What have you eaten today? (Low carb forum)

Last time to use this yeardate.
Breakfast none, Bg6.3
Lunch CWC, Ham, cheese, avocado, Lettuce, cucumber. Few radish. Tea
Dinner steak and chips (15 exactly) 10g carbs , mushrooms, tomatoes tiny cherry ones and few peas. Two macaroons, now the pack is finished. And far too much fizz. Later had cheese and bread . Tea and more tea then water. Phone calls and texts from friends and family

i fell of the wagon today had -

2 mars bars, 2 cunchies, 1l of coke , 4 mr kipling cherry cakes and a packet of poppables, 30 mini sauage rolls.

to balance it out i had some chicken with salad.

oh well, at least it can only get better in the new year :)

@DCUKMod I’m chuffed to bits: I successfully made clotted cream in the IP. @Goonergal beware if you make this, it is seriously delicious.
After a day of high BGs yesterday, today’s been a lot better.
B: Scrambled egg on a slice of Emmental and 1/2 avocado.
L: Out at a pub, sometimes it’s hard to know what is the best lc option. Went for a Cajun salmon salad (sans spuds). It was odd but very good - the salad was a bit of rocket with Brie, Parma ham and olives with garlic mayo. Bg stayed the same pre and post. Soda water to drink. Couple of strawberries when we got in with the new clotted cream.
D: Pork and mushroom stroganoff with cauli rice.
Middle daughter and her partner are home and the grandchildren are staying over again so it’s a noisy household.
Was interested in the clotted cream so just looked up for a recipe to make it but sounds like a long process. Does clotted cream melt?

I've made Ushta which is a Lebanese thick clotted cream that does not melt But takes less time to make and uses cream and milk combined in a shallow tray on top of stove. You bring it to boil then let it simmer on very low heat for half an hour. Turn of heat then Allow to stand for 8 hours before putting in the refrigerator for 7 hours. Then detach cream using a knife and cut into peices.
 
How much cream did you make DJC3? I hope your supplies aren't running low yet.

Only a small carton ( 300ml) - after the first failure I didn’t want to make a big batch until I’d got it right. I’m guarding it jealously now though until I get round to making more b

It goes a bit ‘oozy’ it’s not completely solid, it sounds very much like the Lebanese cream. . It does take a while but very little hands on time if it’s done in the IP - basically put it in, leave it, remove to fridge. ( my sort of cooking!)

For me, these things that we can easily buy in almost any supermarket, year-round, these days are all about the ease and quality.

I love the IP for it's ability to thrive on a decent ignoring.

(Lidl are doing a multi/pressure cooker in the next couple of weeks, that looks similar to the IP - and has a stainless inner, but at £60, it's not much less than the "real deal" which comes with all that support network, customer service, and spares facility - sealing rings, float valves/gaskets "lost in the dishwasher" etc.)

You put it behind you and tomorrow is another day. Got to say I'd feel pretty Ill if I ate that. My taste has changed so much that things I previously loved taste vile now. Having said that I'm not brilliant today but that's down to a late night (morning) and a tad too much wine!
 
Today 31 December - Hogmanay. Bed 6.6 FBG 5.8. I'm not keen on the year end. Always feel it's tinged with sadness. I've always felt this way. We're off out tonight. I still prefer to go out as my brother always came through at New Year. His daughter feels the same so she went off to Thailand after Christmas with friends. We're off to the Eskmills Venue - same as last year. Son's band is playing (they're a regular fixture for this firms party nights now). It's on until 2am but we're coming home at 12.30am as we're restricted by taxis and the fact we get tired. It was a good night last year though.
B. TAG with ADOC.
L. Had to nip out to take car seats to son as he was going with his friend & his kids to the trampoline centre for them to burn off energy. On return I had 4 chipolatas and a fried egg.
D. Will add it tomorrow as the other great thing about this venue is they adjust the meal to suit my LC eating. They did a brilliant job last year so I'm sure this year's will be just as good.

Can I wish everyone a very Happy and prosperous New Year and going back to Granny "Lang may yer lum reek" which is an odd way of saying may your chimney smoke a long time - it's a way of wishing you a long and healthy life.

