@Brunneria I think I read somewhere of doing crispy Coated omelette by putting a thin layer of grated cheese in pan first and letting it cook for a minute or 2 then pouring whisked eggs on top.
You've read it somewhere on this thread, as this is where I learnt the trick!
I think it was a post by someone following one of those weekly meal plans with recepes for every day.
Can't remember who it was but I'm still grateful, as this trick makes omelets so much more interesting!

@MrsA2 You are being very hard on yourself. I think the cake for comfort habit is one of the hardest to break. From what you are saying you needed it. Don't feel too bad about it, nearly all of us have occasional blips. Put it behind you.

@Annb I'm no doctor, but this doesn't sound at all right to me, and its been going on far too long. It doesn't sound diabetes related. Please try to get another consultation

Just waiting until the middle of next week so that there's a chance of my FIT test result being in. Then I will get a phone appointment with a GP.

When they are cooked through the omelette folds up and has a crispy outside. I tried it once but am used to tipping runny eggs under so mine went a bit soft but I think with practise it might work

I add milk to my omlettes (or cream if you prefer it fluffier), I cook the base in the frying pan and once it is set I finish it off under a hot grill so you can have it as runny or as well done/as you like. I prefer well done until it is a bit brown and crispy on top then just fold it over if you want to (I don't bother).

I admire your willpower for the OMAD's & swimming breakfasts @Chook & @shelley262

Brunch - 2 eggs mashed up in a cup with butter and a little mayo. Mug of earl grey with double cream.

Inbetweeners - 4 squares of Lindtt 90% and more earl grey (felt a bit out of sorts today but BG was ok so don't know why)

Dinner - 2 bunless quarter pounders with onions, small squirt of heinz 50% less sugar and salt, slice of cheddar & chives on top. SF jelly and double cream.

Managed to fit walk in, in between rain showers. Temperature has definitely dropped since the weekend. I have looked out my warmer pjs too.

Usual gallon or so of black coffee until lunchtime. Cold and wet running community larder from pub car park so glad I took coffee in my travel mug.
Lunch was croque monsieur made with 90 second bread and fried in butter. Then a DGF choc&raspberry brownie with h/m Greek yoghurt
Dinner calves liver, bacon few fried onions and cauli mash. 2 glasses red wine.
My BG has been high all day like quite a few people here at the moment. It’s so very frustrating.
Tomorrow is our wedding anniversary (38y) but we both forgot and haven’t been able to book any restaurants last minute. It’s still holiday season and they are all fully booked. I’ve managed to get a slot for a full breakfast in a nearby hotel though so we’ll celebrate with bacon and eggs in the morning.

So there! When I was a kid, I hated avocado. Mom used to say, all the more for me! I think I'm making up for lost time on that. This is worrisome about your DIL. Perhaps her dr can have her email a pic of her toe? Telephone is all well and good, but the dr really needs a better idea for something acute like that. Would a podiatrist have an in-person opening soon enough to help? And sorry the imaginary s&kid was better than the fact....

Bfast avocado, boiled egg, pecans, 2+ Lindt 90%, I really have to cut back or my heart will start leaping about like unto a gazelle, flax crisps/dilute soy
Pre-barre nosh skyr yogurt/olive oil
Supper spoon of peanut butter, wilted spinach/cottage cheese/hm dressing, cherry tomatoes, flax crisps/dilute soymilk and that's where I hope I can stop it!

Well! It's a "fast-paced" (no stops for learning steps; you just follow along) but not at all aerobic exercise class based mostly on the barre part of ballet class, Pilates, and yoga, in an 8-count rhythmic sort of way. That's my understanding of its provenance. The goal is to work your large and small muscles, using only body weight and light hand weights and a few inventive props from time to time. Squishy ball, therapy bands, glider disks for example. The beauty of it is that you will benefit from it at whatever level you perform. You are shown adaptations/options for every move, to make it easier, or even harder. If you are very lucky (like me!) your class will be taught by a former principal ballerina with a devilish penchant for complicated moves. It's not always pre-choreographed by licensed practitioners as Zumba is, or a franchise called Pure Barre, where all across the country everybody is doing the same combination this week.
The benefits to the body are supposed to be a long, dancer-like physique, way more core strength, and better balance. If your class is taught by a general exercise instructor, you may get the moves, but she probably doesn't have the musculature the discipline is supposed to promote.
Have I bored you to tears? It is Really Fun, and in our class when actually in the studio, it's not unusual for the class to protest, be dramatic about the pain, and all those fun bonding things

@MrsA2 - hugs for the cake! I think most of us have done something similar at one time or another when under stress - I certainly have. My sister used to say 'sometimes only cake will do'.

