any thoughts/experience of that?

Ketosis is protein sparing, it's a starvation protection mechanism. What ultimately kills you in starvation is muscle wastage (of your heart) and not hypoglycemia, ketosis is a defense mechanism against both.
For aerobic exercise your muscles preferentially metabolize fat anyway, it's difficult to understand why they would break down protein for fuel.
Judging by my unfeasibly large calf muscles and my big pounding heart, I can't see any evidence of that in my own running.
