What have you eaten today? (Low carb forum)

Happy New Year, all.

2 meals so far today.

Breakfast of 0% Fage and a few raspberries. That’s the last of the yoghurt so dairy’s off the agenda again.

Lunch of pork belly - split into two as the joint was very uneven in thickness. Delicious.

Feeling a bit peckish but not sure if it’s hunger or thirst. Perhaps some bacon and egg if a glass of water doesn’t do it.

Just updating to say it was definitely hunger, so lamb ribs have been air fried and eaten!

Breakfast: 2 fried eggs on a slice of toast.

2nd meal: more of the meatballs in tomato sauce - just taking the first thing on the top shelf of the freezer to try to get some more space.

Haven't checked my blood pressure again - not feeling as bad as I did but and my pulse is in the 70's now - still slower than it has been, but not slow enough for me to feel it. It's very cold here and I'm wrapped in the big knitted poncho that DIL made for me. It looks ridiculous, but it does keep me warm - other than my fingers or toes - and there's no-one here to see how odd it looks, other than Neil and he's used to me being odd.

B- 3 fried eggs. Handful of sautéed spinach and 1 slice Emmental.
L- salad with salami, avocado, sauerkraut and Hb egg. 10g 90% chocolate
D- pork mince and cabbage curry. DGF lemon and white chocolate cookie. @maglil55 I agree, these are great eaten straight from the freezer. I’m glad the family are recovering ok.
 
Happy New Year folks. I hope 2022 is a better year than '21 was for almost every living soul. I wish for wach of you what you wish for yourselves.

Today's food has been "normal" Saturday fare - even if every day for the last nearly two weeks has felt like a Sunday!

On an aside: am I the only low carb lifestyler who has never had any SLC, DGF, or such like products? (Yes, that'd be rhetorical.)

It is possible that I haven’t had them, either. As I haven’t a clue what they are, or , indeed TAG, I really can’t say.

Though today I have eaten
Breakfast: Full fat Greek yogurt with blueberries, walnuts and black coffee.
Lunch : coffee with cream
Dinner: baked ham with cauliflower and broccoli cheese, water, a small piece of 85% cocoa chocolate.

I'm worse, I don't even do sweeteners of any kind. I don't even have a good reason for it, I just don't like the idea (and I hate the taste of any 'light' drinks, which doesn't mean I'd hate the taste of sweetened foods of course, I simply haven't tried).

Yesterday was a jalapenoburger between very low carb bread (7.5 grams for the two slices) with lettuce, onion, cheese, mayonnaise, hot sauce, olives, tomato,and mushrooms.

Prepared dinner for today, will eat shortly: Fried mushrooms with a few drops of fish sauce, onion, green bell pepper, cucumber, bok choy. Will add water and the sachets of flavouring from a packet of noodle soup, will see if neighbour's turkeys like the noodles tomorrow. Will fry some garlic shrimps from the freezer to add.

edit: Have also made more marmite nuts, as they were almost finished again!

Me neither. My son brought me some cakes in the early days, can't remember where from, but I prefer to make my own and freeze in individual portions

B: a small chunk of cheese
A lovely sunny warm walk with a friend. A good start to the year.

L: MIL finally starting to understand lc so she provided lunch of prawn and avocado (turned a blind eye to the shop bought sauce), roast lamb with veg. I passed on the apple and gooseberry crumbed as she had provided cheese, lots of cheese.
Some red wine.

6pm 2 small thin mince pies, cream and a chunk of brie. Omg spike to 10.5, worst of whole Christmas. Trust me to spoil it on nearly the last day
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and DGF shortbread, not my favourite DGF product, nice enough but not enough like the real stuff for me to want to buy again.
Skipped lunch.
Mid afternoon: black coffee and a PE protein bar
Dinner: M&S seed crackers with paté, leafy salad and coleslaw followed by DGF Xmas pud with home made SF brandy butter and cream.
 
Three hard boiled eggs, two slices of low carb toast and vegimite for breakfast.
Cold chicken leg, lemon cordial / osmolax mix for smoko.
T bone steak, mixed salad for lunch.
Toasted cheese and onion low carb sandwiches for supper at six.

King Island blue cheese on low carb savoury crackers watching the Mauritanian on Prime Video.
 
Lunch three eggs scrambled in butter with half a low carb home made roll followed by yoghurt and a few berries
Dinner chicken curry and a poppadom (pataks 3.1 g of carbs per poppadom) with glass of gin and soda water followed by a low carb Christmas pudding with cream.
Avoided cheese today - ive definitely over eaten the cheese along with nuts over the festive holiday.

