What have you eaten today? (Low carb forum)

b: two table spoons of full fat Greek yoghurt, two teaspoons each of milled flax seed and chia seeds; cup of tea with the tiniest splash of full fat milk
l: salad, cold chicken, mayo
d: I'm going to make soup with lots of left over veggies, tin of tomatoes, veg stock. Are lentils low carb? I usually add them to soups but I haven't had them since I was diagnosed. We are going to watch a bonfire so making a big pot to have on the stove when we come back. (Although I've just seen on the local website that some eejit lit the bonfire last night at 3 am and the fire brigade had to put it out so now there's a plea for more wood to be donated or there won't be any bonfire!)
 
Are lentils low carb? I usually add them to soups but I haven't had them since I was diagnosed.
Boiled lentils have 20g of carbs per 100g, but they are supposed to be ok for diabetics.
 
Day off...

Breakfast: Coffee and double cream
Lunch: Salami and cream cheese rollouts
Snack: Prosecco
Dinner: Spicy Chicken thighs and drumsticks (a sub for what I ordered), last of the home grown frilly lettuce tomatoes and sour cream, garlic and finely chopped red onion sauce.
Supper: Low carb Baked Lemon cheesecake

A few too many calories but only 24g of carbs for the day
 
Breakfast - 2 fried eggs, half a punnet of mushrooms, fried in palm oil
Snack - a Mozzarella
Lunch - Konjac fettucine, stir fried in coconut aminos garlic sauce, juice of a freshly squeezed half lemon, Worcester sauce, tamari sauce, black pepper, spring onions, chervil
Dinner - wild Alaskan salmon fillets, two gem squashes stuffed with Mozzarella and leeks also steamed green beans and after I'd eaten the filling I slathered Calon Wen butter on the rest of the squashes with black pepper mmm #organic
4 x 500ml Evian 2 x Throat Coat tea, 2 x Moroccan mint tea, 1 x Earl Grey tea
 
B - bacon & cheese
L - ham salad (provided by some workplace caterers. They asked for nutritional requirements, got told "low-carb please" and decided that a lentil & bean stew and bananas fell into this category).
D - Pizza. I scraped the toppings off. Well, until the third slice when "sod it" became my mantra.
S - pork scratchings & merlot.
 
B. 2 fried eggs, 1 medium size mushroom, 1 chipolata, 1/2 slice BURGEN with pate.

S. Cup coffee & cream

L. 3 oatcakes buttered with Brussels pate, Small measure of red wine.

S. Mid afternoon. Few walnuts

D. Aubergine lasagne, made with turkey mince. (About 6p.m.)

Later....who knows!!
 
A day if not particularly healthy eating, but low carb:

Breakfast: Coffee and double cream
2 eggs fried in olive oil and 4 grilled bacon
Lunch: Costa coffee (the enormous one) and yet more cream. I am proud to say I managed to persuade myself out of having one of their amazing looking cakes even though they were offered. On the way back I had a packet of pork scratchings.
Dinner: Large Combo kebab (chicken and lamb shish) with double salad, no pita.
Prosecco and g'n't.

Forgot - supper will be some more of yesterday's baked lemon cheesecake. Only 6g of carbs but an eye watering 399 calories per portion. I have used the Dukkan diet lemon cheesecake recipe but replaced all the low fat ingredients with full fat ones.

B: Scrambled Eggs, Bacon & Tomato with a huge mug of Tea

L: Went to Plymouth and took son out to Lunch in Bella Italia.....Lamb Shank & Green Beans after one Tempura Prawn and an Antipasti Sharing Board

D: Large Rib Eye Steak, Cauliflower Cheese, Roasted Veggies

2 pieces of M&S Swiss Dark Chocolate
 
After yesterday's excesses my bg was 5.3 at bedtime. Woke up feeling rubbish and my fbg was 8.1 Where did THAT come from??? So today I've decided to have a 21 hour mini fast. (Fasts normally work really well for me.)

Breakfast: Cup of Tetley Redbush tea with vanilla. No cals/carbs.
Snack: Iced water with thin slice of lime x 3
Lunch: Half stock cube in boiling water.
Snack - As morning snack x 3
6pm Breaking Fast Dinner: Ribeye steak with crumbled Stilton on top, wilted spinach, asparagus, roasted baby courgette and baby fennel.
More iced water with thin slice of lime. The aim is 3+ litres of water today.

Rules for the day: Lots of water, no alcohol, no food apart from what I've planned. Back to normal LCMF tomorrow.

If bg doesn't go down to better numbers I will fast again on Tuesday.
 
B - 2 boiled eggs
L- salad of Mozzarella, cherry tomato, celery, cucumber, chervil, avocado and home-made dressing of olive oil, apple cider vinegar, Engevita nutritional yeast flakes, flaxseed, pepper, tahini, peanut butter.
D - will be chicken stew using a 1 kilo organic chicken carcass from Abel & Cole 2. 25 and assorted organic veg to use up odds and ends.

L. Half Lidl roll with ham and Baby Bel. Slice of low carb cake
D. Salmon in garlic butter, mushrooms, cauliflower and spinach with grated cheese. Few blueberries and strawberries with double cream.
S, Low carb cookie.

L. 3 strips Bacon + 2 fried eggs
D. 3 slices Baked ham green beans, strawberries & dbl cream

B: raspberries, blueberries, Greek yogurt, flax seeds, chia seeds and coffee with cream
L: (out in local organic cafe) the 'high protein low carb breakfast' - bacon, poached egg, grilled mushrooms, half grilled tomato and a pot of cubed cheddar and a pot of cubed feta and a pot of peppermint tea
Snack: pack of Ombar 'mylk ' chocolate buttons (11g carbs)
D: my first slow cooker experiment! Veggie stew - carrots, celery, onion, garlic, cabbage, Brussels sprouts, veggie stock, tin of tomatoes and pack of spinach. Sugar free jelly and cream. More peppermint tea and lots of water

Well? Come on chri5 ..... What is it? Savoury, sweet, I'm very interested to know.
Hi, it`s a sauce made up of chopped onions, garlic, chilli pepper and mushrooms. Fry in olive oil, add ground cumin and paprika, 1/2 tin of chopped tomatoes, simmer until it starts to reduce then crack a couple of eggs in, cover and let the eggs poach in the sauce. I like my eggs runny but if you prefer them hard just allow them to poach for longer. You should really use chopped bell peppers as well but I didn`t have any. Easy to do , low carb and very tasty.
 

I put feta cheese in too and sometimes a chopped up red chilli. Yum.
