What have you eaten today? (Low carb forum)

Oh, Maglil, those days when the normal run of decades is broken. They're heart wrenching. I remember them so well from when my Mum passed away. I'd say to myself "it's only a card", but it was her card. No point telling you it eases with time as you know that, but today that knowledge doesn't help. :(

Yes I do know that. Been through it so often. My Mum passed away just before my birthday but she'd written a card and asked one of the nurses to post it so I'd get it for my birthday. I can't decide what was worse - no card or getting that card 2 days after her funeral. Stuck with me a long time that. I was only 27 when she died - she was 60. I'd expected her to be around a few years longer than than.

Aww bless you, it’s so hard missing people on special occasions isn’t it? This time of year also adds to the pain, I lost my mum on Christmas Eve 15 years ago, she was only 57, it does make you realise how precious life is though.
 
Quiet day today, bit of housework and then a trip to my hairdresser, my partner had to work and tomorrow I’m helping at a works event, not the best of weekends for us :arghh:
Food wise
Coffee with cream then a cheese omelette
Didn’t feel hungry enough to eat lunch so made some salami crisps and had a spoonful of cream cheese
Afternoon treat of a PhD bar and a creamy coffee
D minced steak cooked with mushroom and onion topped with cauliflower and celeriac mash with a sprinkle of cheese
 
Just had some omni noodles (first time ever), tossed in olive oil with chillies, garlic and a splash of soy sauce with prawns. Omg, it was fabulous, very tasty, took me literally 3 minutes. The omni noodles are 8 carbs per portion and they tasted lovely. They are now on my low(ish) carb meal list.

I'm having them tonight too.
 
Still pigging out on meat fish eggs plus an avocado and a slab of pâté every day, my only significant carb intake is smallish quantities of green salad, cauliflower and broccoli and about 6 cherry tomatoes a day
You confused me for a moment. I was wondering what on earth meat fish eggs were. 8 had visions of a kind of scotch egg stuffed with caviar of some kind.
 
11am bacon and Warcraft herb baked eggs.
5pm oomi noodle tuna, cheese and cream melt. Oh yeah.

The noodles (in butter, cream, garlic and cheese), seem to be helping me to hit my fat to protein macros beautifully. :D

I made the mistake today of testing a perfume. The strongest notes seem to be sickly white chocolate and plum. Tooooo much! It doesn’t seem to wash off, either. :(

Well as you know bed was 6.4 FBG 6.7. Stuck to a Tassimo Americano grande with a dash of cream. Slice Tesco high protein bread with 2 scrambled eggs.
L. Nothing - busy with cleaning and shopping. Hubby at the football.
D. Once I got the boys sorted with fuisilli Bolognese I sorted out oomi noodle Bolognese for myself (after they'd had cake of course.

Now off to get the wee one off to bed.

Edit : Both boys out for the count by 8.15pm

What was meant to be a fun Xmas tree decorating day has turned into one of unorganised chaos and annoyance at others incompetence. So no breakfast or lunch as just didn’t get chance.
Dinner - 2 chickens breasts, Nando’s sauce and some courgettes &peppers with it.
I now have a Bacardi & Diet Coke in hand, strictly on the tv and I’m going to indulge in a couple of of spoonfuls of breyers salted caramel ice cream
 
Hi your weekend sounds great. No I put LC jam in bottom like I do with the fruit in the clafoutis recipe but that sounds like an idea worth trying! Maybe next time I’ll try it in the middle! Putting jam at the bottom meant when warmed and taken out and put upside down in a bowl they looked like mini jam puddings!

My mouth is watering at the thought. I have to try these.
 
Hi all work day today so mainly sat at pc but got a short walk in and it was a bit of a grey day so not too tempting!
Breakfast sausage, bacon and egg
Lunch one slice of Hilo toast with pate, a few nuts @nd one square of 81% choc
Dinner chicken curry with glass very dry white wine followed by new LC raspberry sponge pud with double cream. ( can’t believe just how naughty they taste!)
Another working day tomorrow.

Used Diet dr raspberry jam recipe and cooled it. Then clafoutis sponge mix from recipe booklet but increased mix by 50% to make 12 good sized puddings and also replaced 10% of ground almonds with psyllium husk to produce a more cakey texture and added a teaspoon of baking powder. Think will make more jam next time, keep excess in fridge and add to pudding when reheated when serving to make it more jammy as the cake mix absorbs a lot of the jam! I got on scaleswith trepidation this morning after feeling so naughty yesterday but no change and more importantly bgs as usual so happy.

I’ve made the raspberry chia jam before and thought it was pretty good, and still have some raspberries in the freezer so its definitely on my list again.

I use ph in the lemon drizzle too and it definitely produces a better cake crumb texture.

@shelley262 -- those sponge cakes/clafoutis look to die for.

Yesterday ...

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: Half a flat bread (made using DD keto roll recipe with lupin bean flour and chia seed flour) with butter with butter. A small bowl of mushroom-zucchini-cream soup.

Snack: 6 squares of 95% chocolate (about 5g of carbs altogether). A glass of red wine.

Dinner: Soup (calf tail, red curry, beef broth, adobo paste, sambal oelek, onions, green beans, navy beans, pumkin, celery), Lamb's lettuce with a mustard-lime dressing and feta cheese. A small piece of flat bread with butter. Half a glass of red wine.
The recipe I used is the clafoutis recipe from the recipe booklet I pulled together from this thread - see the file page 33. I just used the Diet Doctor raspberry jam instead of the fruit and also I have adapted the clafoutis sponge to make it more spongey by replacing 10% of the ground almonds with psyllium husk and adding a teaspoon of baking powder. To make 12 cupcakes/puddings I increased the clafoutis sponge by 50% . wasnt sure if you had had a copy of the booklet so putting it on this reply for in case!

For us, in this hacienda, Saturday is usually a curry night, having spent the afternoon watching sport.

In recent weeks, I have been building out freezer stocks, having bored of ASDA's boxed offering.

Today we had twosleevers Now and Later Butter Chicken (although I added a bit more spice to the original mix), and myheartbeets Goat Curry in a Hurry, using beef. There was Pilau Rice too and some Onion Bhaji. The onion bhaji came out of the freezer too, but I hadn't made those. Boy, we are absolutely stuffed!

The curries and rice were made in the IP, and the bhajis were done in the air fryer. All very rapido.
 
Evening all
Another jolly nice day - lovely walk round the headland coastal path and rockpooling on little fistral beach.
B: 2 rashers back bacon and a fried egg.
L: cold meat, cheese, olives mayo
D: at Rick Stein’s Fistral beach cafe - grilled lemon sole, big pot of aoli, spinach and watercress salad. Sparkling water to drink (!)
Having a small tot of rasberry gin back at the cottage now.
