What have you eaten today? (Low carb forum)

Sausages and cheese omelette, tomatoes for brakfast.
Nothing for lunch as I had a midday appointment with my GP.
Roast roled shoulder pork and veggies, gravy for dinner.

GP is all good with my decision, and said he would be fully supportive.

Another off piste day for me - as so often, one leads to another so will need to knock that on the head. Best thing was Libre ran out at 5.35 am and I hadn’t taken a spare one away with me, so I’m blissfully ignorant of the impact!

Breakfast was a hotel breakfast of scrambled egg and bacon.
Lunch was a drawn out affair of M&S rollitos, Serious Pig snacking cheese, chilli and lime nuts and hotel Chocolat dark chocolate with hazlenuts consumed variously on the station and then on the train home.
Dinner was copious amounts of pork belly pieces coated in chilli oil and salt and air fried.

I was going to ask you about your airfryer rotisserie arm. Is it a pain in the neck to assemble on/through the meat? The middle rod on mine is square in cross section and the prong end bits have to slide on. It’s taken me at least 20 mins to get the meat secured each time. Mine is a Tower AF I think you have a Philips one? Is yours easier?

It is a bit of a faff. Sounds similar - pic attached of mine (it’s a Lidl Seacrest 9 in 1). It did take me a while first time, but I’ve got better at it. The trick is to push the side bits in really firmly.

Look what a friend gave me today!
My first experimental batch of icecream is currently being made. I used greek yoghurt, strawberries, a dollop of cream and about half a teaspoon of icing sugar for good luck :)

I forgot to ask how long it takes to make icecream so I have no idea if it will be ready in ten minutes or around bedtime but I guess I'll find out :D.

Recipes welcome, low(ish) carb, yummy, no sweeteners.

@DJC3 - I have the Lidl one too (same as @Goonergal). I went a stage further and got butcher's twine and net on Amazon because, in the case of chicken, the legs/wings kept falling and stopping it rotating. Very annoying as it was great first time but the twine has solved the issue.
Wednesday bed 6.2 FBG 6.9
The next few days are joyously the same! As I did buy the SLC "hot dog" rolls. OK, I agree with MrsA2 that this is not "hot dog" brioche type rolls rather their bread in a different shape. I don't care! I loved hot dogs.
B. 2 slices of SLC toast with Dairylea.
L. Nothing
D. Veggie chips and hot dog one. SLC finger roll crisped a bit in the oven, American mustard & ketchup in the bottom, hot dog in, softened white onion, more mustard & ketchup and a sprinkling of crispy onion on top! Absolute heaven!
Grenade ice cream bar.

Thursday bed 5.4 FBG 6.6

B. TAG and 2 slices of SLC toast with coronation chicken.
L. Nothing
D. Another heavenly hot dog (made the same way). Had a salad of 1/2 avocado, santini tomatoes, mini mozzarella and baby beets with it. Scoop of Oppo chocolate chip and raspberries.

Friday - today bed 6.4 FBG 5.9

B. TAG and 2 slices of SLC toast with egg mayo.
L. Nothing
D. Just enjoyed yet another hot dog salad of mini mozzarella, baby beets, mini tomatoes. Might have last scoop of Oppo and remains of the raspberries.

Grandson has really developed a liking to spelling. My "tricky words" list is shrinking. He learns 3 words every day, writes them repeatedly, then makes up sentences using the words. We practice the spelling of all learned words in the car. His confidence is sky high. He took his learned list into school and got a teacher to ask him. Yes, he got them all correct.
 
A good last couple of days bg wise, always between 4 and 6 so felt I could try pizza tonight as there's specialist place bottom of the road where we are staying, all fresh, natural ingredients etc. Had 3 out of 8 slices with a green salad and wallop, straight up to 11 but down again within 3 hours.
Did eat it thinking might be my last. Will limit myself to one bite of hubbys in future. Tum is felling uncomfortable and bloated, but at least I know now.
Should have added that although wheat based pizza is now permanently off my menu, I do use a couple of lc alternatives that are quite acceptable, a fat head pizza dough for one. Just a shame can't get them takeaway and done for me.:)

Today was ff greek with seeds and blueberries, just a small portion.

Then a lovely lunch out of chicken thighs cooked outdoors on a gridle with njuda butter, 3 great tasting salads. Gave the flat bread to hubby, but did succumb to a small homemade icecream and some homemade cordial. Peaked at 9 but OK for what I had I though. Best of all was the setting in country kitchen walled garden. Beautiful and peaceful.

Supper was 2 sausages with lettuce and 2 cherry toms
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and Fibre One caramel protein bar.
Skipped lunch.
Mid afternoon: black coffee and coffee chia pudding.
Dinner: lamb koftas, Brie, leafy salad and coleslaw followed by SF rhubarb jelly, cream and LC chocolate and ginger granola.
 
Thanks @Goonergal and @maglil55 for your input on the rotisserie. It does look the same as mine so I will just have to practice a bit more. Good tip about the butchers twine and net maglil55. I did buy a load of butchers’ elastic band type ties from Amazon after my first attempt at a chicken when it did the same as yours and sort of flopped about until it stopped rotating.
Today I had a couple of DD recipe cheese and bacon muffins for breakfast.
Lunch with various family members was h/m burgers topped with Brie plus salad.
Evening meal- 2 airfried chicken thighs marinated in lemon juice, olive oil and fresh thyme. Plus lettuce & French dressing. Dry white wine too.
@maglil55 I wonder if grandson’s teacher is also swotting up on ‘tricky’ words now so as not to be caught unawares!