Well I was right, they did indeed do a good job.
D. Last night - way too much wine! I stayed off the prosecco apart from one on arrival and one for the bells. They started off on the right foot with my own little plate of LC/GF canapes. Starter was a terrine of smoked salmon and cream cheese with pickled cucumber and tiny home made oatcakes that didn't do anything much to the BG's. Followed by a beef fillet with a pork scratching crumb, celeriac puree, turnip fondant (never thought of doing that but it was lovely), peas, soya beans and broccoli and a really nice garlic and cream pepper sauce. Got my own dessert as well sugar free trifle - mixed berry bottom, sugar free custard and a coconut cream topping. They even came to check that everything was just right for me.
Son's band had the dance floor packed and a good time was had by all. Thank goodness everything was done yesterday - wouldn't have been fit today! @Annb - I'd never heard that addition before (someone else's coal) but it does fit :)

Currently have my first ever bone broth on the go in the IP. @DCUKMod @Brunneria I think one or both of you have previously mentioned/linked to some large silicone trays handy for freezing such things. Any chance you could link again? Thanks.

That oxtail looks fab!

I'll have a look for my trays, on Amazon. I can't recall if I bought mine on Amazon or TKMaxx.
 
I decided I couldn't start the carnivore approach just yet - too many things in the freezer containing vegetables and I had made rather a nice pot of vegetable soup for my guests. So ...
Only had one small bowl (about 1.15). The others all had a second bowl.

I'd made some filled rolls - ham and soft cheese for some and cheese salad for others. But, there was a chance more people would come (another Christmas death and they weren't sure if they could get here) so I made some soda scones as well. They didn't come after all. Shortbread and sultana cake left over as well so I asked one of my guests to call in at No 2 son's house with boxes of leftovers. Just as well as the Kangoo had let them down again (battery/alternator problems still) and they hadn't been able to do a full shopping, so food was limited at their house. They'd run out of bread and veg. So at least they had some filled rolls and soda scones for their tea and something sweet to follow. Not only did the Kangoo cause more problems and DIL's car refused to start, but Neil's Scenic has now developed a fault and he doesn't want to run it until it's been to the garage. Hey ho, cars are fine until they go wrong but 3 at the same time? Might feel a bit narked over that.

I'd also made a salad of watercress, boiled eggs, pickled red cabbage and little bits of tomato which nobody had had, so just had some of that for my 2nd bit of a meal. Probably that'll be enough for today, along with several more cups of tea. Still some soup left over for tomorrow - don't think I'll bother freezing it.

Today I have been a sloth! Watched three movies. Shaun the Sheep (loved it). The Queen & I (poor) and drumrolls The Sound of Music (my best ever movie).
Breakfast was slice HiLo toast, thick butter, tea x2.
Lunch: one slice HiLo toast with same thickness Brussels pate.
Supper: probs omelette as home alone (in pjs).
 
Had LC eggy bread this morning with coffee.
Lunch was left over Chinese from hubbies blow out take away last night. I did have duck and pancakes as my treat yesterday but none left today luckily. I had some beef in black bean sauce and a bit of a chicken thing but not much no rice or noodles!
Dinner was small bowl of stir fry chicken, mostly veg and obviously no noodles. Finished off with Greek yogurt and raspberries.

Spent most of the day playing with our new cat who is still a kitten really. Daughter was doing teenage sleeping and husband at work so I had the whole day to make me her new favourite human!! Muwhaha!!!
 
No 2 Christmas here now that middle daughter and her partner are back. Sort of OMAD which lasted 6 hrs! Started eating around midday, a constantly refilling buffet. I ate Tuna melt muffins, fathead sausage rolls, quite a lot of the Boxing Day ham, cheese, pate celery and lc crackers. Interspersed with exchange of gifts and lots of games. Uno has been a favourite this year now the girls are old enough to understand the rules. And Articulate is our go to game when children are in bed.
I toyed with the idea of a carnivore month @Goonergal but just realised I have eaten almost an entire head of celery on my own so have fallen at the first hurdle.
