What have you eaten today? (Low carb forum)

Breakfast: minute mug cake, 40g defrosted raspberries and some full fat Greek yoghurt
Lunch: Half Lidl protein roll toasted with fried egg
Dinner: Fathead pizza and green salad
 
a VERY low carb day yesterday, except for those chocolates... ;)

B: coffeesubstitute and cream
L: chicken, deviled mushrooms and coleslaw
D: two pork shoulder steaks and butter (no veg)

oh, and about 5 Lindt chocs spread through the day to avoid spiking. Delish.

Well another decent day so far. Bed on 7.5 FBG 8.3 and hit 9 pre breakfast. 90 mins later down to 7.2 and settled around 6.4.
B. 1 gluten freepork chipolato, 2 rashers crispy bacon, 2 chestnut mushrooms, 3 Vittoria tomatoes and a fried egg.
L 2 walnuts and a bit Murcia alvino cheese.
D. Will be liver , onions and cauliflower mash.
Will resist the 90% Lindt and may have a jelly instead.

I am going to have to try camembert with walnuts, it sounds an unlikely partnership but pre diabetes I used to love rich fruit cake and Wensleydale together. Do you me it the cheese?
 
@Chook yes I melt the cheese. 20 seconds in microwave and then I dip the walnuts in. Yes I thought of the pomegranate pot as I pressed post reply. I would imagine I won't be able to resist.:)
 
Yesterday:

Bacon omelette mushrooms
Smoked salmon, mushrooms, avocado, olives, mayo
Bolognaise sauce, broccoletti, leeks and cream
Pumpkin seeds

Today:
Bacon omelette mushrooms
Same as yesterday
Keema mutta (going to see if this family favourite causes a spike with the chopped tomatoes and peas!) cauli rice
 
not had breakfast yet but am inspired by what i read here to do the right thing! - breakfast, planning to have eggs smoked salmon - coffee with tichy milk - lunch, roast chicken with avocado, some other veg

must try this almond cake thing - who has a recipe that is suitable for low carb diet.
also spelt bread - will look this up.

I know. It was a weird evening. Busy, lots to do, Mr B was out, and I got distracted at the stage when I should have been starting the veg off. In the end, it was just simpler to eat more meat. lol. And butter. Mustn't forget the butter!

Yesterday was better:
B: coffeesubstitute and cream
L: none except for the odd scattered Lindt choc
D: massive portion of DietDoc blue cheese crackslaw and steamed spring greens. I kept the meat, cheese and cream ingredients as per the recipe, and then increased the cabbage and greens quantities until I made up for the veg deficit of yesterday. :couchpotato:

By the way, this is a quick poll.
- do you think this little guy :couchpotato: is proudly:
i) wearing a white medal and ribbon over a red sports shirt (probably Olympic lycra)? or
ii) wearing a pair of white braces over a red t shirt? or
iii) hauling up his red and white Nylon Y Fronts?

You can guess which option I go for, can't you?

Welcome! Just watch the insulin calculations. Low carbing can cause lows if you don't compensate by reducing the doses.

Bet you knew that already, but I just had to pipe up. :D

Here's a recipe for the almond mug cake.

There are loads of recipes on the net (and this forum) for one minute mug cakes but this is mine:

Pick a straight sided half pint mug, put about a tablespoon of butter in it them wipe round with kitchen towel (good coating of butter) then....

Put one quarter American cup measure of ground almonds in to the mug along with half tsp baking powder, the sweetener equivalent to one level tsp sugar (I use half tsp granulated Splenda), a tsp almond extract/essence, mix together then mix in a large egg- beat with a tiny whisk until smooth.

Put in microwave on full for one minute - then let it stand for half a minute. It rises a lot then sinks back on itself - its supposed to do that. Then eat. It really is that simple.

I had mine with some defrosted raspberry 'jam' (gently defrost raspberries in micowave and add sweetener) and some full fat greek yoghurt.

I think it took me less than five minutes from finding the recipe to eating it.
 
Breakfast: Boiled egg and buttered Lidl Protein Roll soldiers

Lunch: (probably: sardines on the other half of Lidl roll and lots off salad

Dinner: Wednesday fry up (although it's more of a grill up) Sausages, bacon, eggs (fried), mushrooms fried in butter, grilled tomato. This is Mr C's favourite dinner.

Tichy milk? ( although I thought it said itchy milk at first )

D. Trout with a ginger,soy and chilli marinade with courgette and onion fried. Strawberries and yoghurt.

I'm really, really full so may not have pomegranate tonight.
