What have you eaten today? (Low carb forum)

Really? I know you’re tight for space too so perhaps......I wonder if it’s still available though?
There were still 2 in my local Lidl today as well as the Phillips one (which is the same price but not as versatile as the Silvercrest one). I agree with @DCUKMod it's big, but not as big as the box, and with @Goonergal - it is fabby!

Even at double the price, which I paid, it was worth the money. I'm only envious I didn't get it at £80.

I have stayed away from Graham's Goodness today having gone to bed on a 7.3 last night. FBG was more palatable at 5.3. @SlimLizzy - hugs. Do you have a set time Mr Slim will be gone for?
@Annb - difficult to believe there is no means on the Western Isles to buy fish. I thought Nicola was going on yesterday about the millions they were pumping into the fishing industry? We don't have any butchers left but I have found that really good one a few miles further along the coast. Got another delivery from them today.
Today was a day for the air fryer. Waited for the butcher to call to check if there was anything I couldn't get this week but got everything so ventured out to Lidl to stock up on veggies.
B. TAG then air fried 2 of the butcher's large GF sausages from frozen again. One for me one for Hubby. I had mine with scrambled egg (Hubby had a sausage sandwich).
L. Nothing - still on the Lidl trip and delivering fruit and veggies to son's house.
D. I latched onto Chinese cooking in the air fryer. I would have loved to have got lobster tails but none to be had so got 14 langoustine instead. Gave Hubby the job of removing the shell - I cleaned them. Marinade of a mix of Tamari soy, lemon juice, crushed chilli, parsley, little bit of Monk fruit. While they were soaking I halved a pack of cherry tomatoes, button mushrooms and broke broccoli down to small florets. Seasoned with salt, black pepper , little olive oil and dried cumin. Put on a greaseproof circle in a pyrex bowl. 190C for 10 mins. While that was in I stir fried rice for Hubby and cauli rice for me and found a dish that would fit the air fryer and hold the seafood flat with the marinade. Since the langoustine were cooked they only needed a 3 min blast at 180C.
Loved the mixed veg and the langoustine were nicely spiced.
I really want lobster or lobster tails as there are loads of recipes for them.
2 bits 95% (Hardcore @Goonergal - 4 squares??).
 
Ms V found me some raw prawns (frozen/defrosted) from Taiwan in the supermarket yesterday. Not for me - Neil thought he would like to try them to see if he can add them to his diet. He tried them last night - in a kind of restricted prawn pasta. Haven't seen him this morning, but there was no immediate ill effect last night. That's hopeful - a bit extra/alternative protein plus some omega 3 can't be bad. They would probably be good for me too, but there's no way I could put them in my mouth (too much like insects). However, I did ask if Ms V could get some mussels. She did, but I didn't expect them to be prepacked and cooked in wine. Anything cooked in any kind of alcohol, or even non-alcoholic grape juice, usually makes me quite ill. But I'll have them and see what they do.

Just about to make breakfast - remaining sausages from the pack I opened a couple of days ago with some mushrooms and perhaps some bacon and maybe some eggs. If I have a large enough breakfast, I might not need any lunch.

Dinner will be the mussels.
 

Difficult to believe that all the fish shops have gone from the Island (other than a smoke house in Stornoway, but they have no fish just now to keep them going) and even the supermarkets closed down their fresh fish and meat counters a few months ago. The only fish available are prepacked and not as fresh as we might wish, and worse, the only smoked haddock is the dyed bright yellow stuff, so no dishes with smoked haddock any more. Just have to try home smoking white fish that is somewhat less than fresh. I don't have a smoker (meant to get one a few months ago but wasn't sure I needed it - now I know I did) but I do have some old biscuit tins that I might convert.
 
This morning we have been industrious.

With my brekkers, I finished a batch of keffir, a batch of yoghurt and a batch of home grown stewed rhubarb. So, I have decanted the next batch of keffir, and started another, got yoghurt on, in the IP (I usually do it overnight, but couldn't be bothered last night) and will venture to the rhubarb patch later, if the rain eases up a bit to replenish that.

