What have you eaten today? (Low carb forum)

On rediscovering things I haven't eaten for a while ... mayonnaise! I've been going for the low fat alternatives for a long time but they just don't cut it. I think I'll start making my own again! Has anyone else rediscovered anything they'd previously been avoiding before LCHF?
I can’t say there is anything in my can eat list that I used to avoid but there are things I now eat that pre low carb I didn’t eat or didn’t even like but now are firm favourites. Feta and halloumi cheese, celeriac, cream cheese, fat head dough all new to me but wouldn’t give up now without a fight.
 
Hi all, can I join you? I'm type 2, had really good success with LC before but massively fell off the wagon after my daughter was born just over a year ago. HbA1c has gone up from early 30's to early 40's so need to nip it in the bud and get back on track before it gets any worse! Hoping that posting here will give me some accountability while I get back into it. Yesterday's menu

B: Couple spoons each of milled linseed, chia seeds and oatbran with greek yogurt and hand full of raspberries
L: Chicken, mixed leaves, drizzle olive oil
Mid-afternoon: couple of chunks of cheese, mini-peperami
D: Bacon, mushroom, onion and cheese omelette, one slice hovis lower carb bread and butter

Breakfast and lunch today have been the same as yesterday, could do with some inspiration for a quick evening meal tonight as have failed to plan and need to go shopping!

Hi all wonderful relaxing day treating my mum to some new clothes- she has taken some of my low carb advice to help prevent further deterioration of her kidneys - after being very anti when I first started - and has lost half a stone round her middle and is down one dress size I felt responsible so treated her! She is thrilled and she is looking better too. She still has small amounts of bread, potatoes @nd a few treats but was very very high carb and low fat and piling on weight before so good balance for her and she’s 87 and seven months so hard to make big changes. Her kidney function is still low but she seems to have stuck at this level at this last test. Dr pleased with her at med appt on Monday morning and her hbaca1 down to 42.
@Debandez at this rate she will be one of the oldest success stories! It’s never too late.
Breakfast bacon egg and mushrooms fried in lard
Lunch at m and s deli counter large seafood platter shared with mum with celebratory glass of prosseco - met up with youngest son - building up to my birthday weekend!
Dinner beef brisket - put in crockpot before left - on bed of buttered cabbage and glass red wine planning a scoop of oppo choc and mint ice cream later.
Remind me I am on a diet? Feels anything but that .........

I knew someone had mentioned it that sparked me off to read about it. @@ziggy_w always had such good ideas. Got to agree with you @Goonergal. I knew @ziggy_w was still about as I'd noticed posts elsewhere.

Everything is fine, just very stressed with work. It will be another two weeks, then I can start enjoying the semester break, and you should see more of me on here.

How's everyone on here?

As to lupin flour -- as far as I know they are some kind of bean. Most of the starch in it can't be digested - so, it is actually very low carb. It tastes good in bread and is way cheaper than almond flour. I use it in DD keto rolls and use about three quarter cups lupin flour and 2 quarter cups almond flour plus, of course, the other ingredients.

You can also buy whole lupin beans, also known as altramuces or tremocos in Spain and Portugal. I use them instead of chick peas to make hummus.

They look great. Are they just chicken with sesame seeds and Parmesan? Look like they’d go very well with a pot of sour cream.
Nope, salt and pepper to taste. 1/3 cup flax seeds, 1/3 cup almond flour, 3 tablespoons sesame seeds and I chose to throw in 2 tablespoons parmesan and some parsley.

That mix was enough for 2 chicken breasts cut into strips.

Beat 1 egg with a little water dip, coat and fry. I used my wok and turned them once. I cannot say it enough - they are amazing!

IP app? That sounds good. I can see I need to do more research.
There's quite a few IP recipe apps. I use the one with red background/white IP on it. There a number of keto IP recipe apps too.
 
I had strawberries and cream the other night after dinner which was basically a bowl of cream with a token gesture of strawberries - daughter said 'is there supposed to be that much cream?' Yes. Yes there is.

The reactions of others are great. A couple of weeks back a new colleague exclaimed as she watched me making my morning tea: ‘you put double cream in your tea?’!!
