What have you eaten today? (Low carb forum)

B: ff greek seeds berries
L: Fridays leftover cabvage lasagne reheated. Even better than Friday
Mid afternoon, boy made me a coffee with cream, but he poured double cream straight from the pot. I usually have 3 teaspoons. This one was more cream than coffee, in fact it stayed cream coloured!
D, with visitors! Spanish chicken (chorizo, peppers, onions tomatoes, paprika) roasted cauliflower, carrots, broccoli. Apple and blackberry crumble, normal for them, lc for me.
4 cheese board, sage Derby, Barnstone blue, truffle iberica, cheshire.
Glass wine
 
Hello. Reading this thread I am learning an awful lot about myself! Looking at your meals, I've come to the conclusion I eat far too much.So I'm taking note of your meals and am going to be a copycat. But one highlight for me is today my AM bg was 6.0, for the first time ever! My carb intake was 33g yesterday. So today it will be soup for starter and meat and veg for lunch (I go to a pensioners weekly lunch) I refuse dessert cos I can't count it. I have egg mayo with olives chopped up in it for tea with half a hm linseed roll. You don't realise how much you are all helping me to understand and cope with my diabetes.
 
Back from my pre-op assessment - huge rush to get out on time this morning so no food or drink before I went. Just had a cup of tea. Shortly, I will have bacon and egg and later I will make a lamb tagine - have to make that early and reheat, or I probably won't bother and make do with some toast again!

Pre-op test revealed that my lungs have suffered - possibly due to covid even though nothing shows on scans - it appears that my lungs are those of a 90 year old! I was aware that there was something - I used to be a singer and was easily able to keep going through those long, long lines that you find in things like Christmas carols (Glo-o-o-o-glo-o-o-o-gloo-o-o-oria etc) but can't get anywhere near that now. Struggle even to complete short lines without taking a breath.

I had 3 meatballs for yesterday, 3 for today and 3 for tomorrow. (Yes, they are really small meatballs.)
Yesterday I put the 3 meatballs in the pan and put the plate with the other meatballs aside for a moment to wash my hands. I had used my hands to flatten the meatballs because I don't have the patience to wait for round meatballs to cook through (hence the size of the meatballs), and I didn't want to get raw meat from my hands on the fridge.

Long story short, I'll have almost 2 meatballs today, and one and a half meatball tomorrow. Or I can have 3 and a quarter meatball today and no meatballs tomorrow.
The cat (not the red one but the black and white) turns out to be a very quick eater when it comes to raw meatballs.

Just remembered that I have to go back to town this afternoon for a dentist appointment - just to get a new dental plate - the existing one keeps breaking bits off when I bite into things. then I get it repaired and then another bit, or even the first bit, breaks off again. So this time it's a complete new one. It does mean that I shan't be cooking anything much this afternoon. No idea what I could have, apart from more bacon and egg. Maybe cheese and pickle - that sounds like a bit of a plan.
 
@maglil55 know you’re the monkfruit sweetner expert and wondered what you thought. I’ve decided to try out liquid concentrated lakanto monkfruit extract drops, as gather you only need one or two drops to replace bigger quantities of erythritol? I’ve ordered today but will share results when arrives and have used it. Erythritol, I find, can go a bit grainy -even powdered version - when added to chocolate I find and I fancy making some hm lc truffles as a treat for a coming up family visit, to use up some 100% montezuma choc I’ve got left which I can eat small amounts of but others find too bitter. I also wondered if only tiny drop needed if may cause less of a digestive impact for anyone who has a sensitive gut? I’m lucky as erythritol dosent impact my gut but know it does impact some people.
Today’s food
Lunch lc seeded crackers with some hm pate followed by yoghurt with a few raspberries and two squares of 90% chocolate
Mid pm low carb cookie
Dinner frittata with salads followed by low carb cake warmed and served with spoon of cream.
 
Sort of an extended OMAD today. (Looking back it's really a CGD, constantly grazing day)
Was hosting an event so got a bit nervous and skipped the large breakfast I had planned to see me through the day
So only cups herbal tea and a bit of water until
1:30 2 lc biscotti nut biscuits
2:15- 3:15 picking at cheeses and seed crackers and 1 glass red wine
18:00 6 olives, a bit more cheese, 1 more small red wine
18:45 lc blackberry and apple crumble with cream (suddenly remembered it had been leftover yesterday)
Must stop eating now, not really hungry, just picking
 
Very odd eating day today.

Was all prepped this morning. Put shin of beef in the slow cooker ready for a late lunch after work. Then properly back in the office for the first time in 2 years, I forgot all about it and ended up lunching with my work bestie. Half a chicken consumed.

Then succumbed to cream and raspberries again and some 85% chocolate. These will be the last!

Beef shin will be refrigerated and warmed up for tomorrow’s lunch. Looks pretty good.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a PE bar.
Dinner: roast Turkey (it was a frozen joint I got in case covid changed Xmas meal plans at the last minute!) with a splash of gravy, one tiny roast potato, brocolli and sprouts followed by SF cherry jelly and cream.

dinner; .Chicken breast in Nandos sauce, peas, one roast potato. raspberries, blackberries and cream. DGF pecan and caramel cookie.

Can I ask where you got hold of the monkfruit extract? I've looked online but can't see any.
 
Three hard boiled eggs, two slices low carb toast and vegimite for breakfast.
Half a beef and bacon pie, lemon cordial / osmolax mix for smoko.
Seafood marinara (fish pieces, squid rings, prawns, clams) in a spag bol sauce, small portion of reheated pasta spirals for lunch.
Toasted ham, cheese and tomato sandwiches, tub of green jelly for supper at six.

Dinner: prawn mayo sandwiches made with LC bread with a leafy salad and coleslaw followed by DGF mince pie (the last of my LC Xmas treats :() with cream.
Hi is the bread and buns nice you get I normally buy from Seriously low-carb website but I seen a picture of the bin you posted it looks much nicer x
 
Coffee this morning. Started taking my aeropress for coffee at work so I'm drinking less buy its nicer.
Lunch- chilli with a dollop of Greek yogurt and mozzarella as that was already grated. Forgotten how stringy it goes and eating it was slightly more amusing than intended.
Dinner - large chicken stir fry. I bashed up a few mixed nuts for added crunch.
I have also eaten a couple of biscuits but a whole lot better today than recently.
 
Three bbq sausages, two eggs, tomatoes, slice of low carb toast and vegimite for breakfast.
Last bit of that "low carb" cake the BC nurse gave us, lemon cordial / osmolax mix.
Cold chicken legs, mixed salad, cranked the low sugar jelly factory up Friday, so a tub of pineapple jelly for lunch.
JO's fish cakes with a goodly dash of white pepper on them for supper at six.
