What have you eaten today? (Low carb forum)

Hello. I forgot I hadn't posted. I've had a very mixed day with food, picked at anything that took my fancy and had a doughnut (shock! horror!) and felt so guilty afterwards. I haven't had one for a very long time so hopefully it's just a hiccup. Tomorrow it's Mother's Day. My daughter is no longer with me, one son is 60 today and lives in USA and the other son lives in Portugal! So tomorrow I have treated myself to 2 lamb steaks and I have broccoli, cauli and carrots to go with them. Enjoy Mother's Day ladies.

Late lunch of 2 scrambled eggs with the very strong emmental cheeses in.

Out at a quiz later so tried a recipe for caulifower crisps to take with me, but it failed (I didn't follow measurements or timings) so ate half before going out.

At the quiz everyone else was on sausages with jacket potato and beans, but I took pate and seed crackers, and the remaining cauliflower softies. Chocolate covered brazils for me instead of ice cream.
Fun evening, half a bottle of wine drunk, and we still won!
Part of the prize was a box of milk chocolates. Yes I had quite a few. Was going do well....

Evening & I won't mention the other things, @LivingLightly, but I won't be looking in any gardens, as I live in southern England now.
I loved living where we did & of course, they only have red squirrels in France & they used to clamber through the hazelnut tree that I looked out over from my chair & bury them in the grass. Do miss it, but I was very lucky, with the wildlife in & out.

@ravensmitten, yes, if you live rurally, you do get used to all sorts of things. To a point!

One pre Mother's Day doughnut, I'm sure can be forgiven, @RosemaryJackson, enjoy your meat treat tomorrow & your phone calls.

@MrsA2, you'll have to put in a request for dark chocolates, especially if you can win after wine, well done!

Erm....back to thread, dinner tomorrow will feature cold steak!
 
I hope you enjoy Mothers Day too. And that sounds like a lovely treat for it too.
 
Morning all, Happy Mother’s day if you celebrate and hugs if it is a difficult day. I seem to be cooking lunch for vegan daughter and boyfriend and GF hubby and low carb me! I have made a nut roast which seems to be fine and have vegan sausages as a back up. After several difficulties with vegan desserts in the past, I have got Gu vegan cheesecakes for them and a CC choc pot for me. Don’t really mind,daughter was in deepest darkest Peru this time last year!

Breakfast was last of the bigos. It did look appalling, but was fabulous. Obviously got it just right for once. I saw a bit of a programme of the Hairy Bikers in which they were serving bigos which did look better than mine but I'll bet it didn't taste any better. The thing was, they said you don't have to have meat in it but can make it all vegetables. Must try that. Need to get Neil to buy dried mushrooms for me. I did put them on the last shopping list but he came back without them. He thought I was asking for a punnet of mushrooms and he knew I already had one in the fridge.

2nd meal will be fish pie, without the topping. I'm poaching the fish and boiling eggs at the moment in readiness.
 
Your swede air fried chips look crispy. Were they?
 
Monday 4 March - bed 7 8 FBG 7.1 I did get a much needed visit to Aqua this morning, then back to my mixed teaching duties.

B. TAG and 2 slices of SRSLY toast with egg mayo. Benecol dairy free.

L. Nothing

D. Remains of yesterday's very rare steak cold with horseradish. Hubby cut it very thin, and arranged it into a rather neat semi-circle on the plate (I wish I'd photographed it as it was very pretty). Had it with veggie salad and a GF Yorkshire pudding. A scoop of Halo Top with raspberries.

Tuesday 5 March - bed 7.9 FBG 7.5

B. TAG and Benecol dairy free.

L. Nothing

D. I made that stir fry again with Argentinian wild shrimp, pac choi, stock, exotic mushrooms, red and yellow peppers, peas, spring onion, and the made up sauce of tamari soy, ginger, SRSLY red chilli, garlic and stock. CC little chocolate pot with 2 strawberries.

My head was full of geometry, as grandson is getting through work at pace with me.
 
I might as well do Wednesday 6 March & Thursday 7 March together as they were pretty much the same. 6 March - bed 7.4 FBG 7.1 7 March bed 6.7 FBG 6. No Aqua on Thursday as I was involved getting grandson into school for a while.

B. Both days - TAG and Benecol dairy free.

L. Both days - nothing

D. Both days - pasta fagoli (or as Dean Martin referred to it in song pasta e fasule). Hubby made it. Base was an excellent chicken and vegetable stock, with a soffritto of carrot, onion, and celery. Add to that cannellini beans, berlotti beans, pancetta, oregano, garlic, a touch of chilli, plum tomatoes, tomato puree, seasoning, and parmesan. Boys both had GF Pasta in theirs, Hubby normal pasta, and me NLCK low carb pasta. If I've had nothing else, I can get away with the beans in this. BGs went from 5.6 to 7.9 but had returned to 6.7 within 1 hrs.

I had a vodka and diet coke one day & 1/2 a keto keto bakewell bar another day.
 
Friday 8 March - bed 7.3 FBG 7.5. Another mixed day of school, home and physio. Youngest grandson has gone down with a bug, eldest managed his school visit with a mountain of work to take in, then came with me to physio.

