B - 10.30am - 2 slices grilled bacon, scrambled eggs on slice of toasted sourdough

D - 5.30pm - sliced sirloin beef marinated in mustard, black pepper + sliced gherkin + mayo in sourdough sandwich (sliced a lot thinner than would have the case this time last year!) with a few oven chips ....... large espresso after

Looks a bit carb heavy, but I am not trying to be zero carb, trying to maintain about the 50 - 60g carb level. It may be that after next bloods a review of that position will be necessary.
Morning @bitofagit. Reducing your bread intake at breakfast to 1 slice makes sense.

I can only speak from my own experience, but I'm at my most insulin resistant first thing in the morning. Things improve from mid-morning onwards. That's not uncommon with type 2 diabetes.

Evening all

Yesterday:

B: Two poached eggs with a knob of butter and avocado, seasoned with black pepper plus a wedge of Gorwydd Caerphilly.
Water to swallow tablet.
Espresso.

L: Salmon fillets baked with broccoli, cauliflower, chestnut mushrooms, double cream and lemon verbena.
Steamed carrot batons and French beans smothered with butter.
Water to drink.
Skipped pud.

D: Seafood salad using tiger prawns, brown shrimps, lettuce, baby plum tomatoes, celery, Romano peppers, Kalamata olives, mint and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with roasted macadamia nuts.
Water to swallow tablets.

B - 10.15am - 2 slices vortigen toasted + butter, half cup greekyoghurt, large black filter coffee

D - 5.30pm - cottage pie large espresso after

still appear to be losing weight, although has slowed a bit

A home made chicken curry with cauliflower and broccoli (in the absence of cauliflower rice, I resisted the urge to have normal rice).

The day after making it is always better.

Evening @IanBish. Agreed. Curries taste even better the day after they're made, when the meat and vegetables have absorbed some of the spices and all the flavours have mingled.

That looks like a hearty meal; just the thing on a cold Winter's day.

Yesterday:

B: Two poached eggs topped with a knob of butter, avocado and 4 tiger prawns seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Mushroom stroganoff made with chestnut mushrooms, dried porcini mushrooms, onions, vegetable stock, white miso paste, tomato purée, paprika, garlic, olive oil, butter, parsley and soured cream.
Cauliflower rice with toasted cashews and peas.
Braised cavolo nero with garlic and toasted almonds.
Skipped pud.
Water to drink.

D: Seafood salad made with brown shrimps and mussels, lettuce, Romano peppers, celery, baby plum tomatoes, Halkidiki olives and salad onions, with a dollop of home-made aioli for dipping, topped with pecan halves.
Water to swallow tablets.

B - 11.00am - kippers with slice of low G.I. whole grain, filter coffee

D - 5.30pm - chilli lemon crab with shrimp on spagetti, prepped the resistant starch way, 3 glasses w.wine, with home made mince pie and cream after, followed with large espresso

I had intended to test before and after dinner to get the numbers for 'resistant starch' method, but forgot.
The mincemeat pie had been cooked, frozen then reheated, therefore would come within the 'resistant starch' envelope ...... yes/no?
Anyway, enjoyed it.

Yesterday:

Friend's funeral; the wake was held at lunchtime in a local pub and I was anticipating the usual sandwiches, sausage rolls, quiches, etc, and was hoping there might at least be some sausages on sticks, but in fact the buffet was very diabetic-friendly. I had a slice of rare roast beef, a slice of "proper" ham, tomatoes (I can't stomach lettuce, etc), coleslaw and a tiny slice of what I initially thought was quiche, but turned out to be a savoury cheesecake - dense smooth cheese in a very fine pastry case - it was delicious! I was driving so only had coffee to drink. (I also had about six crispy, fluffy-on-the-inside chips...ahem.)

Dinner was a small portion of bolognese with 40g (uncooked weight) wholewheat spaghetti and a glass of red wine.

At the risk of repeating myself, I bought a load of sirloin steaks, but they weren't great as steaks, so I made a steak and mushroom jalfrezi out of the last two. With cauliflower rice. And it was lovely.

I've only encountered savoury cheesecake on the one occasion, but it certainly made an impression.

L: Walnut and mushroom nut roast made with onions, eggs and flax 'egg', garlic, stock and rosemary.
Brussels sprouts tray bake with pistachios, last of the home grown French tarragon, orange zest and garlic butter.
Carrots, onions and apple peel sautéed in butter.
Water to drink.
Skipped pud.

D: Seafood salad with king prawns and brown shrimps, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives and lemon verbena, plus a dollop of home-made aioli for dipping, topped with roasted macadamia nuts.
Water to swallow tablet.

L: Packed lunch made with leftover walnut and mushroom nut roast.
Chicory, Romano peppers, celery sticks and baby plum tomatoes with a dollop of home-made mayonnaise for dipping.
Prawns and brown shrimps
Almonds, hazelnuts and brazils.
Strawberries to round off lunch.
Water to drink.

D: Smoked salmon and cream cheese salad using lettuce, celery, baby plum tomatoes, Halkidiki olives, salad onions and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted sunflower seeds.
Water to swallow tablets.

B - 11.15am - 2 slices vortigen toasted with butter, hlf cup greek yoghurt with sprinkle of museli

D - 5.45pm - home made chicken liver pate with fruit compote and slice toast,followed by venison with mushrooms and chestnuts in madeira with colcanon, 3 glasses r. wine ......... then chocolate and chestnut puree roulad (have another 2 lots left, thought about bin but that is prob never going to happen!)

Tuna steaks rolled in finely chopped celery and thyme, baked with red peppers and mushrooms, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed French beans with a knob of butter.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, baby plum tomatoes, mint, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.

Baked whole sea bass, belly stuffed with sprigs of thyme and garlic, drizzled with olive oil.
Steamed asparagus spears smothered with butter.
A medley of baked broccoli, onions, and sweet red peppers.
Water to drink.
