Type 2s: What have you eaten today?

Share what you've eaten today with the rest of the DCUK community and maybe steal a few ideas for yourself!

Low carb contributions are of course welcomed, but please keep in mind that this is not the low carb diet section, and debates about diet should be kept out of this thread. Happy posting! ;)
My fasting blood sugar was 6.7 this morning. I fast till lunch time. My lunch will be two tablespoons of brown rice with meat curry and two different vegetable curries. Afternoon I will have half an apple and dinner will be carrot and lentil soup .
 
First this morning (7.00) was ....... 7.3
pre breakfast (10.45) ......6.2 - then 2x grilled bacon 2x poached eggs 2 x toast with butter
2 hours ....... 7.9

This is the first time for a preprandial then 2hr later test, and therefore I have no idea what it actually means.
I shall continue on this quest to understand what on earth I am doing.
 
B: Two poached eggs, scallops and asparagus spears garnished with a generous knob of butter and some chopped flat-leaved parsley, all seasoned with one or two grindings of black pepper. Water to swallow tablets followed by an espresso plus cream.

L: Tuna steaks rolled in finely chopped celery and oregano, baked with sweet peppers, chestnut mushrooms and aubergines, covered in cream and topped with grated cheddar cheese.
Mixed salad made with watercress, tomatoes, radishes, salad onions, black olives, scattered with toasted pumpkin seeds and dressed with an olive oil and cider vinegar vinaigrette.
Raspberries and Greek-style full fat yoghurt.

D: Planning to have seafood salad made with tiger prawns and mussels, lettuce, fennel, Romano peppers, avocado, celery, cherry tomatoes, salad onions, dressed with an olive oil and balsamic vinaigrette with garlic and mint and scattered with macadamia nuts roasted in butter. Water to swallow tablets.
 
More often than not, lunch is our main meal of the day. We find we sleep better at night following a light evening supper.

Today's menu included our favourite Sunday lunch-for-two whenever there is only my husband and myself to consider; baked whole sea bass stuffed with garden herbs, garlic and lemon zest, accompanied by vegetables in season.

B: two eggs scrambled in butter with a generous dollop of double cream, sauteed chestnut mushrooms and a tomato, garnished with chopped flat-leaf parsley and seasoned with one or two grindings of black pepper. Water to swallow tablets, followed by an espresso.

L: Baked whole sea bass, belly stuffed with fennel fronds, lemon slices and garlic, drizzled with olive oil and accompanied by asparagus spears, broccoli and leeks.
Low carb pudding made with milled flax seeds, homemade granola, unsweetened almond milk and cream.

D: Cheese salad made with lettuce, Romano peppers, celery, salad onions, cherry tomatoes, black olives, dressed with an olive oil and balsamic vinaigrette with garlic and mint, scattered with pecan halves and macadamia nuts roasted in butter Water to swallow tablets.
 
Yesterday:

B: two poached eggs, slices of avocado and tiger prawns garnished with a knob of butter and seasoned with one or two grindings of black pepper. Water to swallow tablets followed by an espresso plus cream.

L: Baked halloumi and sweet peppers. Mixed salad made with watercress, radishes, salad onions, black olives dressed with an olive oil and balsamic vinaigrette. garlic and mint, topped with toasted pistachios.
Raspberries and Greek-style full fat yoghurt.

D Seafood salad made with crevettes and kalamari, lettuce, fennel fronds, tomatoes, celery, salad onions dressed with olive oil, lemon juice, parsley and garlic, scattered with toasted sunflower and pumpkin seeds. Water to swallow tablets.

L: Salmon fillets baked with broccoli, mushrooms and cream. Steamed asparagus spears garnished with butter. Mixed green salad dressed with an olive oil and balsamic vinaigrette, parsley and garlic, scattered with macadamia nuts roasted in butter.
Skipped pudding. Water to drink.

D; Caerphilly with lettuce, tomatoes, celery, salad onions dressed with an olive oil and balsamic vinaigrette scattered with toasted sunflower and pumpkin seeds. Water to swallow tablets.

0930 pre breakfast check =7.1 then 3 crumpets with butter, black coffee - check after 2 hrs = 9.5 .... yes, I know
1330 small bowl moussaka -
this evening planning chicken ceasar salad
My diet plan is no more than 100g carbs per day - should squeeze through on that

I’m hooked on chicken Caesar salad at the moment! I made the croutons with a slice of low carb bread fried in butter and homemade mayonnaise. Yummy :happy:

D: Crab salad made with lettuce, fennel fronds, tomatoes, salad onions dressed with olive oil and a touch of lemon juice, parsley and garlic, scattered with toasted sunflower and pumpkin seeds. Water to swallow tablets

L: Walnut and mushroom nut roast made with leeks, eggs and flax egg, garlic and rosemary (ie. no breadcrumbs or flour) Vegetable traybake with broccoli, cauliflower, sweet peppers and leeks. Mixed green salad dressed with an olive oil and balsamic vinaigrette and scattered with macadamia nuts roasted in butter. Water to drink.
Skipped pudding.

D: Seafood salad made with king prawns and mussels, lettuce, fennel, Romano peppers, celery, cherry tomatoes, salad onions, dressed with olive oil, parsley, garlic and a squeeze of lemon juice plus toasted sunflower and pumpkin seeds.
Water to swallow tablets.
 
Well done, Miss Muffett. Clearly, you've got the hang of this low carb malarkey.
I did keto 3 years ago and lost 2st in 3 months for my sons wedding and wasn’t on any medication but fell off the wagon because I didn’t have any incentive and my husband became very ill. Here again now and determined to get into remission with lots of support from this forum ;)
