Thank you for the idea another meal for my menu.
I got the leeks how I wanted them (nice and soft with a hint of golden brown just starting on the edges) and I pushed them to the side, and dropped a cracked egg into the bare space in the middle of the pan.
I think, if I had wanted a top-cooked egg yolk, I could have piled the hot leeks back on top, so that their heat was cooking the yolk from the top down.
Must confess I really enjoyed it. Felt like doing it again this morning, but not enough time.

Day 2: Operation Leafy Green
B: kale with avocado and a fried egg (and butter and plenty of black pepper)
L: halloumi and 70% choc
D: green soup: rainbow chard, courgette, red pepper, samphire, spring onion, cashew nuts, chicken stock and halloumi. 3 bowls. Still peckish. More cheese or berriesncream, incoming....

B: Greek yoghurt with raspberries, Parma ham, Manchego cheese
S: Low carb Lemon Cake
L: rocket, tomatoes, cottage cheese and pate
D: lemon sole, brocolli - nice, but boy did the house smell fishy when I just got home post meeting
S: Oppo ice cream! Salted caramel so good.
And a big juicy glass of Malbec
