What have you eaten today? (Low carb forum)

Another freshly baked "No Carb" (so called) loaf out of the oven. This is the third or fourth I've made. Previously I made my own adaptation of something called "Soul Bread", with whey protein, eggs and Philadelphia as the main ingredients. This though is definitely more bread-like and quicker to make.

Hi @SaladDaze ! That looks VERY good. Did you start with the mix pictured, or base yours on the mix ingredients?

Had nothing since 3pm yesterday. Feeling really hungry as I had a tough gym session last night.

But had a handful of nuts to kill the craving last night

So far I'm just using the packets. Mix 250g of quark or similar, 150g water and and 50ml oil (I use olive oil). Sprinkle in the contents of the packet (to which I have added an extra 6ml of baking powder for luck) and mix in. With wet hands I then shape it roughly into a brick then place in the baking tin lined with greaseproof paper. I then press it down to spread it evenly in the tin and get it into the corners and finally sprinkle some mixed seed on top. It's a bit reminiscent of Lidl rolls, maybe a bit less chewy.

The brand is 'Nutringo' and I order 3 packets for €14.99 from amazon.es.

I will however be on the lookout for DIY recipes that give a similar result.

Good morning everyone - not so sunny this morning.

Breakfast: Two boiled eggs and crackerbreads
Lunch: small chunk of white Stilton with ginger and mango (not so keen on this cheese but it was an Easter pressie)
Dinner: Ham, cheese and egg mayo salad with romaine, Three cherry tomatoes, spring onions, cucumber and celery. Possibly some fresh beetroot if my BGs are okay at the time
Drinks: black decaff coffee and still spring water

Easter Monday food:
Breakfast: 1 slice HiLo toast thick butter, tea.
Lunch: mixed salad no protein, mayo.
Supper: Indian t/a I just had cauliflower bhajee and 2 popadoms.
I felt I ate too much meat on Easter Sunday so dialed it back a bit. I like meat but when bbq I feel I eat more than I enjoy. Could never be a full on carnivore.
Did quite a lot of pottering in the garden.
Better FBG this morning.
Breakfast: 1 slice HiLo toast, thick butter, tea.
Lunch: mixed salad with mixed cheese leftovers.
Supper: Spinach omlette followed by maybe LoCal jelly pot.
OH will finish the bbq meat with chips followed by his latest fave a Flake cone.
Must admit that does make me a teeny bit envious.

That said, Lidl are absolutely fabulous for returns should there not be an open box in the store.

Mine is a bit different, with no drawer, so I can't really comment too much more on the volume issue. It's a great price.

Having a frustrating day. Half an hour before 2 hr PP breakfast, I got a stressful phone call from primary care, saying go see a kidney specialist. Adrenaline rush ensued. Not to mention the toilet stopped up immediately after that, and three things were ready in the kitchen within 90 seconds. Do we think that perfect storm would cause the two hour reading I just took to be about 1mmol/l higher than I'd expected until that phone call?

With me, that perfect storm would have raised my bg by about 5mmol/l
No exaggeration.
My stress hormones do v silly things to my levels.

@Brunneria thank you for the reassurance. I keep trying to do more "me" things to reduce stress, and it gets like playing whack-a-mole! Had to cancel tonight's Barre class due to all these shenanigans arrgh. Plus side, I used up ALL the cream making cheese quiche, so won't come home next week to a quart of soured pricey cream!
And @DCUKMod thank you for your encouragement also! Telling me not to worry is kinda like telling Niagara Falls to run backwards, but I'm going for a little walk soon. And great explanation from Nigella, thanks!

@DCUKMod I got to Lidl and realised I should have checked the date for the deal first! Nevermind I was heading for the nearby fire shop anyway ( need to replace our wood burner)
@zauberflote my sympathies for your perfect storm. I think you did very well with just a 1mmol increase in expected values. I think anyone would have experienced a blip after that lot. Hope the kidney problem is something that can be resolved easily. Do you have ongoing kidney problems?

