What have you eaten today? (Low carb forum)

Yesterday

B. Chia, flaxseed and coconut milk porridge
L. 1 babybel melted on top of 1/2 an avocado
D. Tiny portion of Creamy cauliflower cheese as wasn't very hungry but had already injected insulin.
 
Today:

Breakfast: Low carb chia, flaxseed, linseed and unsweetened coconut milk porridge with a half teaspoon of cinnamon

Lunch: Avocado with a squeeze of lime juice

Dinner: Chicken breast with herb butter and butter fried spinach

Snack: Sugar free jelly
 
New here and newly diagnosed so would appreciate anyone pointing out any food errors. This is what I had yesterday:

Breakfast: Slice of Melon and Italian Herb Ham
Mid-Morning Snack: Tangerine
Lunch: Oak Smoked Salmon, Watercress, Baby Spinach, Tomato & Spring Onion, dash of low-fat dressing
Main Meal: Gammon Steak (grilled), 1 Fried Egg (fried in low-cal sunflower spray), and small tin of reduced sugar beans.

Does anyone know if the cholesterol in eggs are good or bad cholesterol?

Does anyone know if the cholesterol in eggs are good or bad cholesterol?
As we do not absorb it, it is irrelevant what sort it is.you need to have full fat dressings and you might find that the beans aren't a good idea - the diabetes adviser I have thinks they are low carb - but they would have my blood glucose levels rising into the teens. Fruits high in sugar can cause spikes too.
 
The walnut experiment continues. Went to bed on 6.7 having consumed the 2 walnuts and got up to a 6.3. Didn't have time for immediate breakfast so sure enough it rose and hit 7.4 pre breakfast (another improvement on yesterday). The normal after this is you get a slight rise and it starts to turn but usually is around 2.15/2.30 post breakfast for significant falls. Today there was the slight rise to 7.6 but by 90 mins it was 6.9 and 2 hrs 6.1!
B. 2 scrambled eggs , 2 rashers crispy streaky bacon and a chicken sausage (No 2 grandson wanted sausages) Black tea
L. Ate out Chicken breast, mixed leaves, 3 cherry tomatoes, boiled egg and a load of cucumber which No 2 grandson was munching through. Did have a cappuccino which pushed me to 7.1 but 90 mins I was back to 6.6.
D. The remains of the chicken feta dish I should have had at lunchtime but with the other 1/2 avocado , some lettuce, 3 cherry tomatoes and Helmanns (had Helmanns at lunch too)
Will go with the walnuts again tonight.
 
The Diet Doctor Challenge continues (as changed a bit by me)

Breakfast: China, flaxseed, linseed and coconut milk 'porridge' (which is okay once you get over the texture)

Lunch: Whole avocado with a squeeze of lime

Dinner: Fat Head Pizza with pepperoni and olives - looking forward to this I love Fat Head Pizza more than normal bread crust pizza

Snack: Sugar free jelly

Breakfast: Slice of Melon and 1 Piece of Wholemeal Toast with Flora Pro-Activ
Lunch: Oak Smoked Salmon, Watercress, Baby Spinach, Tomato & Spring Onion, dash of low-fat dressing
Tea: 2 naked Turkey Burgers and Carrots
Snacks: 1 Plum / 2 Jacobs Crackers with Flora Pro-Activ

Today:

Breakfast: 4 Slices Turkey Bacon and Pineapple
 
Thanks @Resurgam - it's an absolute minefield. Picking up a Blood Glucose Meter today so I'll see how I react to beans.
My meter confirmed that what stopped weightloss in the past also raised blood glucose, so it was reasuring to have all the decades of doing Atkins as a guide to eating with diabetes. I am just going to walk down to the hospital to have my first bloodtest after diagnosis - I just checked my BG and it is 6.6 - it was 17.1 when I was first checked. Eat to your meter and if you can keep your BG low it should gradually drift lower.
 
Went off piste yesterday just to see if anything had changed
L: Salad
D: Used the leftover goose to knock up a stir fry, no sauces used but did use noodles. Now the Lidl pack claims 35g per 100, so I gave it a whirl 8.3 after 1 hour (so-so) and 8.1 after 2 hours.
Shopping this morning, picked up a pack of waitrose essential noodles 70g per 100 :rolleyes:
So I'm thinking Lidl told me a fib as I eat roast potato and parsnips on a sunday and am under 6 by 2 hrs.

The walnut experiment continues but this has been a weird weird day. After yesterday's overnight fall this morning was a 0.3 rise. Unfortunately the delay in breakfast heralded the usual delayed DP rise and up it went to 8.4 which was worse than yesterday. 2 hrs post breakfast was back at 6.5 and amazingly the drop started 20 mins post food.
B. Same as yesterday. 2 scrambled eggs, 1 chicken sausage and 2 bits of crispy bacon. Black Tea
L. (After 2 hrs Aqua Fit and water running) M&S cracked pepper calamari and 2 cheese minis - 1 babybel and 1 12g cheddar. (Very very low carb yet it sent my BG from 6.1 to 8.2 at the 2 hrs post food mark)
D. Carbs were only at 2g for the day and fats were a bit low so
Diet Doctor Chilli salmon recipe but with trout. A whole bag of spinach since M&S had fresh stuff. 3 asparagus Spears both steamed and buttered with 1oz butter. 1/2 bowl M&S salad bowl with egg and bacon bits with Helmanns.
Got my carb intake to a whopping 9g for the day but the fats are up . I'm going to stick with the evening walnuts and try for an earlier breakfast to arrest the dawn rise. Just hoping I'm not getting an evening phenomenon as well!
Feeling pretty cheesed off.

Was a big eating day today - too many carbs yesterday?

B: Fried Bratwurst, bacon, egg, mushrooms
L: Winter Salad - after hour in Gym
D: Venison casserole, with leek, shallots, carrot. mushrooms, red currant jelly and port accompanied by spinach and coli mash
 
B Fried bacon, mushrooms, tomato, 50g black pudding, scrambled eggs
L Half avocado with cheese, poached egg, dollop of mayo
D Yellowfin tuna with green veg, leek and celeriac, all steamed, and soy/ginger/garlic/spring onion sauce
