But yeah I did eat them, lovely too, and I didn't use them, the wife did, I can't cook for ****, pot noodle is about my limit (boy I miss those) :)

Lunch cold chicken stir fry veg, bit of curry sauce
Dinner chicken , chorizo, chickpea stew, green beans and broccoli ; yogurt and straws if hungry

More what I resisted- a Greggs iced finger, the office was in shock at the carbs 53, I could have a big bar of Cadburys for that , so had 4 squares of dark chocolate tonight instead :)

A brilliant food day today. Very pleased.

I made @Indy51 's crust less quiche last night. Tescos had Parma ham on special this week. So I used the wafer thin slivers instead of bacon, asparagus, spinach, cherry toms, yellow pepper, spring onion, eggs, double cream and grated cheddar. Should do 4 portions. I forgot the goats cheese!

Delicious. And there are plenty of ingredients for another one.

Ate at 7.30, didn't get peckish til 1pm.

BG was 6.6 before brekkie, 5.8 at 10 am and 5.6 before lunch.

Definitely a keeper.

Lunch was hummus and veg soup.
Dinner chicken and zero noodles with mange touts stirred with cream cheese.

Breakfast: cheesy omelette

Lunch: Greek yogurt, blueberries, hazelnuts, cinnamon. Creamy decaf.

Dinner: 2 quorn cheeseburgers with jalapeños and tomato on lc roll

Snack: nut ball

crustless quiche? where is that recipe. I miss my quiche.

I'm sorry, I can't remember which thread it was. Maybe @Indy51 will come by and correct me, if memory fails.

She uses a wide Pyrex flan dish.
Lines it with bacon (I used ham)
Then layers spinach, asparagus, halved cherry toms, mushrooms, er... whatever you like + goats cheese.
Then beats 12 eggs and... ?... (I used cream)
Spinkles cheese on top
Bakes @150 degrees for an hour or so
Allow to cool, then remove from dish and drain on wire tray (the veg release a lot of water, and your quiche will be soggy unless you do this.
Refrigerate.
Serves 8

I used a 9 inch square silicon baking dish, and 9 eggs (planned on 6 but added more to raise the level higher), but next time I will use more veg and Stick to 6 eggs.

I make something similar ..
Line a quiche flan dish with wafer thin smoked ham slices ( cut in half and fill all the gaps, letting them come up the side of dish) - aldi's Bavarian ham works well for this.
Fry a medium red onion till softened and slightly browned along with some sliced mushrooms .pop on top of ham.
Mix together medium pot cottage cheese, 2 or 3 eggs, black pepper and lots of grated cheese. Pour over onion mixture. Top with sliced tomato and a sprinkle of cheese. Bake in oven till firm to touch and browning on top. I like it warm with salad and it's ok cold for breakfast with some bacon.