We have some belly pork brining for this http://www.foodwithmae.com/recipe-view/maes-slow-roasted-pork-lechon/ for tomorrow, and having butchered the bones out, they are in the other IP, making some stock, to reduce down, for gravy.

Actually the ribs butchered out looked great, and would have made decent ribs - BBQ or whatever, but there was no room to squeeze them in either freezer!!

I don't think we'll go hungry in this hacienda for a while at least.
 
Got notification yesterday that my potting compost delivery will be delayed until 22nd May. Gee! That'll come in useful, then.
So ordered more because my darling little baby hostas, pinks and strawberries can't wait that long.
Then had a brainwave, and did some rummaging this morning. Pleased to discover about 5 litres of last year's dried out elderly compost tucked away in the shed. Better than nothing. So all my babies are snuggled up in little 9cm posts of that now.
That will tide them over til the new order comes. Whenever it does...

Today's food will be:

B: low carb hot choc
L: chicken breasts instant potted with a bit of stock and plenty of onion and garlic, then served with a sauce. Will be doing 12 chicken breasts and 2 or 3 sauces. A chilli and lime, a tomato and herb, and a BBQ smoked. Then intend to freeze the breasts in pairs, in bags with one of the sauces to marinate as they defrost. Cunning, eh?
D: looks like more meatloaf.

Mr B was so terrified at the prospect of being in Lockdown with me, without a chocolate stash, that the dear man has been hoarding. He only mentioned it when I casually pointed out that I would get a bit low once the easter egg had gone (it has so far lasted me a week, and likely to last another, so the matter wasn't urgent! lol)
I now have the remains of my B&B 70% egg, a G&B ginger choc bar, 6 Lindt mint choc bars, and 2 tubs of Bourneville cocoa. Bless him. Can't imagine where he got the impression that such panic buying was necessary...

@Brunneria Have you got a B&M in your area? My local one is selling Jack's Magic compost for £5.99 (best ever compost).
 
I'm still V-E-R-Y slowly working my way through my freezer stash of chocolate. Probably only another twenty bars to go.... I only feel the need for a square or two maybe once a week. Mostly I just forget that it's there.

@SlimLizzy - big hug and lots of admiration for you and Mr Slimlizzy coming your way.

Breakfast: chaffle, two fried eggs, 100g baked beans
Lunch: Actimel drink - nothing solid will be needed
Dinner: Mr C is making tofu and veg burritos (should be interesting) with a salad. We normally have pre-made veggie burritos (which are lovely) but they weren't available this week so Mr C said he would have a go at making them himself. Gulp!!
Drinks: lots of black decaff coffee and water - wine will be required.

I remember way back when I first joined this thread, either you or @Chook or @Brunneria (can’t remember which) were very amused when I reported having seen Lindt 99% in Waitrose and were ‘interested’ to know what I thought of it. My response was that it was an acquired taste that I doubted I’d be acquiring. Hmmmm

Today was supposed to be a rest day but one return trip to Morrison’s (40 mins walk each way) and then a failed attempt to find an open post office (about the same distance again in various stages) later and I’ve walked almost 8 miles! Decent haul from Morrison’s though.

Dinner is in the IP (slow cook) - beef shin. Probably not enough of it to be an OMAD so contemplating what lunch might be. Bacon and eggs or lamb leg (have 2 small bits in the fridge) most likely.

 

I used to love Morrisons lamb ribs (back when I ate meat) my favourite were the minted variety - probably the only meat item I miss.
 
Talking of lamb I am looking forward to a very nice chump chop pan fried this evening with mushrooms and will try some of the purple sprouting brocolli after talking to son who recommended a two minute simmer and then added to the chop juices on the pan.
Breakfast was slice Nimble toast, butter, tea x2.
Lnch was a small bit of Brie, Cashel Blue, large tomato sliced and salted.
 

That's an impressive haul you have there. It must have been quite a weight to be carrying so far and for so long.
