What have you eaten today? (Low carb forum)

I love Whole Earth crunch peanut butter.

B: boiled egg, 2 bits of herring
L: leg of chicken and pile of cauliflower in cheese and broccoli
snack/early dinner: several slices Jamon de Bellota (lots of fat), bowl of Greek yoghurt and blueberries
D: still thinking...(but having read up on selenium now wondering whether I'm eating too many Brazil nuts.)
 
Is there any other way to eat it? ;)

Since I ran out of 9 bars (unbelievable, I know) I've been thinking about options for emergency work snaffles. Then yesterday, I caved and took a Whole Earth crunchy jar in.

B: 2 boiled eggs, tsp coconut oil, sour daikon

L: leftover cottage pie (2/3 portion resulted in 0.4 mmol/L difference compared with last night)

D: cottage cheese, chilli oil, watercress
 
I love Whole Earth crunch peanut butter.

I prefer Peanut Butter & Co Old Fashioned Smooth Peanut Butter (just peanuts and salt), as it's not emulsified (you have to stir the oil back in, and it's magical!). Sadly, it's becoming more difficult to find in shops.
 
B: my usual flax/psyllium/berry/walnut muffin with butter & a black coffee
L: the plan is - flax/psyllium pizza with capsicum, onion & pickled jalapenos
D: the plan is - big club salad & will try out a coconut flour flat bread
 
Today's plan:
B- Eggs/spinach/mushrooms/butter and coffee with cream
L- 2.5 oz grilled chicken with diced avocado, salsa, sour cream and 1/2 cup of cucumber slices
D- ground beef something (it is thawing in the fridge while I am at work) and steamed broccoli with butter, 1/2 cup blueberries
S- walnuts

Hello CJ... I just went online and saw a recipe... what it didn't tell you was that you have to use fresh goat's milk that's not homogenised... Not UHT I guess... it was all I had so, I brought the milk to 180 degrees then put an unspecified amount of lemon juice - I used half a lemon... the recipe said if it doesn't curdle into lumps add more lemon... then strain it through a couple of layers of muslin... not many instructions I know... I had a lovely recipe from one of the guys on a thread which was stopped but unfortunately I didn't write it down... Anyway, I waited and just had lemon flavoured warm milk... all the people that wrote on the blog said that's what happened to them too! I took my Symprove, which is for my ulcerative colitis, and as it is full of bacteria I popped some into the warm, lemony milk... after quite a long time it curdled, so I strained it and when it was ready I put salt and garlic in it... It was very nice, I have to say, but what a palaver... I now have a bottle of fresh goat's milk from a local farm (I am in Bahrain) and will try again tomorrow... I'm sorry this is so rambling - I am trying to do two things at once... short of time as usual... I will look online for more recipes and let you know what happens... :)

L: made the mistake of pilfering some of my Brat's dark chocolate covered coffee beans - caffeine took my appetite - feel spaced out!
D: when I do feel hungry a spicy lamb burger with a dollop of full fat Greek yoghurt and Greek salad on the side.

L - Small piece of cheese and rocket with a teaspoon of mayo

T- Broccoli with cheese and Sea bass fillet

How do you make spicy lamb burger?? sounds so nice
 
Breakfast , scrambles eggs
Lunch one slice of Burgen with chicken and salad
Tea will be a large pork chop , spring greens , roasted celeriac , carrots and one new potato
 
B Fried eggs, bacon, tomatoes, mushrooms (dab of butter added)
L Cold roast lamb (leftovers), salami, multi-leaf salad, home-made dressing
D Poached salmon in spicy coconut/tomato sauce, steamed celeriac, b squash, broccoli
 
Two fried eggs on slices of almond/coconut muffin
Philly and cucumber on a slice of muffin and two slices proscuitto
Snacked on green olives stuffed with almonds
Baked salmon and brussels sprouts - and two glasses of red wine...
Hot chocolate on the go made with almond milk tonight and a spoonful of peanut butter... :)
 
I love stuffed olives - the blue cheese ones are heavenly :)

Haven't so far decided what I'll eat today (usual muffin aside) but there is one half of a perfect avocado left from yesterday so that will definitely get a run!

The good news is that the coconut flour flat bread I trialed was sensational so I'll post it in the recipe thread. Much lower in protein than the flax ones but still low carb/high fibre so a good one to have if you've just about hit your protein limit :)
