They did the same with me when I was first diagnosed. 2 x 500 followed by 2 x 1000 3 months later. Once I got into low carbing they eventually reduced me back to 2 x 500mg and they halved my BP meds.I make "sushi" by mixing the mayo with the cauliflower rice, and spreading it over the nori sheet, then putting the salmon, and cucumber in and rolling it up. I sometimes will add kimchi if I have made some recently, or I will add avocado if it hasn't gone off and turned brown.
My numbers have been between 6.4 and 7.8 for the past two weeks I test once a day as directed by my doctor, and I have been taking 500mg of Metformin twice a day. I saw her today and she raised the dosage to 1000mg twice a day for the next 3 months. I am wondering if the only way to find out how the diet alone is doing would be to not take the medication for a few days and test, but I don't want to do any harm.
I'm convinced it's the NHS recommended route to start you on 2 x 500 to make sure you don't have side effects with metformin (some people do). Keep an eye on your BGs and if they come down speak to them about reducing the dose.
Life is a bit easier now. When I was first diagnosed the NHS was very anti low carb. That eat well plate with the high percentage of carbs will haunt me for years!
