What have you eaten today? (Low carb forum)

Hi ickihun, Sounds good what did the ice cream do to your BG readings? I adore ice cream but never had any since being diagnosed in Jan this year
I did spike to 10.2 but I wasn't thinking straight. I'm more focused and will be making low carb ice cream lollies today for the nice weather.
I spike on anything. No matter how small. Reheated potato isnt too bad, spike wise for me.

or @Brunneria suggested an even quicker and easier way:
... 2/3 frozen fruit, 1/3 double cream, sweetener to taste and whiz it all up in a blender.
I love icecream, too, and I'm certainly going to be giving some of these a bashing!

Yesterday Wednesday
B Bacon 1 slice / 1 tomato / 1 egg / half a lidl roll
L 2 rivitas / cheese spread and peanut butter / 1 boiled egg / vanilla and coconut greek yogurt
S a few pork scratchings
D Chicken / egg salad / another van/coc / greek yogurt
 
Yesterday I had:-
B. Coffee and cream with 5 almonds
L. veg stir-fry with sweetcorn
S. A lot of ice cream in garden. dope!
D. 4 sausages and 2 burgers
S. 6 cashew nuts

My new weakness is ice cream. I must resist.
Reading between the lines, it sounds as if you may have had a lovely bbq in the sunshine, which makes your menu look even more impressive! If you did, I hope you had a lovely time.
 
Feeling fab today!

B: Coffee with lactose-free milk, Coyo yoghurt and raspberries
L: Celery with goat's cheese wrapped in iceberg lettuce, corned beef, tomato, cucumber, hard-boiled egg
D (will be): Chicken breast with spinach & red peppers, lacto-free cheesy courgettes, asparagus, cauliflower, broccoli

(It may be purely a coincidence as I've only been doing it for a few days, but choosing full fat lactose-free dairy alternatives for milk, yoghurt, cream and cheese SEEMS to be making a difference to my arthritis pain levels. I'm not giving up my lovely Beurre d'Isigny salted Normany butter, though - that's non-negotiable!)

Yesterday was a bit of a rush, had first physio in the morning, picked up stepdaughter from work experience and dropped her at her nans. Then went for an assessment for carpal tunnel syndrome where I had a steroid injection (which bloody hurt) we live in a little village so a lot of driving to get to and from places.
B: cup of tea.
L: mushrooms on one slice nimble bread, cup of coffee.
I then was in agony with my tummy again so got in at 4.45pm went straight to bed.
 

@Brunneria doesn't "do" lacto, but she's fine with butter, if I recall. Again, as I recall, I think it's the whey that affects her, and there is none in butter. Now, that could be convenient if it applied to you too?

Yes indeed.
Exhaustive tests involving butter, cream and assorted other goodies (just imagine the fun), have led me to conclude that while most people seem to have issues with lactose (the sugars in milk), I have issues with the proteins (the whey).

Whey is removed from butter, and is hardly present in hard cheeses and good double cream (steer well clear of all that vile processed creamlike rubbish like Elmlea) - and I don't have problems with them.

Whey is not removed from milk, yog and the softer cheeses. If I eat more than a little of them, I get psoriasis breakouts, foggy headedness, and yawning. A cup of tea with milk will start me yawning til I have tears in my eyes. The next morning I get psoriasis starting in my hairline.

I am fine with goats/sheep milk and its products, coconut yog and so on.

Also have similar issues with soy and soya products. But that is less of an issue for me.
 
Stress (and pain) related, do you think?
 
From my online research, it does appear that both whey (protein, casein) and lactose (sugars) can be responsible for inflammation. Apparently, they can also cause raised blood pressure, and although mine has been high for a while, I expected to see it start to drop once I embarked on the LCHF eating plan, which hasn't happened.
I'm still 100% committed to LCHF, because it's helping me to achieve good results with my BG levels, but I'm going to try lactose-free and non-dairy alternatives for a little longer, to see if they really do help.

When I ask what your issue is with LCHF (as I am doing now ), please take it in the spirit it is intended.

I didn't do the increased fat bit myself until I really had to stop reducing weight, or I'd have disappeared altogether!.. I did just convert from any low-fat products to full fat straight away though. I'm not a massive fan of high fat, aside from pork crackling, quality butter and the odd scratching, but to an extent it makes it relatively easy to ensure I get enough nourishment to be weight and blood stable.

I never, ever refer to my eating style as high fat anywhere; and indeed even here I talk about "enough fat", because that's what I do. I recall a lady who used to spread butter onto cheese, which I couldn't quite get enthusiastic about!
 
Could not sleep last night , so ended up getting up and making a Baked Frittata for today at 3.00am , no recipe , just made it up as to what I had in the fridge, baked in lined dish at 180c for 25 mins (bacon onion, broccoli and peppers etc cooked first).

Came to 4g carbs, 35g fat and 21g protein and 400 cals per 155g portion (got about 5 portions)

And it was very nice, have been missing spanish omelet and this is a good low carb substitute, should have done it long ago....

No nor me but I recall reading that in one of the scandiwegian countries, Finland I think ? , they in some parts have a sandwich of butter between two slices of lard :***:
