I simply have it with a salad. Usually avocado, tomato, little lettuce and a few walnut halves. The burrata is so creamy and delicious it doesn't need anything else. Sliced heart of palm (comes in tins) or artichoke hearts go well with it too.Haven't decided what I'll do with it yet so I'll be very happy to hear how you like to use it!

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee with Cookies and cream phd bar.
Lunch, I missed as I was at a very quiet orthopaedic hospital having a pre op appt with my consultant for some long awaited elective surgery next month.
A snack of pork scratchings when I got home.
Dinner: salmon fillets with creamy pepper sauce and mixed veg followed by SF jelly, cream and LC chocolate granola.

I took a call from the LRI Pharmacy yesterday to let me know the balance of omy medication was in for me to collect. As it is a "Consultant only - Red Flag" medication, I have no choice, but to have the script filled at the hospital.
As Leicester is in (hopefully) the final day of a relaxed lockdown, I decided I'd hot foot in and collect. The hospital pharmacy is, literally, in the carpark, right by the entrance.
The hospital footprint was mayhem! Parking was dire, to the extent I eventually stopped in the Drop off & Collect only (20 minute) zone. I never usually do that, as I'm perfectly fit to walk, and what's a few minutes stroll, in the scheme of things, but with the lockdown still in place, I didn't fancy the walk back from the distant multi-story.
Anyway, it all worked out, as I just had to go into the (empty) pharmacy (people were waiting outdoors - lovely day), passed the memory test (name, DoB and Address) and walked out with my meds, and home.
Whilst impressed by the pharmacy's efficiency, I was astonished and horrified how busy the hospital was.
Curious times.
Glad your long-awaiting op is coming much closer.
I wonder if that difference is because I went to an Orthopaedic hospital rather than a general hospital?

@Annb - I was given a diet sheet a lot like that one. I followed it for a bit - which, even at that time, seemed less healthy than I had been eating - and then had another Hba1c which was when I got put on insulin. No surprise really.
I'm really enjoying those stories of little ones' food combinations. My daughter didn't like combination foods when she was young so, for instance, if I gave her a peanut butter and banana sandwich she would open it up and eat the banana, then scrape off and eat the peanut butter and finally eat the bread.
I got a letter cancelling my long awaited appointment with specialist about my arthritis. No excuse, no explanation, no alternative appointment.
BGs are still highYesterday was another day with them all over 10 and FBG was 10.3 this morning - definitely not a good start to the day!
Breakfast: boiled eggs and buttered Burgen soldiers
Lunch: egg mayo with a bit of salad
Dinner: sort of cross between a pizza and a kebab -
Lo-Dough with brushed with butter and topped with garlic and mozzarella then lightly baked as a flatbread
