What have you eaten today? (Low carb forum)

I’ve been trying to skim over these Lidl posts!!!
But yes I really do want one, I fancied a dehydrator for making dog treats too, 1/2 lb ox liver would be cheap and go a long way. Sadly no room on my kitchen work surface, what on earth possessed me to buy a house with a small kitchen?

I’ve fitted that air fryer into my tiny little kitchen. It is totally fab :D

@Goonergal I know I’ve asked you before but what was your carni stuffing recipe? I can’t find it. I know it involves sausages and blitzed pork crackling but that’s all I can remember.

Here it is. I’ve just edited my CMT entry as it was still titled sage and onion stuffing (I adapted from a carby recipe). I use Waitrose 1 Cumberland sausages.

Really? I know you’re tight for space too so perhaps......I wonder if it’s still available though?

They have lots in my store, but I'm nt sure everything is going out on time in our store at present..

You would call ahead (to prevent weeping in-store, in front of total strangers if they have none in)?
 
@DCUKMod and @Goonergal I think I might do my essentials shopping in Lidl tomorrow.
Thanks for the stuffing recipe Goonergal, it looks so simple and I know you’ve said how tasty it is. I’ll save for another time now as I got caught up with a phone call ( another lovely old self isolating gent) so quickly sliced up my sausages and sautéed with cabbage in butter. Had this with roast chicken and broccoli for dinner.
Earlier in the day inspired by @Tipetoo ‘s breakfasts a bacon and cheese omelette for lunch and just black coffee for breakfast.
Lots of fizzy soda water to drink. Must be time to add a tot of gin now I think.
 
Evening all

@DJC3 the air fryer definitely counts as essentials shopping! My weekend essentials may have to come from Morrison’s as I’m getting low on lamb ribs and theirs are bigger and cheaper than in Waitrose.

Brunch today was minced beef fried with a few onions, 2 fried eggs and some grated cheese - a nice mess with crunchy bits on the bottom. Delicious and very quick to prep while working at home.

Dinner was air fried chicken wings that had been marinated in olive oil, salt and lime juice.

In between 4 squares 95% chocolate (it’s all gone now) and a DGF double chocolate brownie with cream.
 
Evenin’ All,

B: bovril and collagen powder - I miss my bone broth terribly.
L: a slice of cold meatloaf (LOTS of garlic :D)
D: part of the second batch of meatloaf. I am going to make this much more often. Thinking I can freeze it raw in bricks in the freezer. If I can find some space.

another busy day, but heading into a nice, quiet, stay-at-home weekend. Soooo looking forward to it.
 
Where did today go? I’ve been working on website admin and research all day - so many changes because of Covid 19 adjustments - will also be working tomorrow. at least weather not as tempting - I just hate being indoors on my pc when weather good!
Breakfast bacon and egg ( after listening to interesting fat emperor podcast yesterday evening about benefits of egg yolks for nutrition and our immune response I used two yolks and one whole egg with one slice of bacon)
Dinner wild salmon with chervil and lemon butter served with local Worcestershire asparagus and celeriac chips followed by rhubarb fool made with stewed rhubarb from our own veg patch stewed with ginger and lemon delicious.
Planning later decaff coffee and one of my montezumas peanut butter mini eggs - yup still there!

Loved my first Worcestershire asparagus which came on my online delivery yesterday - lovely surprise for me I was worried when ordered that it might have been imported stuff delivered. also another pack in fridge for weekend - reminds me of earlier non Covid-19 years! I count myself lucky re the choc thing I honestly don’t use willpower I just really enjoy small amounts and not battling to have more thankfully.
 
Had my devilled kidneys - really very good. Maybe didn't put enough mustard in to make it unpalatable. Next time I might put more in.

Yesterday, when I was in town, I went to see what the one and only remaining wet fish shop in Stornoway had in. Answer - nothing. Just a notice on the door - "This business has now closed down." I don't know if that is permanent or just meantime. If it is permanent it means that on this fishing island, there is not one single wet fish shop! Tragic.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and White chocolate phd bar.
Late Lunch: Fried halloumi followed by Greek yoghurt, coffee chia pudding and LC chocolate granola.
Dinner: cold chicken drumsticks, coleslaw, pork scratchings and leafy salad followed by SF jelly, cream and macadamia and coconut keto granola

Lunch. I had avocado; tomato, and cheese salad. With garden salad. Our own home grown lettuce, rocket, radish and spring onions. Added chive flowerbuds, basil and a few mint leaves to give it zing.
MrSlim had pâté on toast with his salad.
Afternoon. Tea and biscuits.
Dinner frozen moussaka. Brocolli. Celariac chips rewarmed. Glass or three of wine.
Tea and bedtime tea.
MrSlim has found the car battery to be flat again. Charging it up as shopping tomorrow is now imperative. He got the job. Hospital discharge co-ordinater. Is leaving for the UK on Sunday morning. List writing as I type. Anything not bought tomorrow will be either out of reach entirely, or fetched on my bike. Emotions are running a bit high here tonight.
Just discovered online that water chestnut flour is high in carbohydrate! Don't know how high or how it compares to wheat flour. Possibly not a good idea then. Might make some flatbread for Neil to try. Of course, I could just try it and see what effect it has on BG.
@Annb water chestnut flour may seem high carb but it is about one third the carbs of wheat flour. So far as I can tell from a few minutes on Google. Possibly useful after all?
