What have you eaten today? (Low carb forum)

Breakfast - none

Lunch - none

Dinner - 2 rashers bacon; 2 sausages (Waitrose free range Cumberland - 1.5 carbs the pair); 1 Birds Eye Burger; Oppo chocolate and hazelnut ice cream with double cream

Yep - next to no effect on mine. I've only had the seeded one.

Bed 6.7 FBG 5.4 and dropping pre breakfast 7.4. Although they look so so my BGs are all over the place today - up and down like a yo yo. I suspect the culprit is a tooth I have had a wobble in for 12 months now. Dentist has been watching it waiting for it to react. I've no pain or swelling but it doesn't feel right (nor do I). Usually I'm very stable during the day but I've had a few jumps up into the 8's with a very rapid drop to follow. Hopefully I'll get the tooth sorted on Thursday and back to normal.
B. Boiled egg and Tassimo morning coffee with cream
L. Nothing
D. Poached salmon , spoonful of prawns, boiled egg, lettuce, tomatoes, coleslaw, 1/2 avocado , 2 mini peppers.

A Zero Carb day for me.....

Breakfast: Bacon and eggs

Lunch: Coffee with cream

Dinner: Salmon and prawns

Drinks: Coffee with cream for breakfast and lunch, sparkling mineral water for the rest of the day

B: chicken bone broth
L: chicken salad, and a lemon cream sugarless jelly
D: thin rib in red wine and thyme, aubergine, peppers and broccoli and maybe more jelly, cos its lush!

Where did you get the lemon cream sugarless jelly? Sounds lovely!

Where did you get the lemon cream sugarless jelly? Sounds lovely!

It was a German brand on Amazon.
The packaging says 'Ruf' 'gotter speise' 'zitrone Geschmack'
Plain unsweetened lemon, and you add whatever form of sweetening you like - IF you like.
Then I stirred in some double cream.
The cream did mix with the jelly at the beginning, but then rose to the top so that there were two layers. Clear lemon jelly at the bottom, and then a creamy lemon jelly layer at the top. Both layers had the same consistency. Very pretty.

Unfortunately, that was my last sachet, and when I went online to look for it yesterday, I couldn't find it on Amazon.

There are lots of 'sugar free' jelly brands out there, but they all seem to have nasties in them, including the ubiquitous Hartley's. I particularly look for Aspartame free.

Thanks @Brunneria - if you ever do find any more could you let me know - I love lemony desserts.

Evening.

Breakfast - none

Lunch - out with a colleague who suggested Nando's. No complaints from me. 5 plain wings with salad.

Dinner - sea bass fillet fried in butter with sautéed broccoli, courgette and onion and a splash of lemon juice; 2 squares Lindt 90%

Hello
B. Raspberries and cream

L. Bit of Stilton

D. 2 popadoms. Chicken tikka starter with salad. Chicken madras with a Chappati.

Thinking about Lemony desserts...
I love a good lemon chia pud.

Pick any chia pud recipe and take the proportions from it. From memory, it is around 7 heaped tablespoons of seeds to 300ml of liquid, but a recipe can give you the exact amounts. Prep time is less than 5 mins.

Then make up your liquid - could be lemon juice, water and erythriol, or fruit juice, or cold chocolate almond milk, or herb tea, or pureed raspberries in water.

Combine the seeds and the liquid. Stir.

Leave for several hours til the whole pud goes all thick and yummy.

Serve.

I prefer to get the flavour balance right before mixing the seeds in, because then you have it right.

Serving size is approx a ramekin, but whatever floats your boat.

Something like this:

No BG waves today but still a little high. Bed 6.2 FBG 7.1 and pre breakfast 7.9. Lurking around 6.4 rest of the day.
B. Slice Hovis lower carb seeded and a boiled egg. 2 mini chipolatos. Tassimo morning coffee and a dash of cream.
L. Nothing
D. Leftovers from yesterday - salmon fillet , rest of the prawns, boiled egg, lettuce, tomatoes, coleslaw, helmanns and 2 Walnuts.
Tooth recovered enough for a whey hay chocolate ice cream and 3 raspberries.
Circus tomorrow.

Todays been some more testing and revising the spead sheet Ive built up showing nutritional make up and BS impact of foods / recipes
Every 2 years or so I retest some foods ( good, bad and borderline impact ones) to see what the change in impct has been as a rough guide to how well my pancreas / meds are doing
Today it was one from the 'bad' list - small bowl of porridge with unsweetened cashew nut milk - the BS spike was more than double what it was last time - think I need an 'Evil' list!!. Still my blood sugars are now firmly back in range and the hba1c being predicted by the logging app I use is still quite acceptable (46.2) so thats ok

B - evil porridge
L - bag of pork scatchings
S - pice of my low carb lemon and blueberry cake with 50g Oppo ice cream
D - probably saucy fish dish from the freezer
Drinks - 2x coffee with cream, sparkling water
