Hi debrasue, glad your getting over the virus not nice. I`m doing ok too, my results were good, staying in the low 5s most of the time , lost the weight feel a lot better for it. Only thing now is being on the LCHF diet has raised my cholesterol to 5.5 from 4.3, seen doc on Tuesday says to just cut down on the fats I have been eating, told her I didn't want to go on statins, she was fine with that. Only to go back in 6 months. If I can control the Type 2 diabetes I know I can get the cholesterol down too. My mother and father are not too bad, dad waiting to go in hospital again. Mother turned 90 yrs . Got the last grandchild off to school now so have more time in the day to do my family history , started going to the records office at Preston transcribing wills, I just love it. Grandchildren are good for all of us keeps us going. xHi honey! It's good to have you back - we missed you.
I'm doing ok, thanks. I'm recovering from sort of weird virus thingy which developed on Saturday and knocked me for six, but I'm feeling better with each day that goes by now. How funny that you should mention the lemon curd - I'm just having some on a bit of toast for breakfast! Life's good; I'm managing to keep my BGs pretty stable and well within range most of the time, I'm in demand work-wise and have the luxury now of being able to cherry-pick the jobs I want and choose when and when not to work, and the grandkids are gorgeous and keeping me entertained. I count my many blessings every day.
How about you? How are you and your crew? Are your family issues sorted now and giving you some peace? I do hope so - you deserve a break and some me-time, considering everything you do for them all!

D: moussaka and mangetouts. I made a HUGE batch of M. Was supposed to freeze half. But none of it has made it to the freezer! None!

It is soooo easy.
Just do a low carb red mince - onion, mince, garlic, tomato, worcestershire sauce...
Cook aubergines as normal
I add courgette too
Layer up in baking trays
Instead of bechamel, i use blobs of ff cream cheese, with grated cheese on top, and a light sprinkle of parmesan
Bake for 35-40 mins at 180 degrees.
Serve with salad or extra veg.
It isn't 'authentic' but it sure fills a hole!

@walnut_face re your comment about 99% choc, don't do it! I bought a bar from fancy Rococo, £4.95 (shoot me now, I'm a marketing mans dream!) and can't stomach it ....