B. Just TAG

L. 1 chicken drumstick

D. Rack of pork ribs with spinach. Scoop of Halo Top with raspberries. Gin & soda - and a nap on the recliner!

I did get a lovely email from grandson's maths teacher saying they always suspected there was more in him, but they've been astonished at just how much more there was. They said that the pace and challenge I'd managed in just one week has got him ahead of the entire 2nd year in maths. They confirmed that I'm correct in where I'm taking him next with his next challenge and said anything they can offer to assist - just ask. I'm just happy he's got his enjoyment in maths back again. My one concern is that he keeps saying I'm a much better teacher than any at school, and he'd rather I taught him all the time. I have to get over to him the social aspects are vital too. Ah well, one issue at a time!
 
Brunch of lumpy soup.

Evening meal will be preceded by the heavenly but very small portion of mixed nuts. Then it's cheese omelette and salad. Nearer the time I will need to decide: 2 big eggs or 3 small ones?

First salad this year! Mixed leaves from Aldi with spring onions, cucumber, lettuce, olives, dressing of cider vinegar and olive oil. Husband will also have radishes and tomato.

The corners/edges were crispy, not the whole fries. I toss them in olive oil & SPOG, that helps. I think I prefer them to chips.
BTW, well done with your grandson & his teacher for acknowledging your work with him.

Dinner tonight, the leftover steak, sliced in a bun with salt & horsradish.
 
I had an amazing birthday party!

I had cheese and slices of liverwurst, a single crisp, onion soup with lots of grated cheese later on, a small piece of baguette with garlic butter to prevent a hypo, some bitterballen and carby cheese snacks for which I apparently dosed pretty well, beer and whisky, and wonderful company.

I also slept in my neighbour's bed again. For the second night in a row I had a nighttime hypo in the early morning. Nothing bad but very odd. I even ate two milk chocolate easter eggs before bed to start the night a little higher than the night before. In all the years I've had diabetes, the times I went low during the night can be counted on one hand, no matter how much partying has been involved. I went over my dosing decisions and they seem to make perfect sense to me, nothing to expect a low from.
I guess it's one of those diabetes riddles that need more practice before getting it right, just like swimming or going to the gym. A fine reason to share my neighbour's bed again next weekend!

Having a nice mother's day here. Started with my usual walk with a friend.

Then son arrived with a whole load of cooking ingredients which he turned into a splendid spicy chicken with veg cooked in more spices and coconut milk.
Wine, just one glass

He also bought me 2 boxes of DGF cakes so we shared a lemon drizzle. The rest are in the freezer

Now the boys are watching rugby while I had a sleep in the chair.

Won't be much else today
 
Hi all, back after a couple of wonky days where carbs crept in. Actuially they abseiled off the roof and crashed through the window, I swear I was just an innocent victim. The good thing is that a few carbs don't derail me any more - and don't make me feel like a failure either.

Today has been a really good one, I had 2 slices of bacon with 2 hard boiled eggs, an avocado and green leafy salad dressed with apple cider vinegar and olive oil fo "breakfastt" a midday.

Tea will be a chicken breast with skin on, buttered mashed swede and crown prince squash and some cauliflower. My mouth is now watering thinking about it, so I'm off to get that on the plate!

Saturday 9 March - bed 6.7 FBG 7.3. Might as well catch right up having got this far.

B. TAG and 2 slices of SRSLY toast with pate. Benecol dairy free. This was quite a late breakfast. I got up around 6 am to visit the loo. Returned to bed and fell asleep again. It's quite unusual for me. Hubby left me to sleep, and it was 10.15 before I woke up!

L. Nothing - I had to get out for some shopping

D. Cold cuts. Hubby sorted it out. Ox tongue, deli roast pork, pork and egg, corned beef, mini German sausage, veggie salad, and coleslaw. Scoop of Halo Top with raspberries.

Later, a relaxing gin and soda.

Sunday 10 March - bed 7.3 FBG 7.6. Received a lovely bouquet
from son, DIL, and grandsons. We were supposed to be going out, but it collided with football. Just as well as the youngest has gone down with norovirus again, which would have prevented an outing anyway. No swimming lesson either. My task for today was driving Hubby to the football & I'll return for him later. We'll try for a belated meal out next week when, hopefully, everyone is healthy.

Meantime, I'm having a very quiet afternoon until I leave around 7pm. No TV on, just a lamp, and absolute peace. I wish I could have my campari & soda but that's a no no when I have to go out to drive again, especially along a road where the potholes have potholes!

D. 6 lamb cutlets with mint. Crispy outside, pink inside - just how I like them.

@jessj - To be fair, I have a few advantages over the teachers. I taught him previously during lockdown, so he knows there is no messing. You do your work, and I won't back down. He knows I'll explain until he gets it (which is usually quite quickly), and I only have one to deal with. They have 30 odds of mixed abilities. He also can't stay under the radar with me. I know what I taught him previously. It keeps my brain active too!

Tricky with the football pick up. Hubby's team is 1 - 0 down but, if they make a comeback in the 30 mins it takes me to drive there, I'll have extra time & potentially penalties to sit in the car for. I'll give it 15 mins then decide.
