What have you eaten today? (Low carb forum)

That's good looking pork. Can almost taste it.
 
@DJC3 - Mr C is loving the look of that pork. He says he can almost smell and taste it. (He's been eating quite a lot of veggie food during lockdown.)
 
Highly amusing (and lovely) this morning watching Mr C have a Zoom / WhatsApp meeting with his 18 month old granddaughter with her teaching him the Baby Shark dance. She was very strict with him....

Breakfast: usual omelette with carb free syrup (raspberry this time)
Lunch: probably a bit of brie
Dinner; Mr C is cooking (we take it in turns while he's not at work) he's planning a big pot of veg curry using up veggies in the fridge so aubergine, fennel, peppers, butternut squash, spinach and (probably) a tin of chickpeas and some coconut cream to thicken it
 
@DJC3 - I was pondering "that pork" this morning, having seen that magnificent thing you created.

Amother time, I might try doing prep on a large piece of belly, including the suffed rolling, then cook part and Vacc the remainder in this hacienda sized pieces., those could then be thawed overnight (or longer if required) in the fridge, before then just cooking.

This weekend, we have beef on the menu.
 
@maglil55 Sorry to hear that you are still feeling down with this darned virus. I find that my chest feels OK if I stand but pressure from a chair makes it feel sore and walking around really gets it going. Today I do have a bit of a sore throat as well. A friend who keeps in touch keeps advising me to call a GP or NHS24 but I don't think there's any point in that. It is clearly not as bad as at one time and will probably sort itself out in due course. I don't know if my new, worse-than-usual stiffness and joint pain are anything to do with it or if that is just coincidental. My current concern is that, if it was the coronavirus, since I still have these minor symptoms, can I still be shedding virus or am I safe to go to the shop? Another friend I also keep in touch with was telling me yesterday that she was exhausted and swinging between too hot and cold. I am concerned for her but her husband is a sensible man and will ensure she calls for help if it is needed.

BG last night was 10.2 and I decided to take extra insulin even though it wasn't dreadfully high. FBG today was 6.8.
Breakfast was scrambled eggs with cream.
For lunch I still have half a bowl of soup left.
Tonight will be salmon - Ms V just brought my shopping which included lemons and cauliflower as well as some frozen peas. Sure I can do something with that. Perhaps lemon/cauliflower rice, peas and pan fried salmon. Sounds OK.
 
Fried eggs and duck breast for brekkie
Black coffee
Some almonds and walnuts
Stir-fried odds 'n' ends for tea: egg, cabbage, chicken and pork bits

Hope I can can get my weight down, sugars down, blood pressure down. Maybe a little too much salt and caffeine in the above, but I think if I get the weight and sugars down, BP will follow.
 
Evening all.

Spent longer than planned on shopping trips today so meal plans changed from 2 smaller meals to one very large one. Reverse seared boneless rib. Delicious - couldn’t quite eat it all, despite repeatedly going back for more.

 

That is exciting! I bought some root ginger today and it is happily sitting in water now. Thanks for the tips - and most particularly by the specific size pots needed!
I tried rooting some lettuce stalks in a saucer of water recently having cut off and eaten all the lettuce leaves Within a few days brand new leaves were sprouting - incredible! Today I harvested and was going to have them with my lunch but OMG they were horrible! So unbelievably bitter. Shang bother with that again.

Thank you, I have quite a significant Amazon habit at the mo and Im getting morose if I don’t get a delivery every day or 2. This has made me v happy - something I need that’s not too expensive.
 

Sounds like a good plan. 2.5kg is pretty large isn’t it? Mr C loves pork but I think even he’s going to be porked out by the time all the leftovers are finished. I might shred some and freeze it for his sandwiches later.

Today I had black coffee and water until 2pm then 90second bread fried and topped with cheese, a scrambled egg and mushrooms. The last LC custard with grated 100% chocolate to follow.
Dinner another of Urvashi’s lovely IP recipes Carne Guisada, with roast courgette and aubergine.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and peanut phd.
Late Lunch: 2 x Babybels followed by Greek yoghurt, lemon chia pudding and macadamia and coconut keto granola.
Dinner: Cold roast chicken drumsticks with leafy salad, coleslaw and pork scratchings followed by SF jelly, cream and LC chocolate granola.