I'm the same - all sweeteners that I have come across make me feel very ill, and anything containing sweetener is immediately apparent and goes into the bin after the first bite. Also haven't seen a low carb recipe or baking product that doesn't contain something that I haven't been able to eat.

Didn't notice a recipe for marmite nuts - how are they made. I'm in the camp that loves marmite.
 
I have found a recipe for peanut butter cookies. Unfortunately, it requires sugar but I'm wondering if I can make it without the sugar. I guess peanuts are not the best low carb food, but worth trying, I think. It is a very simple recipe, so I might just muster the energy to try it.

I haven’t had any either, never really had cakes before & don’t now
Breakfast/ cream cheese pancakes with blueberries
L/ celery & crunchy peanut butter
D/ roast beef, homemade cauliflower cheese, broccoli & carrots
Supper/ d/g cheese & handful of walnuts
 
BG very high this morning. That carried over from last night. When I woke up at 2 am it was 16.5 and it actually started to drop and was 14.7 by the time I went back to bed at 5 am but when I woke up again at 9 am it was 17.4! I took my basal dose and a correction dose and it is currently (11.30) down to 10.4. So I will have to be careful today.

I will have some streaky bacon with dry fried eggs for my brunch in a while and I will have to make some kale soup for later. Kale soup always helps to get the BG down to something like a reasonable level. I will probably be hungry though.

Edited to add: My eyes are very red, sore and leaky yesterday and today - some sort of an infection, I guess. Maybe that's something to do with the high BG.

I guess it's something to do with wanting to tell diabetes I'm not going to let it tell me what to eat, thank you, which is rather ridiculous because my whole eating pattern is centered about diabetes! :hilarious:
Sometimes the brain is just weird, or at least mine is. Good thing I can live perfectly well without sweeteners, so I can just let my funny brain have it his way, if that's what it wants. :)

The marmite nuts I got from @MrsA2 , very addictive!

- In a bowl, mix (half a) a spoon of marmite, a spoonful of butter and a little water (just a few drops), melt and stir.
- Add 200 - 300 gr of nuts and stir until the nuts are evenly coated.
- Put on baking tray and bake for 15 to 20 minutes, the coating shouldn't be sticky anymore.
- Cool and store airtight.

Not sure at what temperature I bake, my oven thermometer has stopped working and I can't buy a new one until the lockdown is lifted, but I guess somewhere between 170 and 200 degrees.
I've tried mixed nuts and walnuts, and I definitely like the walnuts the best.

Marmite is now on the next shopping list. Pretty sure that once I make these marmite nuts, Em will dig in and scoff more than I do - she loves both marmite and nuts. Must ration them.

My oven temperature setting hasn't worked for years - ever since the panel showing the markings fell off (it was a plastic material and couldn't be stuck back on). Neil did say he would fix a new set of markings, but he never did. He, of course, wanted to make it in brass. I just want to be able to see an approximate temperature. So I just guess. I know where 250C should be, and estimate backwards. It's a very old and reliable oven, so I don't want to throw it out.

Son has tested positive now but, apart from a slight fever, runny nose and slight headache two days ago, he says he feels absolutely fine. Both DIL & grandson are fully recovered. DIL even went for a New Year wild swim with her swimming group yesterday morning. They all tested positive before Christmas Day but all feel fine.

TAG - Tassimo Americano Grande. Large Tassimo black coffee (sometimes with a dash of cream). I suppose that would make it TAG/DOC?
 
So I just guess. I know where 250C should be, and estimate backwards. It's a very old and reliable oven, so I don't want to throw it out.
Certainly no need to throw it out if you can just buy one of those for 3 euros!

My oven is an ancient gas oven, at least 70 years old, so no other way as the numbers must have worn off long before I was even born. :)

1 January - bed 6.7 FBG 6 9.

I suppose I should add another 2 vodkas and diet coke before we went to bed? Got up about 10 am.

B. TAG and 2 slices of SLC toast with 2 fried eggs.

L. Nothing.

D. Lentil soup (second batch after Hubby burnt the first lot), a duck croquette (saw them in M&S and made my own with shredded duck and a LC crumb. 2 small duck spring rolls with that seriously hot LC sweet chilli sauce I made. The lentil soup does send my BGs up into the 7's but I really like it and it comes down quickly.

Our area was extremely quiet for New Year.
