What have you eaten today? (Low carb forum)

No breakfast
L: 2 95% pork sausages, 1 chicken thigh
D: lamb and lambs liver mince with fridge gravel veg and extra green beens and broccoli. Gravy,
2 hm lc choc icecreams.

Near disaster today
. Found our 8 drawer freezer defrosting. Ended up cooking quite a few things and banning the culprit (hubby) from the house.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food dr bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: crispy cheese, tomato and mushroom omelette followed by SF cherry jelly and cream. (Omelette was a bit overdone, tasted fine, but didn’t look pretty, so here’s one I prepared earlier this month!)

Wednesday 9 November - bed 7 6 FBG 7.9

Boys are here for dinner and youngest has basketball after school so a lot of toing and froing today.

B. TAG and a bit crustless quiche.

L. A CC snowconut stick and a DGF coconut square.

D. 2 beef olives with broccoli, carrot, onion. CC little chocolate pot. I'm still getting "touches" of vertigo.
 
Odd meal, tasty though.

Was supposed to go swimming this morning, and buying groceries, and cooking. But instead I had to rush to the vet with a very sick cat. Once at the vet it was clear he wouldn't get better so he was euthanised. I loved that cat very much.
Outside the clinic I called a friend, who basically ordered me to drive by the supermarket and simply buy anything I like without planning a meal and don't look at the price. She knows me well, and knows my brain refuses to make decisions and insists that things like deciding on what to eat are a giant problem at such a moment, very happy she solved that problem for me.

I found a low carb wrap that doesn't taste like cardboard in the supermarket last week. Too expensive to have regularly but perfect to use once in a while, like today.
I had it with smoked salmon (which I love but eat maybe twice a year because of the price), cream cheese, snow peas and fresh lemon zest.
(I bought lemons and snow peas because they appealed to me, I guess they looked pretty. Any recipes with lemon are welcome, there's four more of them and I never use lemons really. The snow peas are easy to use later this week. :joyful: )
Also had a tomato filled with egg mayo with salt, pepper and a little of the branston pickles.

Lots of room left on my plate, I was going to add something else but didn't know what, so this will have to do.

Poes has a nice place in the garden, right next to the rabbits.

Sorry to read of the passing of Poes @Antje77. It really is like losing a close family member xxx
 
Thursday 10 November - bed 7.8 FBG 7.9

Weird, weird day. Unseasonably warm but almost got blown over more than once. Usual school runs the DIL to work, quick visit home then off to Aqua. @DJC3 - black tea is nicer in a pretty glass/holder. Hubby got me one of these burger press thingies and it has the contraption for stuffing the burger with whatever you want. I could certainly do the rissoles in there (or would they then be Mexican Bussoles?).

B. TAG and a bit crustless quiche.

L another piece of crustless quiche (needs finishing). CC little chocolate pot. This was after Aqua classe.

D. SLC pizza with tomato, salami, cheese. I did gave a DGF Christmas pie at some point.

In the midst of everything today, I got another letter from the Eye Pavilion. This time to tell me my first surgery on my right eye is on 2 December. Good, but one problem. My pre op assessment is on 7 December!! They did laugh when I called them to sort it. Pre op is now a week before the operation thankfully. So looks like one eye will be done before Christmas.

dinner beef bolognaise with white cabbage ‘fake pasta’ Pepsi Max.
supper decaff coffee made with almond milk and a teaspoonful of cream.
 
For anyone thinking the 2 forks of Spag Bol were strange... It was one of my dog's birthday today, so as a treat i made them both Spag Bol and could not resist a couple forkfulls myself... My tiny taster had parmesan too. I don't think the dogs would have noticed it missing!
And my bedtime sugar level is down to 4.8 after that horrific pasta transgresion.
Intially assumed you'd had a dinner guest then while they turned away for a moment to admire some artwork..or a lampshade or something, you saw your chance and took it. Twice. :D
 
Slice of toast and vegimite to park my medication on, as still feeling not great in my gut, for breakfast.
Heat and eat pea and ham soup for lunch.
Two egg and cheese omelette for supper at six.

A tentative sip or two glass of single malt before bed.

Took a couple of anti nausea tablets (metoclopramide) with my first mug of black coffee to see if I can beat the feeling.
 
This is for yesterday 10th Nov... Did not get a chance to post...
Breakfast 2 egg Omelette with cheese, ham tomato, onion.
Lunch skipped.
THEN very strange thing happened.. I felt tired in the evening just before dinner so went for a nap... Fell asleep within 10 mins...15 mins later Low sugar alarm went off on the Libre 3.. I immediately ate 1/2 a choc biscuit, drank a1/2 a coke, 3 crackers, 4 fancy small chocolates. Then checked with test strip reading.. Libre 3 had said 74 (4.2mmol) Test strip said 4.5mmol ....Then fell back to sleep for 8 hours!... so no dinner. BS Level back to normal area 5.4 when i woke at 4 am. Ate some salami and cocktail sauce and prawns ...Yeah weird food choices :happy: but things i could not eat when on "no carb", so figure eat what you missed if you need to take on carbs!
 
Em dawdled over her breakfast this morning and then had no time to eat it before she had to brave the heavy rain and flooded road to get to school on time. That meant she left the slices of ham and fried egg I'd given her. That became my breakfast but I figured I could add a single slice of bread, heavily buttered, to that. Bad idea. Even though I took a full (60u) dose of insulin, BG first dropped by 3 to 10.3 at 11/2 hours but then shot up to 15.5 by 2 hours. Slowly dropped after that to current 8.7. I thought I could get away with the one slice, but obviously not.

Was thinking I would make some carne con chilli for my 2nd meal, but if I am reacting to carbs so strongly today, I'd better forget about the beans and just make it beef ragout. It's already cooking on the stove, so I might have it a bit early - I'm already hungry but can't risk anything else today. Hot drinks - that's the answer. It's supposed to be warmer today but with all the rain, it feels cold. I do anyway.

For those that can remember the discussion a couple of weeks ago re bread and butter pudding ( @maglil55 and @AndBreathe ) I tried today with the SLC Not Cross Buns. Looked pretty good when they came out of the oven but I wasn’t keen. The buns didn’t seem to absorb the custard properly, and had that horrible spongy psyllium husk texture. Cooked in the oven as it was on anyway so at least there were crispy bits!

Looks good.. Bit of a shame if it didn't come up to expectations.

Dinner: salmon and Brie on a LC roll with coleslaw followed by DGF lemon drizzle and cream.

Two slices of vegimite on toast as I was not feelin hungry, for breakfast.
Some reheated leftover mashed potatoes, and half a containeter of chicken laksa mixed together for lunch.
Prawn and salad sandwich, small portion of L/L sorbet for supper at six.

Glass of single malt before an early night.

Mid afternoon, a bit of non diabetic baking as dropped a few hm biscuits into various neighbours, ones had a recent fall, another s husband's funeral was this week, 3rd just back from vets with poorly cat. All of us suffering broken local mobile phone mast so no phones for 8 days already, then the wi fi went down too. :arghh: all there was left to do was have tea and biscuits!
I did have a couple, could have binged the lot so very pleased I gave them away!
D: bacon and cabbage carbonara. Later a glass of white wine
