@poshtotty that jelly idea sound awesome ... could you share the 'recipe'? Do you melt jelly first, cool it then whip in double cream. Think I need to try it!
Yes, of course! Using one single sachet of sugar-free jelly, add half a pint of boiling water, (don't add any cold water) While liquid is still warm, add equal amount (half pint) of double cream. Whisk together well until airy and light, pour into sundae glasses and leave to set in fridge for 2-3 hours. Top with fresh strawberries and flaked almonds.

I wasn't a big fan of the Oopsie roll initially - I found them a little flaccid and unappetising. But I have found that if I add just 30g of soy flour to the mixture they have a better texture - more bread-like and satisfying - and become a much more palatable alternative to bread, at just 119 calories and 2.6g carbs per roll.B: Scrambled egg, Oopsie roll
L: Corned beef, tomato, Oopsie roll; raspberries & cream
D (will be): Chicken & vegetables topped with celeriac & cauliflower mash with cheese
S: Pink grapefruit
Carbs: 38.3
