What have you eaten today? (Low carb forum)

B. Raspberries and cream

6 hours gardening today

L. Camambert and walnuts

D. Roast chicken, carrots, onions, sprouts and gravy. Strawberries and cream
Today is definitely a pomegranate day:)
 
Have you tried frozen raspberries with cream? Turns in to a sort of raspberry icecream.... yum. Definitely a once a week treat though.

I do use frozen raspberries but let them thaw out before eating - your suggestion sounds great so I'll give that a go. Have been getting an occasional ice cream fix with Oppo chocolate and hazelnut flavour.
 
A very unintentional fast today as containing a hyper mini birthday boy took precedence over all things edible until a dàrkened room and a gallon of prosecco beckoned (well ok a mini bottle but you get my drift)

B & L consisted of water , water and more water. Managed to get him to stay still long enough to get his haircut. Feeding time brought more peace as did an ice Lolly.
After a day of sweltering heat and Monster Machines/Trucks picked up No 1 from after school but then had the two of them in stereo while Mum and dad attended No 2 's parent meeting at Nursery. 7 pm and finally home to eat something!
D. Rib eye, salad of lettuce, 2 san manzano tomatoes, 1/2 small avocado, celeriac chips and helmanns.
Small bottle of prosecco (No darkened room)
3 strawberries with a scoop of Alpro soya coconut 'ice cream'

My Fitness Pal doesn't like me today.....thinks I'm trying to be anorexic - fat chance of that! A darkened room now beckons.
 
Breakfast: Bacon and mushroom Lidl roll - okay, not the same as a bacon sarnie made with Morrison's tiger loaf but still very nice with a Tassimo Costa Americano

Lunch: A few walnuts and brazil nuts and a couple of squares of 90% (nice and very easy little lunch this and keeps me happy for six hours)

Dinner: (rest of the) Halloumi fried in olive oil, garlicy aubergine 'chips' and a green salad

Lots of black decaff coffee and flavoured water

If Mr C gets home early enough we will be opening a bottle of Prosecco
 
@Chook I've not heard of aubergine chips. Sounds interesting. Do you have a preferred method to cook these?

Yesterday Mr Chook tried making them like normal chips - he cut them in to chip shapes and put about an inch of garlic flavoured olive oil in a pan.... nice idea but they sort of mushed up and turned in to garlic flavoured sludge - which was actually quite nice but not quite what we were after.

This time I'm trying out a new-to-me recipe from the DD website but subbing garlic granules instead of the cayenne pepper. Its this recipe https://www.dietdoctor.com/recipes/eggplant-fries

Having said all this, if it remains this hot I might not bother - depends on the temperature in the kitchen about the time I need to start cooking. My dinner plan could turn in to just smoked ham and goats cheese salad. :)

I'm a great lover of the veggie chips to replace the potato variety. You can make them with aubergine, courgette or celeriac. Method varies from veg to veg. I used to make them pre diagnosis as well. Because courgette tends to be wet and aubergine absorbs like mad the best way to do them and get them crispy was to deep fry in batter. Trouble is batter became a no no. I've tried substitutes such as dipping in beaten egg then a mix of ground pork scratchings and almond flour which is reasonably ok. I might give almond flour as a batter a go too.
Another option with the aubergine is to cut into chips, oil them with olive oil and dust in paprika and garlic salt. Bung in a hot oven on a baking tray. They only take about 10 mins. Not crispy but they taste great.
Celeriac chips are best done in the oven. I find cutting slices from the bottom then trimming the edges before cutting into chips. Celeriac chips are best plunged into boiling water, boiled for about 4 mins, dried then same as the aubergine i.e. coat in oil, garlic salt and paprika and bung in a hot oven.

Lunch - Friday Nando's visit; 5 plain wings with salad

Dinner - naked burger with bacon and cheese with side salad @ Giraffe in terminal 5. Ditched the dressing as my finger test revealed it to be very sweet

The sunny climes of Glasgow await me.
 
@Goonergal at giraffe I changed my chips for a salad, and when it came out was a nice big pile of black lentils. They've got more carbs than chips! I scraped them if my plate

Cheese omelette and mushrooms

Cheese and pecans (got called into work as a last minute substitute and needed something I could eat at my desk while reading paperwork- my Fitbit thinks I've been asleep most of the day!)

Fathead pepperoni pizza and salad

Glass of red and possible Lidl roll for supper
 
Garlicy aubergine chips

I had some spare time on my hands so I did a bit of an experiment. I turned the oven up to max then divided a cut up * aubergine in to four.

Two lots I coated with an almond and egg mixture (as in the DD recipe) then added garlic powder and smoked paprika to one lot and cayenne pepper to the other lot.

The uncoated half I divided in to two lots and turned in garlic olive oil - then to one lot I added smoked paprika and garlic powder and the other I just did plain (just in the garlic olive oil).

Then baked them all for 10 minutes (tested and didn't feel cooked) so then baked for another 10 minutes. After 20 mins they were all nicely slightly toasted looking.

By far the nicest were the uncoated ones that were just turned over in the flavoured oil and sprinkled with smoked paprika and garlic powder. I didn't at all like either sort that were coated in the ground almond and egg - they were just .... wrong.... somehow. Even the dogs didn't much like them (and my dogs being mostly labradors will eat just about anything).

The second best were the ones that were just turned over in the garlic oil before baking but they were a bit bland and I needed to add salt before eating.

Yes, I know, I have too much time on my hands. :)

Well, there was also something carby in the burger as I went up to 7.0 after eating it - very rarely get to 7 these days. I did have to as for a green salad rather than a 'rainbow' salad as the latter was packed with all sorts of carbs.

That's right, a rainbow salad. That's the one with the lentils. Don't eat that.

I'll make sure to ask for the green salad next time.
 
Just wrapped my insides around a cheese and tomato, diced capsicum omelette for breakfast. :D

Had a look at the left over crack slaw from last night and then bagged it up for my mates dog to eat, not going to try that stuff again.

I don't like crack slaw either. Something about the texture was wrong for me, i think. Your omelette sounds yummy. :)