My day started at 4.10am. I was woken up by a dog crying - couldn't work out which one - so got up and let them all out. Jack obviously thought it was the right time to go out for a walk (which I can't do) so, although we all went back to our respective beds, he wouldn't stop grumbling - and when he grumbles he sounds weirdly high pitched like a little girl sighing.

At 5.15 I gave up trying to sleep, came downstairs and tried sleeping on the sofa but he carried on grumbling. Maybe I'll have a nap later. I don't function well without eight hours sleep. *yawn*

Yesterday 's OMAD went surprisingly well so I will do it again today. Due to various long phone calls I forgot about eating until 7pm but on seeing my FBG this morning I think I need to eat earlier.

Today's meal will be cauliflower rice (cooked with lemon and garlic) and half a jar of a lowish carb curry sauce and a vegetarian protein product called Naked Glory which I haven't tried before https://nakedglory.co.uk

I just have to tell the world: I'm having a bacon sandwich. Well two of them, to be exact. Home made keto bread and proper butter, of course. It's the first time I've had a bacon sandwich since diagnosis back in July, or a sandwich of any description since going low carb.

I had toast the other morning (this stuff doesn't toast so well, sadly) and was almost giddy with anticipation.

Hello again everybody. I have been MIA again mainly due to being so fed up with my BG readings but I think I might not be alone reading back. So took a break and now on I go. Btw @MrsA2 I had a packet of Ready Salted crisps a few days ago first time since dx just because I was fed up. It happens to us all at times.
Yesterday was fishfinger Thursday (my favourite supper of the week). Had with roasted Med veg.
Today breakfast was my usual slice HiLo toast, butter, tea.
Lunch as yet is an unknown.
Supper will be h/c Lamb Keema with cauli rice.

@Nicole T is this the Keto bread by the Seriously low carb company? I can imagine the joy of a bacon sandwich but interested you say it doesnt toast well? A slice of toast with my tea in the morning is essential for me and so far I have found HiLo the best though it is 5g a slice.

It's pretty much the same recipe as theirs, with a couple of very subtle differences, and working out at around £6 a kilo for the ingredients rather than the £15 or so that they charge. I'm still experimenting and preferring the colour, finish, and lack of big kneading blade hole in the bottom of a loaf that's oven baked (just use the breadmaker to make the dough) however the breadmaker creates a loaf of roughly double the volume from exactly the same ingredients.

I think my next experiment will be to double the yeast and the honey. They're not the most expensive ingredients, so it shouldn't affect cost much.

If I recall correctly, this is about 2g of carbs per slice. I might actually switch to HiLo when I've used up my ingredients. I wasn't aware of the product, since Amazon, Morrisons and Aldi don't sell it. About twice the carbs, but only 3/4 of the cost of the ingredients of what I'm doing now. I'd be happy at 5g per slice.

Oh for the days when an 800g loaf cost 50p.

Thanks for the info Nicole though I am not going to make bread and admire you and anyone who does. The HiLo loaf is only available from Sainsburys.

FBG 10.4. That's after BG of 10.9 last night, with Toujeo insulin dose of 58. May have to go on up to 60 and be taking pretty close to what I was having of Lantus (at 64, too much according to the nurse).

Anyway, I had 2 eggs scrambled with a little butter and 2 Atkins crackers at about 11 am. I left out the cream, to keep fat content down, but it still made my stomach sore.

Just finished it when No 2 son came in - his IBS is giving him a hard time just now and he had to break off from his round with the mail and rush here to use the toilet. It's difficult for him to time his medication/food while out all day. Luckily, his round takes him not too far from either our house or his own for most of the day! My new spider catcher was in the post but I'll have to get Neil to fix it - I can't get the battery cover back on. I'm told Em is off school today, feeling sick and sore tum. It seems to run in the family, this digestive system problem. There's me, with whatever it is that's wrong this time, Neil with his Crohn's disease, No 2 son with his IBS. Plus my sister in law and 2 of my nephews who have ulcerative colitis. Seems to be on both sides of the family.

Later I will have something with avocado, which Neil bought for me yesterday (if they're ripe enough). Failing that, it'll be cottage cheese with some of my pickled onions.

Definitely not alone. I’m getting some crazy readings.

Two meals today. Lunch was a selection of salami and chorizo picked up at Tesco followed by a 30g bar of 70% chocolate - couldn’t resist. Was in a canteen with colleagues, all of whom were eating fish and chips that smelt divine.
Dinner was mince fried with a tiny amount of onion, 2 eggs and some grated mozzarella.

I like the sound of that!

Just been having my picture took for my new Blue Badge. Doing it online because word from the council is that they're not issuing any. Asked Neil if he could take a quick pic of me. A few minutes later he came along with his camera, tripods, white background, stands, lights and set it all up to take one little picture. It had better be good. It took about 3/4 hour to get it done. He's putting it and images of documents on a memory stick for me at present.

Avocados are under-ripe. So it'll be cottage cheese and pickled onions.
