One of the easiest soup recipes
300g Squash & 300g Sweet potato + generous amount of chilli (depending on how hot you like it) cooked in 700g veg stock (I do this in a slow cooker for a few hours but 30 min on the hob should do it, until soft).
Add about 100ml coconut milk, blitz in a blender, add salt to taste.
Enjoy.
This makes 5 or 6 portions, so will last a few days.

Soup was so good and didn’t raise my blood sugar(had a handful of walnuts & cheese with it)

I made a variation this week which used pumpkin instead of squash, sour cream instead of coconut and sage instead of chilli.
I picked a pumpkin last week which had 9lb of flesh, so have eaten a lot of pumpkin in the last 7 days.
