What have you eaten today? (Low carb forum)

Well after yesterday's result of 5.7 HbA1c, I went out to dinner and went mad. Not really. Duck salad, and sea trout main, but I did have a fruit crumble.

Today, B: 2 small slices herring, 2 Nairn's rough oatcakes and cream cheese
L: beef and pinto bean chilli with a mountain of savoy cabbage. I pressure cooked twice the amount of pinto beans I needed (5 minutes) so there's spare left for salads, or making home-made baked beans.
D: will be tuna salad with leftover bits and pieces
 
B: bulletproof coffee

L: hummus and coyo (liked it so much yesterday, had to have it again.

D: moussaka, green salad, then rhubarb and strawberries with cream.

(Diced rhubarb and rough chopped Strawbs in a small pan with a dribble of water. Gently simmered til soft. Sweetened with a small amount of erythritol, served warm with double cream. Will definitely do it again - and it's the perfect use for strawberries that are a little past their prime.)
 
Yogurt and berries
Last night's chicken, kale, ginger and chilli soup, but with prawns added.
Two slices of warm, freshly cooked almond bread with butter.
Now what....?!

Lots of yummy recipes to try for breads...this is one I got from one of our members (Alzebra)....haven't tried it yet but sounds delish:)
Cheese and Almond Bread
Makes 1lb loaf

10 1/2 oz (300g) ground Almonds
1tsp baking powder
2oz butter
5 1/2 ozs (155g) grated cheese
3 beaten eggs

Combine all ingredients in food processor or bowl, quite a stiff mixture, place in loaf tin.
Bake at 180º 50mins RECIPE TO TRY OUT :D

1 slice of Burgen Soya and Linseed toast with Marmite....Tested out how it affected my BG
Before 5.1......2 hours later...6.8.......not sure how good or bad that is???? Don't think it's too bad but I've had complete meals make it go up less

Mid morn snack - full fat greek yogurt with walnuts, satsuma
L- left over pork belly slice with egg mayo

Sounds perfect and delicious............any chance of a doggy bag please....wipes dribble off chin after visualising that lot ***
 
B Almond cheese “scones” with brussels pate
L Lamb meatballs, slim noodles fried in butter and paprika, green smoothie
D Will be cauliflower egg salad with 2 poppadoms. Sugar free jelly.

977 calories 26g carbs, 71g fat, 52g protein. Only on my third day (after lurking and trying to get over the fear of fat!) so hope I’m doing OK

May have some cheese too, but sodium level seems high according to myfitnesspal diary.

Breakfast 2 scrambled eggs on a slice of burgen bread, never seems to have much effect thank goodness :)
Lunch tin of tuna and salad
Tea Bolognese and twice cooked linguine , just waiting to see what it does to BS, only a small portion but it was lovely :)
 
97% pork sausage coffee with double cream, brecky
avocado rocket cherry tomatoes spring onion small pepperoni stick small drizzle virgin olive oil, lunch
homemade bacon spring onion quiche made with cream, Tea
small portion rhubarb sweetened with splenda tablet small portion double cream

Can safely say that, for me anyway , the twice cooked pasta didn't work , 9.2 shock horror !
