@Chook it’s funny how some low carb foods can still cause a bg rise. I’ve a horrible feeling that sweeteners are doing that to me. Every time Ai have a DGF cake I end up with high BGs for a day or 2 blooming annoying as J like them and have a freezer full. More detailed investigation must follow.
Today black coffee all morning. @Antje77 I also love my morning coffee in the car and always take one with me on my meds delivering rounds. Don’t know what the appeal is but I like doing it.
Lunch was DD pizza omelette, salad then lc custard with 100% chocolate grated on top.
Dinner from the book Eat Rich Live Long ( Ivor Cummings & Jeffrey Gerber) was provolone& ham stuffed pork tenderloin. With broccoli. Red wine x2 ( glasses)
Not sure if what I craved was my fathers spaghetti, a pizza, or moussaka, but the resulting hybrid meal is very good!
So good in fact I'll share the recipe with you
- Put sliced salted aubergine and tomatoes in the oven with a drizzle of oil. Take the aubergine slices out when done, leave the tomato a bit longer.
- Fry onion, add lots of garlic and a chopped chilli pepper after a bit. Add spices like curry powder and paprika or whatever else you fancy. (I would've added bell pepper and mushroom but didn't have them)
-Add minced meat and fry until it's a bit browned.
- Add a tin of cubed tomatoes in juice (or passata). At this point I added a stock cube (mushroom, as I didn't have any other stock cubes) and oregano.
- Leave to simmer for at least half an hour. Don't forget to take your tomatoes from the oven about now!
- Grease your casserole and cover the bottom with a thin layer of your tomato/meat sauce. Aubergine slices. Rest of the sauce.
- Push pieces of gorgonzola in the sauce. Put your grilled tomatoes on top. Add mozzarella and parmesan. Put back in the oven on medium heat for 20 minutes or a bit longer if you've let it cool before finishing.
Eet smakelijk!
I always lived Heinz cream of tomato. I keep telling myself I'll make a LC version but I haven't got around to it yet.The effects of my mistake with pills yesterday haven't been as startling as I thought. Sore, of course, and sleepless as a result, but not too bad otherwise.
Made another mistake today though.
Breakfast was 2 soft boiled eggs - very nice, large local eggs, bright orangey-yellow yolks.
I decided that the floors in this house just couldn't go another day before sweeping/vacuuming/washing, so I set to this morning. Got the sweeping and vacuuming done by lunchtime but couldn't do any more. Then came my mistake. I looked to see what was in the cupboard to give me a boost without too much effort (no energy left) and found a tin of Heinz cream of tomato soup. Haven't had that in years but it made me think back to the weekend lunch my father would make when my mother was at work. So I heated it and had it. Within minutes, I was feeling sick, bloated and hot enough to be in a sauna. I know it has sugar and "modified starch" in it, but I didn't expect that!
Might not have anything else today.
You sure can use vegetarian mince for this! I occasionally do when I make moussaka, tastes perfectly fineOMG, that looks so good!!! I could make that with vegetarian mince.

I just used onion and tinned tomatoes and stock as a base, then added cream and sugar til it tasted like Heinz.
The amount of sugar needed was, frankly, horrific!
That was way back before I was cutting carbs as I do now.
Nowadays I wouldn't want so much sweetness, or I would use erythritol, if I was feeding normal ppl.
But unfortunately, if you want a near authentic Heinz cream of tom taste, then you would have to go for the high sweetness.
I've not tried the DGF products but i gave up low carb baking a long time ago as I found it just as addictive as normal cake type products and I haven't got an off switch when it comes to that sort of thing. I find sweeteners in general often affect my tummy and they seem to react badly with the metformin (this is a personal experience, not something I've heard about elsewhere).

The DGF cakes are nice. I gave up low carb baking too as it was too easy to overdo the portions. Buying them is simpler and helps portion control, however my stop button seems broken too and sweet things are definitely more addictive, even with sweetener rather than sugar. (Having said that my almond butter button is broken too) It seems to me that my BGs are generally higher on the days I have sweet stuff. It’s only a suspicion at the moment so I should probably investigate.
Try the DD pizza omelette. It’s good hot or cold.
My favourite h/m cream of tomato soup is very much like yours, using vegetable stock, basil but no sugar. I saute the chopped onions in butter first, add the tinned tomatoes - can be chopped or whole with plenty of tomato juice (I suppose I could use passata). Simmer for about 10 minutes, add double cream to taste and seasoning and then blitz in a food processor. I don't pass it through a sieve, but I could, if I wanted it really smooth. Then I finish it off with more butter. It doesn't taste like Heinz, is not as sweet, but I don't think it needs any sweetening. I had the Heinz tin in the cupboard for something quick for Em coming in from school, thinking she would like it as much as I used to. I won't be buying any more of it.I have made a version of this.

Me too. Big or small, makes no difference. Same thing with spiders. I can cope with tiny ones, but don't like them. Anything big enough to see with the naked eye, though, is too much. My mother always used to say that spiders were more frightened of me than I was of them. Wrong!!! Some years ago a large cockroach (about 11/2 long) ran across my sandalled foot in Singapore. I almost had a heart attack. No 2 son just picks spiders up and puts them outside, Neil uses a glass and card, but won't touch them. I hoover them up. At least my little machine doesn't harm them and I do put them outside. Failing that, if I can catch them - they die!

I was brought up in London (mainly) and I don't really remember there being many spiders (lots and lots of moths though) so it was a huge shock when we moved to a semi rural area with cereal crops grown in the field at the bottom of our garden - not only spider invasions but also a real field mouse problem if we left the back door open and a bat colony in the attic. Then we moved here which is on the edge of a village with miles and miles of moorland very close by. Its not so bad at this time of the year but come September just about every spider for miles seems to make a beeline for my kitchen and some of them have been huge. I was told the spiders we see are mainly the males who come in looking for love.
Hi all I’m back from an amazing few days in Wales. Good to be away for a bit and we had a very warm welcome to Wales and amazing weather - hols included picnics in mountains, two sea swims, seeing dolphins playing, a cliff top hike, a visit to a capability brown nt gardens/ Park and castle and a catch up with OHs brother and partner plus best ever cottage and great stop overs at borders towns including the books capital Hay on Wye and some black and white villages on way over and back! Really best hols ever and I count myself as very very lucky.
Will read posts later - just wanted to quickly log so back to it! I also got distracted by tag from @Goonergal on forum highlighting montezumas sale and ended up buying more 100% choc plus a few gifts for family birthdays to spend enough to get free delivery!
Over past 5 days I stayed broadly low carb but ate more generously plus took some DGF goodies with me
Breakfasts all days except today bacon and egg - no brekkie today
Lunches mainly salads with ham and cheese in picnic boxes but today a brunch of smoked salmon and scrambled eggs
Dinners chicken or lamb or steak or pork with variety of salads followed by DGF puddings with cream followed by decaff coffee and some 100% choc - peppermint oil version ( sadly a new delicious variety not in their sale!)
A few afternoons also had coffee and DGF millionaires shortbread- can’t tell you how nice it tasted with flask of coffee after a swim whilst sat on a wall watching dolphins play in the sun in New Quay in Wales! Paradise. also had Bombay Sapphire gin with soda ( it was our Sapphire anniversary) and prossecco over the hols.
My DGF stocks are now depleted so made a fresh order- well my 65th birthday is coming up soon !
