What have you eaten today?

Cheesecake....nom...I think I just made too few balls (24 big uns instead of 30 normal ones lol)

@AlexandraMarnie89 butternut squash chips are just amazing. Used to eat them on slimming world. Your meals are lovely.
 
Thanks :) first time I've tried them today to be honest! First week of PROPERLY doing low carb and struggling to find things to eat!
You will find plenty of delicious, low carb, vegetarian meals about these parts so no worries :)

I have lots of bean salad left so will probably go Mexican-y tonight. It contains jalapeños, mint and lime. Pulses are quite high carb, but the glucose gods have been kind to me so far when I have eaten them :D

Ahhhh no pulses for me at the moment unfortunately - have another 12kg to lose to be back to my usual 60kg and if I eat them I have to take more insulin which doesn't help with losing weight :(

I'm at work tonight so have to cook dinner now to hear up, anyone know if cauliflower rice reheats ok?
 
2 grilled bacon rashers with grilled tomatoes and red pepper a poached egg and one small slice of ganary bread toasted

I can't see why not. Should reheat fine. The only cauli rice I eat these says is the coconut lime one and it is fine reheated...or eaten cold.
 
Today's menu is this;

Two bacon rashers, scrambled egg, coffee.

Nut ball and coffee.

Pesto chicken salad and veg.

Pastrami and cream cheese salad.

Maybe strawberries, cream and linseed.

Buckets of water!

Diagnosed prediabetic Easter 2014. Just left to get on with it, no guidance or help from GP. Every day I'm learning something new.
 
Breakfast- bacon & scrambled egg
Snack- total yoghurt & 2 cups decaf coffee with almond milk
Lunch- 2 venison burgers & 1 tomato
Tea will probably be turkey stir fry

Yesterday had:

Sausage and courgette omelette.

Roast beef salad with coleslaw. A sugar free ice pop. Some cashews and peanuts.

Chicken kebab (no pitta), loads of salad, chips and garlic mayo, coleslaw. Mowed lawn and walked very briskly to the van, so chips allowed!:angelic:

Drinks - lots of tea and a very large glass of wine later :joyful:
 
Breakfast - scrambled eggs with double cream, chilli, avocado and mushrooms - 16g carb

Lunch - 165g lidl Greek yoghurt, 50g strawberries and 25g mixed nuts 9.1g carb

Tea - Thai green curry (quorn) with cauliflower rice - 19g carb

44g carb total today
 
2 black farmers sausages, 1 bacon (ran out) fried egg and mushrooms

Som tam

Small lump of cheese

Steak, flat mushroom and peas

Nut ball (except they are square)

Not tasted them yet, only just made and in the fridge, but at least they are not so cat/dog turd shaped

lunch: 2 sausages on mashed butternut squash (130g) on a lettuce leaf! Have to be inventive, struggle sometimes with what to eat as hate cheese and nuts in any form!!
Dinner: salmon fillet, spiced cauliflower rice, curried (half tin of pataks madras sauce) veg (carrot, onion, pepper, broc, cauli, spinach), shredded lettuce - yummy. Followed by choc orange jelly (recipe from one of these forums :D.
bg prebreakfast 5.9, 2 hr post 6.0.
bg prelunch 5.6, 2 hr post 5.3.
bg predinner 5.3, 2 hr post Tba

Brekkie: Easiyo mango stevia yog with 2 teasp ground almonds and a coffee with cream
Lunch: prawn cocktail salad, homemade mayo
Dinner: moussaka middle (mince, aubergine, tomato, courgette and garlic) and sweet potato oven chips - a special request by Mr B. They were gorgeous.
And my BG, 2hrs later, is 9.5

And you know, my doctor hasn't diagnosed me as diabetic, because he says my blood test results are 'inconclusive'.

How inconclusive is 9.5 after about 20 sweet bl**dy potato chips, ***?

Sorry I may not know your full story as relatively new here but perhaps a new visit to the dr for a blood test is needed? x

I blame the wife, she made me them and I did express my concerns at

A) She forgot agave syrup and bought maple syrup instead, then forgot to put any in.

B) That they are not ball or turd shaped.

The response was if you don't like it, make them yourself next time.

But just had 1 piece after my dinner, OMG ***, 1 went to 2, and 2 went to 3.
I could eat the whole lot in one sitting easily!! Absolutely delicious and as mentioned previously, very moorish. I may have to succumb to 1 more at half time in the footy.

Will test in 2 hrs and see, although after a bad few days I have been constantly high post meal of late.
Thank you very much for recipe, hopefully a daily staple from now on!!!
