What have you eaten today? (Low carb forum)

Yesterday:
B: egg, bacon n coffee
L: none
D: LC moussaka with coleslaw

Today will be:
B: eggs benedict
L: none (maybe marmite cashews?)
D: lamb shank in GARLIC with leek in cheese sauce and sugarsnaps
 
B: omelette with mushroom and spinach

L: salad with ham and cottage cheese

D: sausages and cabbage with ginger
 
Breakfast: Zzzzzz

Lunch: cheese and tuna wrapped up in home grown leaves.

Dinner: home made chicken burgers baked with tomatoes, courgette (home grown) and red onion, with fresh mint, oregano and parsley, sprinkled with feta cheese.


Snack: small apple.

bg reading 2 hrs after lunch 4.9
D BBQ 2 SAUSAGES / 1 BURGER NO BUN / 2 CHICKEN KEBABS ON SKEWERS / PEPPERS / MUSH / TOM COLESLAW / SALAD

This morning my omelette was mushroom and courgette. Everything else will be exactly the same as yesterday.
 
B: cup of tea.
L: roast pork, swede, green beans, 1x roast potato, 1x tiny Yorkshire.
D: will be low carb crackers and pate, cherry tomatoes, cucumber, cottage cheese. Peach or nectarine.
Water throughout day, coffee.
 
You do some good recipes Debra, just printed off the egg muffins and strawberry sponge will make in week. thank you I love your recipes are they ok with BG levels?
 
Yesterday:

L: not needed
D: lamb shank, leeks in cheese sauce and berries n cream
S: 4 squares 70% spread through the day

Today will be:
B: nothing
L: nothing
D: probably chicken baked with pepperoni and cheese. Hmm. should I call that Pizza Chicken? with broccoli and asparagus.
 
Back to my Good Green Stuff, Clean Lean Protein, but C, chia seeds and 800ml water
 
SUNDAY
B Omelette / cheese / mushrooms
L 1 slice of gluten free high protein bread [ from fultons] / homemade lemon curd
S 1 pkt pork scratchings
D chicken / egg salad/ rasp / black berries / crème fraiche / cream

Well, they work out OK for me - you'll see that I quote the cals/carbs per serving at the bottom of each recipe.
I have put a recipe on the forum for scones, which does have slightly higher carbs as they contain a small amount of regular flour, but on those occasions when only a scone will do, they don't seem to spike my BGs. (Of course, you do need a good dollop of clotted cream on them! )
 
My first day today
B- bacon and scrambled egg
L-full fat greek yogurt with blueberries
D-creamy spinach with pork chops and asparagus
Lots of water
I hope this is ok, i haven't got a figure of carbs i want to stick too but i was thinking moderate carbs.

Love reading what you are all having
 
Brunch: large fry up but zero carbs

2 fried eggs, big portion of mushrooms sautéed in butter. 4 rashers of bacon, 1 x 97% pork sausage, 2 x grilled toms....lovely

B: Fage yoghurt with 6 strawberries and 6 raspberries
L: tomato soup
S: found the Christmas Cake I've been given just before diagnosis, I ate a slice
D: venison meatballs, cream and a little flavouring

2 hours later, BG 8.1. Hey ho, no more Christmas Cake ... however good it was! Putting it down to a tired and emotional day. Tomorrow will be brighter all fruit might be a mistake too.
