Vegetarians: What have you eaten today?

@donnellysdogs Fingers crossed that the new drug works for you.

How are you with nut butters? They are a good way to add calories to your meals (including smoothies) and are pre-mushed so might be easier to digest. We buy a variety of nut butters by a company called Meridian.


Yep I have a huge tub of Meridian smooth peanut butter in fridge that I tend to dip my fingers in yo to be honest everytime I go in the fridge!
Also buy the smaller jar of smooth almond butter to use as well.
I do add into smoothies.

I do have to watch I don't have too much fat. That slows my innards down too.
Tried vege lasagna and white choc cheesecake last weekend and it is still in my body.... So going to try salmon, cottage cheese n egg n spinach mix tomorrow with veg after having 4 days of smoothies n soups. Then wait and see how that progresses..

I do love nut butters..

Did buy some gluten free savoury crackers this week to try at some point with nut butter but daren't try whilst still trying to see if stomach can process "necessary nourishment".

Last day of Amitiza tablets Thurs this week so stomach will have to work by itself then.... Its struggling now so just keeping fingers crossed. Hate effects
of picolax on my body...

Got told to have icecream and alchohol this week so not all bad-lol! Had a scoop of icecream tonight:):).
 
Brunch: Burgen toast, scrambled tofu, fried mushrooms, a tomato
Dinner: cold roast veg and salad, Linda Mac quarter pounder
Pudding: two big strawberries with a little Swedish Glace ice cream (DD put the idea into my head in her post above, led me astray she did :angelic:)
 
Had a beautiful spinach n icecream smoothie today.. With orange and banana and kiwi and melon. 2 scoops icream, icecubes and made 6 200 ml glasses....
Oh with protein powder too.. Avocado made me do it honest!!

Melon and yogurt. Apart from 2 smoothies.. Rather boring...(but tasty!!).

Made hubby spinach frittata.. Couldn't face it..

Go to Asian supermarkets and get a pkt of Lapsi and make a porridge out of it. Fantastic for gentle bowel movement and much nicer than fyboge
 
Don't have fybogel or laxido etc. Am on Amitiza for 4 more days and picolax when needed. Cannot have anything that increases fibre.

T: Bean "meat"-loaf and Israeli salad with natural yogurt and fruit for a small dessert.

Early days for me acclimatising to a healthy diet that will help me deal with my newly diagnosed Type 2 diabetes, but I am really enjoying all the new flavours ☺

Trying hard to stay away from bread and so far pretty successful. Only 2 slices in the last week. Naughty, I know but it much better than before my diagnosis last week. Onward and upward . ☺☺☺

I have been converted to blueberries! Which is adding some variety to the breakfast berries with double cream or greek yogurt,

Various recent house guests have relieved me of my about to go out of date supplies of pasta/cous cous/rice. This is now an almost carb free household! (Some Burgen toast, various crackers and occasional packets of crisps seem to be OK.)

D: mushroom-stuffed peppers. Got some 85% choc and strawberries for later

Stuffed pepper recipe from Deliciously Ella book. Stuffed with mushrooms, pine nuts, garlic, tahini and lime juice. So tasty!

Hi all :)

So this is diagnosis day for me. Feeling a bit overwhelmed and wary of food in general, but I'm sure my appetite will be back with a vengeance soon enough!
B: Nothing - wasn't sure if I was supposed to be fasting before my appointment and bloods!
L: Organic oatcakes with Granovita spicy tofu pate (I LOVE this pate!) and an apple
D : Green thai curry with tofu, tenderstem, courgettes and a teensy portion of buckwheat and sweet potato noodles

Oh, and a pre-dinner snack of a couple of rice and sesame cakes with mushroom pate.

Pretty pleased with that tbh. My dinners are usually pretty healthy anyway, but I've been rubbish at snacking on junk at all hours. Time for a BIG change!
 
I am just lurking at the moment. I have stitches in my gums so not able to eat normally. I have found that mixing almond butter into soya yogurt is a tasty breakfast and the addition of the nut butter means I am not hungry before lunchtime. But I have also been abusing pom bears this week to cheer myself up :bag:
 
Hello @PurpleArmadillo and welcome. I got lots of extra ideas here for good veggie things to add to my diet.

Much sympathies on the gum situation, @Avocado Sevenfold . hope it heals soon.

I seem to be on berries and double cream breakfast, cheese and salad lunch, and steamed veggies with some protein dinners at the moment in the week. Must try and get a bit more experimental at the weekend as I have some tofu to use and a bit of a craving for some pulses.

One of my favourite buffet snacks is caprese bites. Cut a cherry tomato in half, stuff * and sandwich with the other half of the tomato. Secure with a cocktail stick. Very retro.

*They can be stuffed with a blob of mozzarella and basil for veggie ones. For vegan ones stuff with either a little cube of avocado and basil or with a cube of Taifun basil flavoured tofu (from Waitrose). Very easy to make and no cutlery required for eating.

L: 3 caprese bites (basil tofu ones), a whole pot of tea
D: artichoke and edamame bean salad with minty yogurt, a pint of lemonade (lemon juice, fake sugar and fizzy water)
