A standard portion for me (on one or two meals a day). Very satiating.
The beauty of real foods is that they are filling - I wouldn’t bother with calories, just be guided by your appetite.
Don't worry about eyesight yet or rushing to opticians as your bgs hopefully continue to lower they will settle but it can take a while so new glasses would be a bad buy! My eyesight settled along with so many things as my bgs normalised. You could always get eyes checked but not commit to new specs until level bgs.Ah okay, thanks for that, good to know.
Funny, with pasta/rice/potatoes or bread or whatever on a plate I wouldn't dream of eating 250g meat before but probably better for me, wasn't hungry at all for hours and hours after, like you say, very satiating.
This is it, to be sustainable I think I need to keep it simple and not be micromanaging stuff too much (not opposed, but if I don't really have to/forced to)
Saying this, I think I do need a little bit of a plan ahead with meals, with cost and making food for others in the house in mind as I'm making it up as I go along atm, which is probably more expensive and a bit self focused. (only on day three now)
Don't want to get into making differing meals (last night my spouse had the same just some rice with hers.)
Posited the idea about her joining me with reducing carb levels, not trying to convince her as it's ultimately up to her, would make things easier I reckon, but if not we can at least plan around that to make the same but hers with 'extras.'
Bizarre but today I feel my eyesight less blurry, I was starting to get to the point where if I looked at a phone/small text then look away things could be quite blurry, started to think I'd gotten to the age I started to need reading glasses (probably have as well as opticians overdue), but eyesight seems a lot better this week)
Years ago, before diabetes had entered anyone's consciousness, I went on a low calorie diet (900 calories a day) for months but ate the wrong things and ended up both ill, and heavier than ever. No harm counting calories, if you want to, but better to have real, value filled calories rather than empty ones (carbony ones - I was going to write carboniferous there, but that's a geological period of time. Not sure of the correct term for carb filled).Ah okay, thanks for that, good to know.

I'd also add to @Goonergal s advice re not counting calories eating to satiety but keeping carbs low.
It's hard when sharing meals - we've always gone for having same nutritious meal and my OH has a few carbs as extras although he was keen to reduce his carbs too as he was prediabetic and his middle getting bigger! He's now like me maintaining normal bgs and a slimmer middle by managing the carbs but eating other foods to satiety. Once you get results it's very motivating. Sounds like you are already seeing some benefits.

My OH is the main cook in this house (and a very good one too). On diagnosis, he wanted to understand my proposed way of eating, because he was NOT going to be making separate meals for the two of us. Our breakfats have always differed, but I do those and we both have yoghurt with something, just different yoghurts and different fruits/additions. Lunch when we have it is also different. He will usually have a sarnie and I have a salad. I prepare lunches.
He doesn't low carb. He is slim and his A1c is in the high 20s at the last routine test, so he can do as he pleases, in his mid-70s. Curiously we were just discussing this this morning over breakfast.
At home, we'll have the same main element and veggies to our dinner, but he will have spuds, rice or whatever. I can handle smaller portions of those things, but don't always bother, but they are there if I choose.
We are currently in the tropics until April and he is really quite low carb here, by choice. I haven't done any form of counting, but neither of us eat lunch here. Breakfast is a bit later and dinner often earlier, without the need to snack in between, although it isn't unknown if we want or need it.
It takes a little while to find routines that suit a family, or even a couple, so my steer would be to expect lots o f discussions in the early days around, "Can you have x, y or z?". Indeed, sometimes those still happen with "stuff" that hasn't been on the menu for a while.
This is a marathon, not a sprint. You'll be fine.

I was thinking of letting it dry in the closet where I keep my diabetes stuff and some books, it can be closed.Yes - I see that. Dogs and cats could be a problem when drying cheese. You don't have a dehumidifier, do you? That would keep the animals off of it. Or, perhaps you could lay it out in your loft.
