Type 2s: What have you eaten today?

I found an old recipe, and I tried it today:
2 eggs
2 oz. cream cheese
1/2 tsp. cinnamon
1/2 tsp. b.powder
your choice of sweetener
Mix all together, let sit 5 min., then you can either make 3 or 4 pancakes or 1 large omelet like pancake, which is what I did, then add a little butter and fav. syrup.
it was very satisfying as I love pancakes in the morning :)
2.5 net carbs, 17 protein

Fried Breakfast
Salmon and cream cheese on Oatcakes
Casserole beef, cauli Mash, sprouts, followed by hot Stracciocella cake with cream!
 
I'm so pleased with myself - I've had my lowest reading so far of 6.3 this evening and previously my lowest reading have been 6.8 and 6.9 which were my first tests of the day (first thing in the morning before eating anything). My 6.3 was after a day of eating :-) I feel like things are starting to work!!

Today I have eaten:

BREAKFAST: 1 slice bacon, 1 egg, small amount of spring onion, 1 inch cube of cheese, 1 medium mushroom, 1 cherry tomato and a cup of tea

LUNCH: 2 x 1" cubes of cheese, 1 med apple, 10 almonds, handful of raw spinach
(note to self: this took blood to 7.7 so avoid eating too many apples which are high in carbs)

TEA: 1 x ready made slimfast drink/food replacement of 200 cals
 
A mug of organic cocoa unsweetened and made with organic milk for breakfast. Pst breakfast reading 7.7! After the reading, two organic oatcakes with seeds plus a teaspoonful of peanut butter. Lunch is a bit late but probably a scrambled egg made with olive oil and no added salt!
 
16:8 I/F today, so Liver and Bacon for brunch, snacked on Biltong this afternoon, then made a Pork and Apple casserole for dinner, with so-so Almond flour cheesy polenta, (OK- just not really polenta!)
 
1oz cheese at 08.52.
1oz cheese at 14.15 ish
1 Lidl roll with butter
1 coffee with cream

Vegetables? You are not eating or widely enough. I know you are having horrible readings.. Please see your GP, specialist or nurse as soon as possible
 
Breakfast: two hard-boiled eggs, smoked salmon, half an avocado, spinach with a squeeze of lemon juice.

Lunch: green salad topped with small servings of goat's cheese, curried lentils, chicken Caesar and pickled red cabbage.

Snack: three Brazil nuts and six walnut halves.

Dinner: two small lamb chops with cabbage; three strawberries with 1 tbsp of clotted cream.
 
Last night's tea was pan fried chicken breast with celeriac chips, asparagus and mushrooms. Yum!

I had scrambled egg and 2 small sausages for breakfast, lunch is canned Pilchards, cheddar cheese and 1 stick of celery.
Working in garden felt as though I was in small hypo. Immediately took BG which was 6.9. Does anyone know why dizzy and low energy happens??
