Potato skins

Hi, this has probably been asked before but are potato skins ok to eat? I've had them in the past in restaurants - just the peel baked in the oven with spices, herbs etc - and wondered if they would be ok as the occasional snack.

I sometimes have the skin when wife or daughter has a jacket potato. I have only eaten them with a meal so not sure of the effect on BG on their own. Without any actual potato they are very light so unlikely to have many carbs. Restaurant ones have various fillings so who knows the carb content.

I'm just looking to have them as potato peels without any fillings.

Restaurant ones intend to leave quite a bit of potato behind, but if you scrape the potato down to the skin, maybe they won't be to high in carbs
 
Try stuffed with cheese with either or any combination of - onions, lardons, mushrooms, peppers, tomatoes or tuna. Flavour with whatever herbs or spices you fancy. Just don't use too much tattie in the filling!

I've just given myself an idea for lunch tomorrow!!:D

Just with a bit of oil drizzled over them and baked in oven.

I could well be very wrong, but they might just dehydrate. The answer is likely to try some and test your bloods before and 2 hours afterwardse
 
FYI The skin from one whole baked potato has 115 calories and 27 grams of total carbohydrates, while the flesh delivers 145 calories and 34 grams of carbs. Both the skin and the flesh have about 3 grams of protein each, which is 5 percent of the recommended daily intake for men and 6 percent for women.

Thanks for investigating but I don't think that information is very useful. Baked potatoes vary in size from pathetic to OMG! so what size are they referring to? The skin is very light compared with the contents so it seems unlikely they would have similar carbs and calories. The figures are for total carbs and the skin in particular seems very fibrous.
 
Skin is the best part of a jacket potato so if someone in my house was having one I would beg the skin from it but as there is only the two of us and both have T2 that's not likely

I think maybe one not too big to get in the oven and one not too small to see without the need for a microscope about the same size as that piece of string everyone is talking about.:)