Even the two unexpected visitors who turned up right when the icecream was ready loved it, despite it being much less sweet than traditional icecream!
Experiments with different flavours will follow :)

Things will be happening in my garden this weekend. One of my neighbours who is currently living in a little chalet in the back garden of my neighbours will be evicted by the end of the year.
So he'll move to my garden. Next weekend his new trailer will arrive to be put in my garden, which means things will have to be prepared. As far as I understand trees will be taken down and a way to the sewer will be dug for the trailer.
Exciting stuff!

And thankfully not something to worry about, as I've made it clear I'm perfectly happy to have him live in the garden as long as he's the one organising stuff :)

I, occasionally, make raspberry ice cream - similar to your recipe but without the icing sugar. It works without the cream as well. Banana works, with a bit of lemonand possibly some ginger - maybe too high carb for you - also with no sugar. I have some strawberries and intend to make strawberry ice cream just with cream and strawberries. I don't usually get to eat much of it - Em loves it! I thought I might try with rhubarb next time I can get some, but it would probably need something to sweeten it a bit. Another one I want to try is avocado and orange with yoghurt.
 
Yesterday -
Breakfast: bacon and eggs
2nd meal: cream of mushroom soup made with chicken stock
Not sufficiently filling so -
3rd meal: sort of scrambled eggs - there was a little of the soup left (more mushrooms than soup) so I just poured some beaten eggs on top and scrambled the whole lot. It turned out a bit watery and tasteless so I made it worth tasting with some home made ketchup.

Today -
Breakfast: bacon and eggs
2nd meal: will be a couple of sausages in chunks with some cabbage - all braised with a little of the remaining chicken stock.

We have identified where the only local fish shop is! The place we were looking for was only a temporary venue. The permanent one is on the harbour in Stornoway. There is no access by car and from the nearest parking place to the shop is about 400 yards along the harbour wall. I can't ask Neil, in his current state of health, to push me that far in the wheelchair. So it's a no go.

What about giving them a call to explain the situation? They might be happy to help you out and bring the fish to the car :)

If I had a store I would hate to find out someone had wanted to buy something but wasn't able because of the accessability!
 
Yes, I thought myself that it isn't a good move to make yourself inaccessible to a large number of customers - this island population must have a high proportion of elderly folk; the younger ones all go away to the mainland to work or study and most don't come back until they are in late middle age, if at all.

I am going to phone them to find out if they have any arrangements in place to overcome this issue. It turns out they are only open on Tuesdays - the rest of the week they travel around the islands with a fish van - not in our direction, unfortunately. They go to the Uists and to Harris and the West side of Lewis but they never seem to come here. I would so much like to get some fresh shellfish and some fresh white fish and mackerel. And I wonder if they have whitebait, which I would love to be able to get again.

Well Thursday was Fish Finger Firsday, my indulgence day that I look forward to!
Yesterday I decided to go as close to no carb as possible apart from slice HiLo toast at breakfast. Lunch was a pot of naked calamari from M&S and green salad. Supper was halibut and 3 scallops fried in butter, with 1 leftover cooked broccoli floret heated up. Did manage to get a FBG in the 5s today after a couple of weeks or more of 6s and 7s. Ut couldnt sustain that way of eating. Lunch today was sliced ham and spoon of cheesey coleslaw. Tonight we are having a Thai t/a so I will order a chicken ginger & spring onion stirfry with steamed pak choi. Tomorrow we are going out to lunch with our sons and DIL to be so will be scanning menu for something safe. Might choose a roast with extra veg instead of spud & yorkshire.
 
All this talk of ice cream is making me crave some! Frozen raspberries may have to be bought.

I did buy raspberries, but fresh, not frozen, and extra thick double cream. Not quite ice cream, but hit a spot - well 2 spots. One before dinner and one after :D:hilarious:

Dinner was oven roasted whole wild sea bass (pic on PE dieting thread) with lemon and thyme.

Lunch was air fried Barnsley lamb chops.

Bed 6.5 FBG 5.8 - jujitsu day! Grandson showing off his spelling prowess to Mum on the way there. He also decided little brother should be doing this too so had me finding the same exercises for him, although I convinced him it had to be a lower level. We both a bit torn about increasing eldest's time in school now as they are short on teachers and he's doing much better with me teaching him.

D. Still quite humid so salad it was (yes I resisted another hot dog). Salad consisted of 1 slice ox tongue, 3 bits liver sausage, little bit ham and a chicken wing. Half avocado, lettuce, mini tomatoes, bit of wensleydale with cranberries, boiled egg.
Undecided whether to have a grenade ice cream bar or raspberries. Suspect it will be the ice cream bar.

Don't read this post, it might make things worse!

Today I made a chocolate and nut icecream, a proper one with the fuss with egg yolks.
It was very much worth the hassle, and still lowish carb :)

I used 85% chocolate from Aldi, almond butter, egg yolks, milk, cream, and a very little amount of amaretto.
