What have you eaten today? (Low carb forum)

Rather spiffing weather today. Drove past Hotel Chocolat factory shop today - thought about advent calendar but not a great fan of their chocolate, or anything made in Huntingdon. Will be an OMAD day by accident so I expect to be watching start of day 2 play tomorrow.
Breakfast: - Tea : - 3 pints early doors;
Dockey : CBA
Lunch : As above - shopping for weekend
Mid Afternoon: Soya milk latte
Evening meal: Avocado and mackerel salad




 
I thought you already had one. I must pay better attention.

I (only just) managed to resist a second, although once the Mini appears there will no pretence of resisting.
I had a pressure cooker which developed a fault and was returned, I didn’t replace it as I still have and use my multi cooker. I was waiting for today, ordered one then chickened out of spending £80, I know it’s an amazing price but in reality with 3 grandchildren I decided to change my mind x
 
View attachment 29683 Working today on pc at home mixed in with forays in to kitchen for cooking tonight’s pudding. Made Diet doctor raspberry jam with chia seeds - cooled it and then used it below clafoutis sponge mix - which I increased by 50% to make 12 low carb versions of raspberry sponge puddings - delicious see photo. That’s 6 nights puddings for two of us! Keep us going over the week. Warmed in microwave for a few secs and served with yoghurt or cream!
Breakfast one slice of bacon, mushrooms and egg
Lunch one slice of Hilo toast with pate followed by a few nuts and one square of 81% choc
Dinner 2 lamb loin chops with mushroom sauce and celeriac parmentier and glass of red wine then pudding the low carb version of raspberry jam sponge pudding with fage 5% Greek yoghurt. The tops tasted almost toffeeish delicious.
Working on PC again Saturday and Sunday too so may need some more treats! Work has been neglectedof late of necessity so trying to catch up!

The sponges look good!

First day off work. Bliss. Lie in. Haircut. Fish tank tweaking. Reading. Lovely.

No B
L was oomi noodles with 2 diced black farmers sausages in cheese and cream sauce. Could eat this every day. Fills all the holes that pasta carbonara deprivation left behind...
D: half a small roast duck with around a tablespoon of homemade cranberry sauce. The rest will freeze for use over Xmas.

A lovely day. Except for the chill, damp, soggy weather.
Ended up wrestling a dog for about half an hour, till we were both worn out. But it was worth it. She is now spatchcocked on the sofa, snoring, so it looks like it did the trick.

Oh, also managed to down 50g of G&B’s raspberry and hazelnut dark choc. :couchpotato:
 
@Goonergal i hope the gym pays off and you manage to get some extra Zzzz’s this weekend

Thanks. Gym was good. Now I can go to bed with no reason to need to wake up early. Let’s see if it works - 3 clear days with no early morning commitments (working at home Monday).

See we are ‘order IP, reconsider and cancel’ twins!

Ah. I can appreciate the conflicts on cash, but all I'd say is if I recall correctly, this is about what I paid a couple of years ago for mine, on Black Friday.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: ham with cauliflower and broccoli salad followed by Greek yoghurt and raspberries.
Mid afternoon: peach chia pudding and black coffee.
Dinner: chorizo and Gouda rollitos with cauliflower and broccoli salad, pork scratchings and coleslaw followed by SF jelly, cream and LC chocolate granola. Oh and then one of the LC chocolate and peanut squares I made for Xmas didn’t quite make it into the freezer! :p

B: DD bacon sandwich. Tea with almond milk.
L: none to speak of but did have a few nuts and olives late afternoon with a couple of gin and sodas
D: Made in IP yesterday and brought it with me, a pork and spinach curry with cauliflower rice. Cheese and red wine.

Late evening walk along Fistral beach with daughter and Great Dane. It was completely empty and beautiful.

No storms to watch so far, in fact weather is really mild but it’s lovely to be away with everyone

Haven’t managed to read all the posts I missed but @shelley262 your raspberry sponges look fab. Did you put the jam in the middle?
 
Amazing how censorious this condition and its eccentric WOE makes one. Choices of my son, wife and granddaughter disturb me slightly - and I don't even think this works. Strange cult like belonging and very worrying.

I’ve found myself being quite censorious too, and have to give myself a good talking to.
Trouble is when they are people you love, you simply don’t want them to make ‘bad’ choices.

Hi your weekend sounds great. No I put LC jam in bottom like I do with the fruit in the clafoutis recipe but that sounds like an idea worth trying! Maybe next time I’ll try it in the middle! Putting jam at the bottom meant when warmed and taken out and put upside down in a bowl they looked like mini jam puddings!

Yesterday ...

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: Half a flat bread (made using DD keto roll recipe with lupin bean flour and chia seed flour) with butter with butter. A small bowl of mushroom-zucchini-cream soup.

Snack: 6 squares of 95% chocolate (about 5g of carbs altogether). A glass of red wine.

Dinner: Soup (calf tail, red curry, beef broth, adobo paste, sambal oelek, onions, green beans, navy beans, pumkin, celery), Lamb's lettuce with a mustard-lime dressing and feta cheese. A small piece of flat bread with butter. Half a glass of red wine.
 
Gee I'm way behind. Been popping in and out but forgetting about food.
Wednesday - Bed 6.2 FBG 6.7 - it got worse over the last few days although daytime is stable.
B. A bit of Mattesons chicken sausage and 2 scrambled eggs. Tassimo Americano grande with a dash of cream.
L. Nothing
D. Air fried drumstick and air fried chicken thigh with cheese and onion dip. Didn't really feel like anything else although I did have a small low carb "Baileys".
Thursday - Bed 5 FBG 6.4 so OK

B slice Tesco High Protein bread toasted with pate pate. Tassimo Americano grande with a dash of cream.
L. Nothing - was on was back from Aqua Zumba.
D. Again not really looking for anything much so took a portion of my spinach and broccoli soup out of the freezer. Must make more of that as I only have one portion left and it is so tasty.
Few raspberries and cream

Thursday evening - Got a weird late night surge to 8.3 but it dropped back again to 6.4 going to bed. No particular reason for it. FBG 6.7 on Friday.

B. Physio today So a quick Tassimo Americano grande with a dash of cream, slice of Tesco high protein bread with pate pate.
L. Too busy sorting out lunch for the boys. Had a quick coffee while entertaining them.
D. Things went drastically wrong here. Stir fried beansprouts - no problem but Hubby got me a chilli chicken with peppers and onion which I've always been fine with but they must have changed the recipe - BGs shot up to 14.2! But plummeted just as quickly. Could not keep my eyes open so gallons of water was consumed. Was down to a more realistic 6.4 going to bed and an FBG of 6.7 this morning although still getting some variation this morning but nothing too severe. I guess what had been a "safe" chicken dish is now off the list.
Boys are staying tonight so I need to get a cake so they can have birthday cake for my birthday. According to them a birthday is not a birthday unless there is cake. They are well aware I can't eat it but there still had to be cake. I can't be bothered making one as I realised today is the day my cards would have appeared from my brother and sister and of course they're not there. We're going out tomorrow but tonight the boys will eat cake!

Oh, Maglil, those days when the normal run of decades is broken. They're heart wrenching. I remember them so well from when my Mum passed away. I'd say to myself "it's only a card", but it was her card. No point telling you it eases with time as you know that, but today that knowledge doesn't help. :(
