What have you eaten today? (Low carb forum)

Nice one. I am beginning to feel the same. The freezer is full at the moment, so I am in the rare situation of eating a weekday breakfast. I LOVE crackslaw and can't bear to throw it out.

Lunch will be chicken, feta and pesto with a green salad.
Dinner with be chicken with leek and herb butter.

Next day? I may not want to eat at all! :D

2 good chicken dishes there and you still have the cheese stuffed chicken breast to come in week 2 which, if you like cheese, is awesome. Even hubby was taken with that one.

After yesterday's interlude started off with
B. 2 Sainsburys gluten free pork chipolatas, 2 crispy bacon rashers, 2 scrambled eggs with parsley, 2 cherry tomatoes answer a chestnut mushroom. Black coffee with a dash of cream.
L. Nothing was running DIL to hospital for ankle brace fittings.
D. Diet Doctor mushroom and cheese frittata with aubergine chips, curried cauliflower, baby sprouts.
Still going on with the bedtime walnuts but yesterday probably knocked me of track a little.

Yesterday:

B: Raw Apple & Ground Flax Muesli& ½ Peach & Diluted Cream
Creamy Coffee
L: Roasted Red Pepper Soup
Cucumber Sticks w/Smoked Salmon& Avocado
Creamy Coffee
S: Tamari Almonds, Macadamia Nuts & Green Olives
D: Atlantic Cod Fillet w/Olive Butter
Bacon Topped Cauliflower, Zuchinni, Cheese & Leek Casserole

Succumbed to a slice of thick white toast with beans and turkey bacon. Within an hour bg was 7.8 - freaked - but another hour later was 5.9, then 5.3 before bed and 4.6 this morning. Goodbye toast.

Breakfast: Diet Doctor's Coconut porridge. Surprisingly nice - reminded me of creamy semolina pudding.

Lunch: Avocado with a splash of lime

Dinner: Diet Doctor's mushroom and cheese frittata - I'm going to follow @maglil55 idea and put some smoked bacon in it - having it with salad and a pico de gallo tomato salad

If you really like your toast you might like to try ½ a lidl high protein roll before you finally give it up

Monday

L: Tuna Mayo and cheese
D: Prawn stir fry konjac noodles

Then ate a bag of pistachios, my thumbs are sore!

I've heard a lot of people mention the Lidl roll. Shall have to give it a go as I love toast.

Hello
B. Red berries with Greek yoghurt

L. Melted Camambert with pecan nuts

No swimming today

D. Piri Piri salmon with asparagus tips. 3 strawberries with yoghurt.

Pomegranate pot tonight:)

A lot of chicken today - unintentionally.

Breakfast - mini frittata made with eggs, cream, pancetta, cheese and a small bit of onion.

Lunch - ended up in Nando's. My boss had booked a cafe for a lunch meeting, but when we got there, there were no low carb options. She was kind enough to move elsewhere and Nando's was handy. Plain quarter chicken with coleslaw and mixed leaf salad.

Dinner - more chicken (already taken out of freezer), with roasted courgette, red pepper and onion (small onion to avoid spikes - I love them too much to give up).

L: Winter salad and cheese, 3 sq of 81% Choc
D: Bolognese and courgetti parmesan shavings and some wine

I'm having a change of menu tonight (due to having been given half a dozen cauliflowers). Its now going to be DD's Chicken Garam Masala - with ghee fried cauliflower rice and DD's Low Carb Naan Breads.

I'm going to whizz the rest of the cauliflowers in to cauliflower rice, bag it and freeze it raw. I hope it works.
