What do you have for dinner?

I am curious what kind of food other diabetics have for dinner.
When I first went to see a dietitian she asked about the kind of food I eat, one of the things I mentioned was the dreaded P-word (potatoes) and she looked at me like I'd said I stamp on puppies for fun!
Ever since then I have really struggled to come up with ideas for meals that aren't too horrifically high in carbs and have ended up having the same few repetitive options all the time. I don't want to go too low carb because it's taken me a year to regain all the weight I lost and get back to a healthy size but equally I just feel guilty all the time now (and constantly hungry).
The advice from the dietitian was hugely unhelpful and contradictory so I'd love to hear how other people approach the issue.

Tonight I had potatoes with vegetables and roast parsnips....a veggie roast...lovely with sprouts....

I love my main meals....rice and chilli
Cottage pies with quorn mnce

Curry and rice....all just smaller portions for me.....
 
All of these things effect people in different ways. So for example rice may be fine for me, but could make your blood sugars rise too much. The only way is to test and see the results.

I used to really love spag bol, so decided to try it again, but measured the pasta portion of it. The effect wasn't too bad and I discovered that I used to eat 2-3 times the normal amount of pasta.

I tend to eat lots of meat (mainly chicken) and veg and salads. Things like colliflower , sprouts etc.

I avoided all potatoes to begin with but discovered that a few new potatoes, boiled, were OK. Brown rice was OK from the start and I use things like pearl barley in soups and stews. Wholewheat pasta works for me, the buitoni brand is good. But test, it may not be right for you.

Lots of stews with pulses are good and I am particularly fond of indian vegetarian curries, using chick peas and various lentils. In fact, most of these otherwise boring foods can be brought to life with spices.

It's filling and nutritious and, if you like these things, get hold of a book about slow cooking. Most recipes are good or easily adapted for diabetics.
 
I can't eat pasta, potato, pulses etc. So my dinner is meat usually chicken served with an onion and mushroom cream sauce, with green veg. I've tested after meals and find I can't tolerate the white stuff at all.
My control is pretty **** despite the good food and exercise.
 
I replaced potatoes with celeriac, and occasionally butternut squash. I don't eat pasta, rice, or anything made from wheat flour as it spikes me.
Last night I had rainbow trout with chopped vegetables cooked in the wok (courgette, tomato, red pepper). That's a typical meal for me.
 
cottage pie with carrot swede and potato mash on top, plus extra veg inside.
 
I have potatoes most evenings as I love them, Sunday had them roasted with a roast pork dinner, had a baked sweet potato with a chicken breast and vegetables last night and will be having boiled potatoes tonight with mince and veg, I'm type 1 so dose adjust.
 
Last night I ate chilli con carne with some basmati rice and a small pitta bread, I only ate about half the bread as I took too much chilli :lol:

Tonight is pork loin cooked in a mustard and cider sauce with sauteed potato and veg of some kind, probably peas :thumbup:

just had a lovely fillet steak with green French beans sautéed in a little olive oil and garlic ( saw Jamie Oliver cook them like this the other night on TV )plus some cauliflower and carrots delicious !!!!

im not sure what i had tonight, the wife was cooking spaghetti bolognaise for the kids and herself so i has a little cooked mince in a saucepan to make a meal from lol i ended up sauteing some onion and mushrooms then found some green pepper and some tinned tomatos topped off with alot of grated cheese, it was okish, not as good as the jellies and cream afterwards tho :)
 
Mmmmmmmm, I banged in a pot, some small lamb ribs, hand full of cabbage, cauliflower, an onion, 1 rich beef stock pot, pint of water, simmer 1.5hrs, add herbs, garlic. The kids come home complain about the smell, wife come home, looks at it and they all pile to the chippy next door!!! They not happy about my new health low carb food. Anyway just enjoying my sugar free jelly and complaining about the smell of chips.

I have had chilli and basmati rice lovely
 
Fried some finely chopped green chillies, 1/2 a small onion, garlic and ginger - mixed with 450g of Aberdeen Angus mince - squashed the mixture into an oven pan and baked it in the oven for 30 minutes. Chopped up a beef tomato and drizzled over a little soy sauce, olive oil and balsamic vinegar. Salt and pepper to taste.
Result - one huge spicy beef patty with a lovely tomato side - less than 15g carbs in total.
I didn't take any insulin before the meal as I was a bit low [3.8] - 2 hours after the meal my BG was still 3.8 so had to have a biscuit to bring them up a bit before bed.
