I had mine last night......

wife is working tomorrow night so we got the kids involved and stuffed our faces....

peanut butter and chocolate sauce....;)

surprisingly the BG and dosing was all successful.....I put it down to my lack of carbs for breakfast, lunch and dinner that day...

Not unless I can work out how to make them out of cauliflower.
Oh - there's a thought.
I could try using the Bamix grinder to convert desiccated coconut into a flour - three eggs, to hold the air -
I'm sure there has to be some way to make something with at least a passing resemblance to a pancake.

If I had done a bit more planning, and got myself organised, we would be having low carb pancakes, since they are The Best Thing Ever according to Mr B.

He loves the thick American ones, whereas I like the thin crepe ones.

Probably not, as I might not have time, going out later, so I think I will make a sugar free jelly tonight ( I did like pancakes, very yummy) thinking about pancakes now :hungry:

Sadly I can't eat anything that tastes vaguely nutty, so coconut flour is out for me. I'm not allergic, it just makes me gag. I've been the same since I was a child so can't see it changing any time soon.

so it's the cauliflower version then - or maybe pumpkin - if you have pumpkin - maybe a squash - I've seen those in the shops recently.

No need to miss out entirely, what about substituting part of the flour content with whey protein powder? The word on the street is that 1/3 of the total flour content can be replaced with protein powder - I suppose the remaining 2/3rds could be almond flour for those who are wanting to really keep things LC?

You might want to throw in a bit of baking powder to make up for the lack of gluten in the protein powder.

Never made them, but I'm sure they'd be alright.

I'm having pancakes :) I make them myself (to a normal recipe) and have them thin so I can have two. As I'm on insulin, I find having them after a meal works fine. I have lemon juice and sugar (small amount) and/or golden syrup or Nutella and watch the portion.

In the old days before Type 2 I used to have thin crispy ones, spread with butter and sugar sprinkled on. Delicious.
