What have you eaten today? (Low carb forum)

B - Green smoothie as before
Snack - fresh ground coffee with double cream
L - 1/2 Lidl buttered roll with Brie, lettuce and cucumber
D - Waitrose Thai Green chicken fresh soup (was supposed to go for a carvery roast but bailed in favour of log fire, TV and warming bowl of soup :happy:)
Strawberry sugar-free jelly whipped into double cream to make a mousse, topped with fresh strawberries
 
Today I had:

B: Nothing
L: 50g tomatoes, 50g cucumber, 30g pepper, 50g Tesco soft cheese, 70g corned beef
D: Bolognese - 300g minced beef with 50g Napolina chopped tomatoes
S: 1 apple

While some of the weights are guessed the figures are based on these guesses.

Cals 1,036 , 61g carbs, sugars 27.6g, 19g fibre, 18g saturated fat. It seems that half my carbs and most of the sugar was thanks to my apple so I am a little unworried by the high sugars.

Sunday
B 1 egg / Mushrooms fried in butter / 1 slice of weightwatchers small bread
L 4 Jacobs wholegrain with Rosemary crackers / with low fat cottage cheese and pineapple./ 1 coconut and vanilla low fat greek yogurt
D Chicken and salad with egg / 1 piece of 90% choc
 
B - Turkey and celery sticks (couldn't eat Sardines before the dentist)
L- Chicken and cabbage
D - Chicken and boiled cabbage.
S - Pork scratching's and sugar free jelly.

Last week I went back to full on low carb (with a target of ~ 30 to 40 grams per day) after over 1 year of high carbing only in the evenings. It has been an eventful transition, I've had at least 1 hypo everyday as I adjust my insulin ratio's. I don't remember how I managed to survive ~ 3 years of strict low carbing in the past :-(

@poshtotty that jelly idea sound awesome ... could you share the 'recipe'? Do you melt jelly first, cool it then whip in double cream. Think I need to try it!

Yes, of course! Using one single sachet of sugar-free jelly, add half a pint of boiling water, (don't add any cold water) While liquid is still warm, add equal amount (half pint) of double cream. Whisk together well until airy and light, pour into sundae glasses and leave to set in fridge for 2-3 hours. Top with fresh strawberries and flaked almonds.
 
Today so far:

B: 60g salmon with 130g mushrooms fried in sunflower oil
Elevenses: 75g feta cheese with 50g cucumber, 50g tomatoes
L: Bolognese from yesterday - 300g mince with 40g napolina chopped tomatoes
D: Chicken curry (homemade)

Not quite sure what is going in the curry (other than chicken) but have calculated 1,400 cals at a whoppingly low 12.5g carbs so far. However, I know from yesterday that 1 apple can change that! I have some strawberries so I expect they will up things a bit.

Sad to hear of the pancreatitus. Happy to hear that you have conquered demon smoke! A lot of flavor also comes from lemon and lime and mint and range flower water and dill and other things that have no fat at all. Mushroom add flavor

Herb teas like chamomile and hibiscus and seem to need nothing to make them drinkable. Have you ever tasted a thin slice of kiwi complete with its skin? Just a few pomegranate seeds and spit out the hard part? Sometimes very tiny portions of thing bring taste.

Bacon on a rack in a slow oven can drain off all its fat if you turn it over and pat it dry, yet one tiny piece of a peice

I wasn't a big fan of the Oopsie roll initially - I found them a little flaccid and unappetising. But I have found that if I add just 30g of soy flour to the mixture they have a better texture - more bread-like and satisfying - and become a much more palatable alternative to bread, at just 119 calories and 2.6g carbs per roll.
 
A strange couple of days. I've not really eaten much at all. I've taken to drinking Oxo - I used to love it as a kid and someone suggested drinking broth as a way of getting electrolytes (yes I know, Oxo isn't fresh broth but hey ho). I'm having 2 or 3 of those per day at the moment, although I guess the novelty will wear off soon enough.

Sunday
Kids order Pizza Hut - I scrape the toppings off a slice. I also eat a pile of their BBQ chicken wings.
Some red wine

Monday
Lunch - 1 babybel, 1 fridge raiders
Dinner - Small rump steak with cheddar & mustard cream sauce
Peroni.

What I've eaten in the last two days would have been a single big dinner a year ago!!

L: met a friend and had cream tea instead of lunch. 1 scone with clotted cream, no jam
D: courgetti with chorizo, sun dried tomato, roasted pepper, olives, pesto. Just missing a bit of feta cheese.