Breakfast: nut granola, cauliflower kedgeree, 2 CWC
CWC.
Lunch: the same tomato soup with yoghut stirred in. Realised too late should have used cream. Was thinking soured cream and yoghurt is a decent substititute flavourwise, but has lot more carbs.
Before lunch BG. 5.4 Shot up to 9.9 in an hour, but forgot to set timer. So no two hour figure. three and a half hours of box sorting later. before dinner was still high at 6.8.one hour 6.9.
Not a very good evening. Ate too much dinner, chicken casserole,(had seconds) with buttered cabbage and green beans, Glass of wine, then half a glass more. Two small bowls of raspberries and cream, far too much chocolate,and several chunks of cheese.

brunch 11ish 2 sausages, vegetable cakes, fried mushrooms, CWC
Weather improved so outside to finish painting, chat with neighbour over the road. managed to ask him (in French) to come and set mole traps. We will be outside. Social distancing will be maintained.
Did a bit of weeding, small trailer is now half full, not sure what to do with weeds, usually take to tip. Dont think weeds make good compost. Bonfires are frowned upon. pile them up with leylandii cuttings for burning in the autumn maybe?
It makes such a difference, being able to get outside,

One of the many competitions I've entered is for a Baby Shark soft toy that sings "Baby Shark da da da da da". It will go to youngest grandson if I win it. I do not want to be driven nuts.
I did get notification today that one of the competitions I got No 1 to enter (although I had to submit it with permission) he's won. He doesn't know yet. It's a set of Roblox figures.

I’m not sure you’re going to be the most popular person in the world with your son and DIL though if you give the little one a singing baby shark
I’m hoping for their sake you don’t win it!
 
@Annb - I'm of the same mind as you. Hubby keeps going on "Should you not call the GP? NHS24?". But since it's just a minor relapse I don't want to bother. Personally I'd rather not be remotely near a hospital. I'm still a bit "chesty", sweats but no temperature and don't want to venture too far from a loo (enough said). I had a very hot shower at 8pm (no way I was missing Coronation Street tonight!) And sat in the shower and inhaled the steam. Now plastered in Vic and dosed up on paracetamol but I feel better than earlier.
Butcher delivery arrived today and is stashed between the freezer and the fridge. Otherwise been working on my legs and my printer. After going through all the diagnostics eventually worked out I have a faulty colour cartridge. I pay into HP Instant Ink which is a great system but in the midst of a lockdown it has taken me hours to discover how to notify HP that I need a replacement. Can't even just buy one as they are linked to my printer and I'd get constant messages that "this is not instant ink".
B. TAG and toast with Philadelphia and ham again.
L. 1 Dairylea (wasn't feeling my best).
D. Hubby was having one of the butcher's quiche with the Lidl slices potatoes so I mixed together a crustless quiche for myself with ham, mushroom and cheese. Had it with a couple of santini tomatoes and 1/2 avocado.
@DJC3 - Glad to be of help. I know what you mean. I've finally managed to order 2 bottles of hand gel which are on their way and a face mask for Hubby due to the constantly changing advice up here. I wear one but I think it's more like a comfort blanket.
 
They'll hate me! He'll love it. I've entered a load of competitions. It passes some time when I feel off. I have a chance with the Baby Shark. It was on the Raring2Go site and I've won with them before. It's liable to be one of these competitions that not a lot enter because it is so annoying!

Morning All,

yesterday I have
B: Bovril and LC hot choc
L: burglars
D: lamb liver and heart soup with pulled pork dropped in it.

today definitely satisfied my carnivorous urges! Lol.

oh, and I think the dogs need some liver too. Nearly got mugged for the soup, and couldn’t give them any because it had onion in it. Will do them some chicken liver from the freezer today.
 
I fell right off the wagon yesterday evening. Don't even want to think about what I ate, never mind confess to you lot! Didn't check my BG before bed but this morning it was 10.9. I've resolved not to post what I'm intending to eat but wait until I've eaten it in future. So far today - just tea.

Slight relapse yesterday @maglil55 - sore chest, especially when I move at all, or lean back in a chair and so very stiff - including my shoulders and neck, Shoulders have been fairly bad for a while but my neck hasn't caused any trouble for years. I don't know what could be the cause, other than this virus thingy. Hey ho! Keep upright (as far as possible) and carry on.
