Today will be homemade slow cooker meatballs. Containing ground Italian sausage I rolled into a meatball shape then put a can of pasta sauce in after I dumped the grease a few times.
Sounds tasty @cdpm. Fingers crossed it settles.

Evening all

Yesterday:

B: Two poached eggs topped with a knob of butter, avocado and four tiger prawns with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Mushroom and spinach frittata made with eggs, grated Cheddar cheese, onion, cream and thyme.
Salad using chicory, sweet cicely, celery, mint, Kalamata olives and salad onions, dressed with an olive oil, garlic and balsamic vinaigrette, topped with roasted cashews.
Skipped pud.
Water to drink.

D: Seafood salad made with brown shrimps, king prawns, lettuce, garden tomatoes, celery, Halkidiki olives and Welsh onions dressed with home-made mayonnaise, topped with toasted sunflower hearts and pumpkin seeds.
Water to wash down tablets.

I'm generally trying to broaden my meat-cooking and eating horizons; did my first brisket and pulled pork recently, so Jerky is next..
I tend to rotate the same tried and tested, diabetic-friendly meals quite a bit @Chris24Main.

Although my pool of recipes changes through the year as and when new ingredients come into season, there is quite a lot of repetition with just the occasional experiment every now and then.

Keeping our blood glucose levels in check is a daily challenge @Chris24Main.

I'm always on the lookout for new, mouthwatering recipes and this forum provides lots of inspiration. It's important to enjoy our low-carb lifestyle, otherwise we'd never stick to it, would we?

Yesterday:

A wedge of Gorwydd Caerphilly.
Water to swallow tablet.
Double espresso.

L: Packed lunch made with leftover mushroom and spinach frittata.
Lettuce cups, Romano peppers, celery sticks and garden tomatoes with a dollop of home-made mayonnaise for dipping.
Almonds and hazelnuts.
Water to drink.
Wild blackberries picked on the hoof to round off lunch.

Mid-afternoon: black filter coffee

D: Smoked salmon and cream cheese salad made with sweet cicely, vine tomatoes, lemon verbena, Kalamata olives and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pistachios.
Water to wash down tablets.

of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry red wine.
Tuna steaks rolled in finely chopped celery and sage, baked with aubergines and red bell peppers, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed runner beans with a knob of butter.
Water to drink.
Skipped pud.
Two squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, vine tomatoes, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to wash down tablets.

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and a vine tomato, sprinkled with flat-leaf parsley and seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Whole sea bass baked en papillote, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears smothered with butter.
A medley of baked calabrese, onions, red and yellow sweet peppers with garlic chestnut mushrooms.
Raspberries and Greek full-fat yoghurt.
Water to drink.

S: Tea with a dash of milk (gave me something to do with my hands while OH tucked into refreshments, none of which were diabetic-friendly).

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnut halves.

Breakfast 1 slice of wholemeal toast with butter and coffee (the one thing I can't give up yet) 10.1 after 1 hr - 7.1 after 2 hrs -5.6 after 3 hrs
Mid afternoon 3 egg cheese omelette cooked in butter 5.7 @ 1 hr - 5.5 @ 2hrs Yippeeeeee :D :D :D
Snacks will be a pork scratching or 2 or a few cashew nuts

I'm sorry @cdpm. Might be an idea to play safe and keep to cottage cheese, if available, until your gums heal.
It's diabetic-friendly, very nutritious and doesn't cause you gastric distress.

L: Courgetti alla puttanesca made with anchovies, Kalamata olives, capers, garden tomatoes, garlic, olive oil, butter, rosemary and spiralised courgettes.
Steamed runner beans smothered with butter.
Raspberries and Greek full fat yoghurt.
Water to drink.

D: Seafood salad made with brown shrimps and mussels, sweet cicely, Romano peppers, celery, vine tomatoes, mung bean sprouts, flat leaf parsley and salad onions, with a dollop aioli for dipping, topped with pecan halves.
Water to wash down tablets.
