What was your fasting blood glucose? (with some chat)

6.9 this morning, after last nights curry.A visit from lovely occupational therapy lady yesterday for an assessment of our situation. They will loan us a ramp for getting the wheelchair out.She also gave us details of a swivel seat to put in the car, which we have been able to buy online.Feeling more optimistic today about getting through the next four weeks.:):)

@zigg
Good morning all.

@Granny_grump_ Good to hear that the chocolate seems to do the trick. How is your leg coming along? Also, thank you for your kind words. I thought I might be getting off easy with this cold, but unfortunately it kept getting worse. This morning, I seem to feel better though. Good thing that being sick doesn't seem to be affecting my blood sugar levels -- maybe due to having an early dinner around 6 p.m. or one or two glasses of red wine before going to bed, so that I can sleep. Unfortunately, Vick's Nyquil is out now that I am diabetic.

@Glenmac -- Glad to hear that your leg is healing well and you are bit more mobile now. Take care.

Blood sugars were 4.7 this morning.
ziggy_w Fingers crossed your on the mend, has to my leg a little unsure the nurse says it's looking cleaner in the infected area, and the doctor is saying the graft has shrunk away around the infected area and if it isn't showing more improvement in next two weeks of regular dressings he is going to refer me back to hospital. So I'm in a wait and see stage but if I go bck to consultant I'm not sure what if anything can be done now? Will just have to wait! K

@Granny_grump_ oops sorry K, meant to post this last night :sorry:

Mug cake recipe base

1.5tbsp coconut flour
1.5 tbsp mix of other dry ingredients (I use 1 tbsp ground flax, 0.5 tbsp ground almonds)
0.5 tsp of baking powder
pinch of salt

1 large egg
1.5 tbsp full fat yoghurt (or milk/almond milk or similar)
0.5 tsp vanilla extract.

sweetener of choice to taste (I use the equivalent of about 3-4 tsp of sugar for this quantity but I don't like things too sweet)

stir dry ingredients in a bowl to make sure no lumps.
Beat wet ingredients together and then beat in sweetener.
Stir in dry ingredients, mix thoroughly – add more liquid if needed.

Mix will look quit sloppy to start with (think thick pancake batter) but will thicken quite quickly because of the coconut flour (think porridge).
put into moulds and put in microwave on full power for between 1min 30 secs and 1 min 45 secs. They are done when they start to come away from the side and look very slightly damp in the middle. Takes much longer to type than to do – I can have them on the rack cooling in about 5-6 mins.

This quantity makes 3 small cakes for me (about 2.5in square), I have used silicon cupcake moulds but now use a silicon mould which makes square cakes. If using silicon moulds remove to a rack quite quickly or they will get a bit damp on the outside. Handle carefully until cooled. Keep in a box in the fridge.

Very customisable -
Chocolate – replace some of the ground almonds with good cocoa power
Mocha – use cocoa as above but add a bit of strong coffee to replace part of the milk
lemon or orange – add grated zest plus a bit of flavouring.
Caramel - I use a flavouring for this, add it in addition to the vanilla.
(I got my flavourings from Home Bargains – not low carb but then you’re not using very much to each cake.)

Savoury – leave out the vanilla and sweetener, add in a touch more salt plus some herbs or some grated cheese.

You could add some melted butter or coconut oil if you want a richer cake

Can be zapped in the microwave for a few seconds and served hot with some full fat greek yoghurt as a pudding. Or split and buttered (my own preferred ;)) or with some cream cheese (flavoured and used as a topping), with melted chocolate in the mix or drizzled over the top if you’re feeling fancy – you get the idea.

Most recent version I made (chocolate made with yoghurt and cocoa powder) were about 2.6-2.7 g of carb each I think according to my spreadsheet.

Evidence for the prosecution - last remaining one of the batch

@geeful Your a star I've just got my son to print it off for me and I will try it out when I find where to buy coconut flour and ground flax never used these ingredients before. But much appreciated, between Ziggys chocolate ideas and these mug cakes I should be fine, your a star K

Good morning everyone
Finally did BG at 6.45 am 6.0
@ziggy_w I tried having some of the dark chocolate this is Green&Blacks 12 miniature bars 15g each and 6.7grams of carbs per bar it seems to have stopped the craving so will keep trying this, but I will look out for Lindt chocolate 85% and above dark chocolate and give that a try has well. ThankYou
Hope your feeling a little better than you have recently, take care and keep warm, it's absolutely freezing here high winds and trying to snow! K

Not sure if anyone has any problem with 90% dark chocolate, because I get a terrible headaches after consuming just a tiny square. I presume I am allergic to it. Such a shame because I love dark chocolates.

I’m not a huge chocolate person ( famous last words will probably come back and hit me tomorrow) but Aldi do small bars of plain chocolate - I can’t comment on the quality or the price but I just know Em do them

Morning all. 5.8 today so experiment classed epic failure. 2 days of 1 meal a day (OMAD) and yesterday low carb feast 3000 calories 24 gms carb. May have implemented wrongly so might give it one more try but able to get much better results without that fuss.

Edit:
Looking back through bg records and food diary I may be blaming the wrong culprit. My wife and I both feel less than 100% today and I did no exercise yesterday. Other days with 1 meal followed by slight refeeding have been good. Will repeat experiment again when dorys are hunkier.
