What have you eaten today? (Low carb forum)

B: cup of tea.
L: 4x ryvita with duck and port pate.
D: caved in and had a roast with potatoes and a tiny Yorkshire. However nearing the end I had a bad hypo, so couldn't finish it as was shaking all over the place. Orange juice and lemonade to sort that out.
S: tonic water, fruit before bed ( which I have had the past two nights and my FBG is lower than normal, I have to take insulin with it of course. But I'm happy with that as love fruit).
 
B: bacon, egg and beans. The dogs got the sausage. Latte
S: 4(!) squares 70%
D: slow cooked lamb stew (lamb bits, aubergine, peppers, onion, courgette, garlic). Bit bland. So i added pataks korma paste and powdered coconut cream. Oh yeah!

Maybe a coyo, later.

Brunch: Sausages, scrambled eggs, half a grilled tomato, half an avocado, 1 piece of Hovis Nimble toast with marmalade
Tea: Mackerel fillet with beetroot salsa, cauliflower cheese, followed by homemade low-carb cookies of my own devising.

Yesterday
Brunch - breakfast burrito
Dinner Broccoli and stilton soup with biltong and Lidl roll

Let me describe my brunch...
I had a large cauli tortilla (8in diameter) left over from the party (I had it in reserve to make a quick pizza with if the food was getting short),
I smeared it with a little HP sauce. Then I fried two eggs in a small pan, deliberately breaking the yolks so I got a sort of omelette patty. I put that on the tortilla, added a few pieces of grilled back bacon and a good dollop of mayo. Then I rolled the whole thing up and MUNCH.

Estimate of just over 700 calories, 56g of fat and 10 carbs. And I didn't eat again for nearly eight hours! Glorious.

L: Gluten-free crackers & cheese, raspberries
D (will be): Roast pork, cabbage, celeriac boulangere, green beans; chocolate chia pudding with black cherries
Carbs: 37.9
 
B: leeks stir fried in butter with an egg cooked in a hollow in the middle. Very nice indeed. plus coffeencream
L: not needed
D: will be steak with kale salad (kale massaged with olive oil, with cherry toms and avocado sprinkled with sea salt)

I am trying to increase my intake of leafy greens. So far so good. But don't really find them particularly inspiring. Think the Vitamix will come in useful, for soups.

Bank Holiday....................wet and horrible until about 6PM.....now glorious (typical )

L: Smoked Salmon, Cream Cheese and Salad Leaves with a large splash of EVOO
D: Roast Leg of Lamb, with a Celeriac Fondant and a whole heap of green vegetables
Cotes du Rhone Villages and probably a pudd later.
 
B at 11:00 three corned beef slices, few olives and 3 feta cubes
L cauliflower soup with bacon bits and pecans, belly pork pieces
D beef nam tok & brussel sprouts in butter
P berries and cream with some coconut cream mixed in
Lots of water and 1 green tea
 
B: Black Farmer sausage, bacon, mushrooms, toms, eggs (LCHF full English?)
L: Scotch Egg - 12g carb
D: a new creation ... Chicken breast, sun dried tomatoes, cream - with brocolli. A slice of the LCHF Lemon cake made yesterday, really moist, super tasty.

In addition to dinner I've now nibbled on 3 Hotel Chocolat 80% praline squares - super tasty! Good news is around an hour after my BG was 5.7, and 2 hours later it's the same. Super pleased that dinner appears to have had little effect on my BG's, will test again in an hour though

L: Lidl roll, pate, cheese
D: out again! King prawns in garlic butter for starter. Main course chicken breast in cream & mushroom sauce with spinach. Came with new potatoes but they looked like they had been cooked several hours previous and reheated in a microwave. Not appealing so easy to resist any temptation to eat!

Hi Brunneria, like the sound of the leeks fried in butter with an egg, was the egg scrambled or just fried in the middle. ?

D chicken/ lettuce/ celery / mayo / Strawberries / thick cream

I got the leeks how I wanted them (nice and soft with a hint of golden brown just starting on the edges) and I pushed them to the side, and dropped a cracked egg into the bare space in the middle of the pan.

I think, if I had wanted a top-cooked egg yolk, I could have piled the hot leeks back on top, so that their heat was cooking the yolk from the top down.

Must confess I really enjoyed it. Felt like doing it again this morning, but not enough time.

Lol. Just been so obsessed with this recipe (typing out the post above didn't help!) that I took a break and made it again, only this time with wilted kale and half an avocado, with the egg dropped in the middle. it was lush. I am thinking this greenery+egg may become a staple.