Oh my!
We nipped out to local covered market today. Dog friendly. They thought they were in Sniff Heaven.
Don’t go there often, because packs of out of date biccies and chocolate mis-shapes aren’t really my thing.

However, there is a v good butcher there, and I came home with some hugely thick cut, beautifully fat-slabbed lamb chops.
Delicious!
Possibly the best lamb chops I have ever eaten.
Will have the rest tomorrow.
I cooked them vertical, fat side up, in the halogen oven. Well salted. Mmmmmmmmmm!!!

Breakfast (at 1pm) was a LC profiterole.
We have now eaten all of the first batch. Making the other half of the packet tomorrow. I am considering them more fat bombs than pastries. Carbs are exquisitely low, bg is almost flatlining (thanks Libre). May have to reclassify my Way Of Eating as ‘carnivore + profiteroles’ hahaha!

Met a lady in a wheelchair and her friends at the market. She was nearly in tears at how gorgeous the dogs were, but couldn’t reach down to stoke them - to her distress. Fortunately, small dogs are easy to lift. They ain’t called lapdogs for nothing. Very hard to take him back after. Seemed to make her day. He was slightly less keen on being dumped on a stranger’s lap, but was v patient during the photoshoot (!) and accepted the subsequent treat like a gentleman.

Thank you @Chook! @DJC3 Thank you! I have no idea about my kidneys. Nobody has said a thing in 67 years! What PCP wanted was for my sodium to rise into normal, and it rose but not enough. So he passes the buck.

@zauberflote hope you get some answers soon re your kidney health - stress and higher bgs go together for me too. Remember to take that time out for you. Today a bit stressful- caring related - but I’m determined to keep balanced and do some mindfulness this evening as didn’t manage to make time earlier. All okay here though, not a crisis, just too much to do and not enough time to do it in! Going away next Monday to Scotland for a short break with friends and my to do list before I go isn’t reducing yet as much as I’d like. I know that I’ll sort it though.
Breakfast one slice bacon and egg
Lunch tin sardines in olive oil and a few nuts, followed by montezumas 100% choc two squares
Dinner ham and mushroom and cheese omelette with a few leaves followed by lc choc cake (thin slice) with double cream.

@zauberflote - having the 2 boys most of yesterday when Mum was off to a funeral put my BGs through the roof - 10.3!! They calmed down when I banished one to the naughty step and the other to the opposite side of a glass door (so I could still observe). After a suitable time out they agreed to behave and my BGs returned to normal.
Got a couple of days to catch up on. Weather is still glorious. (Hope it holds for your trip north @shelley262). Monday - bed a very high 8.3 FBG 7.8. Yesterday was a horrendous day as far as BGs were concerned mainly, as I said, down to the behaviour of the mini people (I daresay the impending return to school was the cause).
B. TAG with ADOC and a late breakfast before the mini kiddies appeared. 3 97% pork chipolatas, fried egg, 3 rashers crispy streaky bacon, 1 mushroom and 3 mini plum tomatoes.
D. Leftover roast lamb. Couldn't face cooking anything to go with it.
Later had a scoop of Morrisons High protein ice cream and raspberries.
To keep me sane during the day I succumbed to 4 squares of G&B mint and 25g Montezuma black forest chocolate. Not all at once but it helped my sanity!
Today - back to school and early rises. Bed 7.6 FBG 7.3 - Still a horrible surge but it returned to more normal levels with the little darlings back at school.
Was busy until 2.15pm trying to get the downstairs in reasonable condition. Forgot to put my latex gloves on and my hands are now a mess. To cap it all the washing machine guy then called off sick so now I have to wait until a week on Friday!! Amazingly my BGs didnt go through the roof again.

L. Nothing
D. Cod loin in my sesame crumb mix. Veggie chips, mange tout, asparagus and DD curry tartare sauce.
Just enjoyed slowly eating a more reasonable 25g Montezuma black forest chocolate.
Ah well, through to niece's tomorrow with the washing and on the positive side , at least I have another week and a bit to restore order (wine racks are out and back off the breakfast bar to allow access to said washing machine).
