What have you eaten today? (Low carb forum)

Isn't the prettiest, but tasted gorgeous. Had half a tub of leftover ground up cauli/broccoli/onion/cabbage left over from last night

mixed in some coarsely chopped kale, tomatoes and the end of a courgette I was unaware was hiding in the fridge (bonus!)

sumac, salt, onion powder, black pepper, olive oil quick pan fry until the cauli bits browned up

so good
 
We did walk to the pub for dinner, but it was full so we walked home again and had garlic mushrooms on salad with pate on crackers, seedy for me. Small white wine and soda. 1 cc chocolate pot.

This is just one of the reasons I love this thread, ideas and reminders on what's good.

I totally forgot about garlic mushrooms being a thing, as no one likes mushrooms here (heathens) so tend not to get them as much.

If I can grab a few loose ones tomorrow (because I like them but don't want them all week) you've just helped me decide on what should go with my dinner.
 
Well my GF meal on my last flight was indescribable. I wish I had photographed it. I passed on the sarnie.

In the departure lounge for the second flight. As the first meal is pizza based I don’t hold much hope.

Breakfast, if, it is as billed should be OK. Time will tell.

The outbound catering was excellent.
 
The steak was very good last night. I was greedy and gave myself 2 small steaks but couldn't finish them, which was a waste. But they tasted great without salt and with the marinade. I have some more thin slices of the steak, ready marinaded, for breakfast with a couple of eggs.
2nd meal will be chicken tagine.
My cleaner called yesterday to say she's back from her holiday in Tenerife so she will come today to do my floors. As a result, I've already used too much energy doing things I haven't done over the last week when I've been feeling really poorly. It's crazy, I know, cleaning so that my cleaner can come and find not too much of a mess around the place, but she only comes to do the floors, nothing else. Just as well I have a reasonable supply of pain killers on hand.

You can freeze mushrooms too. I usually buy bargain packs, wipe slice and freeze ready for adding to - most things really. Brilliant in lumpy soup, which is my brunch most days. That way you always have mushrooms and it dosn't matter that nobody else likes them (heathens indeed!).
 
Basic lumpy soup: Bone broth, vegetable stock cube, olive oil, butter, garlic, turmeric, whatever herbs and other spices take my fancy at the time, then any keto-friendly veg (usually anything from a list of spring onions, kale, mushrooms, bean sprouts, leeks, cabbage, small amount of lardons, any shreds of meat left from the bones that made the bone broth) not much else really. Sometimes I add a tablespoonful of mince (I buy a bag of it and freeze in individual tablespoonfuls). Cheap and easy, as I love good food but don't faff in the kitchen.

1 April bed 6.9 FBG 6.8. Ist day of the holidays and the boys are staying as DIL'S Family are arriving from USA. A chaotic day, but that's another story.

L. A but of crustless quiche in between shopping as I had no other time available. Youngest was being cantankerous, so I had multiple meals on the go.

D. Eventually! A sandwich with ham and coleslaw (SRSLY Bread) and a mug of tomato soup.

2 April bed & FBG both 7.2. Youngest was still cantankerous all because he didn't get to go to the airport due to delayed/missed connection and AWOL luggage. Eventually, I delivered him back. At least I got a rest from swimming lessons as he refused to go.

D. Rare steak with GF Yorkshire pudding, sprouts, asparagus, half a roast potato and horseradish. Peroni 00

I thought it did look rather nice.
 
Just found a Sophie Grigson recipe for Broad Bean Fregola. Apart from the pasta it looks good. I think I should try it with cauliflower rice instead of the fregola. Has anyone tried doing something like this?


The steak was pretty tasteless as a replacement for bacon. I didn't salt it, of course. Trying to reduce the amount of salt - just in case there is anything wrong with my kidneys that medics have omitted to mention. I wanted to try it "as is". The rest I will marinate in herbs and spices to give it some taste. Of course, had I cooked it longer, it would have caramelised and been more tasty, but then it would have been overcooked and have a texture more like old leather. Onwards and upwards.

Cauliflower rice should work fine with that.
 
Those little pots are so useful for a single portion, aren't they? I have quite a collection because I hate to dispose of anything so well made but I don't use them very often. Quite useful as saucers for flower pots as well.
I've got way too many of these little dishes. As you say, they seem to have returned to carboardy type dishes now. I doubt I'll run out of them anytime soon.
 
The mysterious 'snack lettuce' was on offer again at Aldi and I liked it last time so I bought it again.
Filled 3 leaves with German 'zwiebelmettwurst, a hard boiled turkey egg, raw onions and some spicy garlic sauce I found in the fridge, tasty!
Also had a slice of LC bread with celeriac mayo (grated raw celeriac, mayo, salt and pepper).

I'm perfectly happy with a cold meal once in a while, but while it was tasty it wasn't the best choice today.
Earlier this week when the weather was sunny I got a bit overoptimistic and turned off the heating for the summer. Then grey weather returned and it hasn't been over 12 degrees in my living room since. I can live with that but a warm meal would have been welcome. :bag:
The cold (or more likely covid, half the family has it) I developed after our family weekend last week doesn't help either, but thankfully diabetes keeps behaving pretty well. :joyful:
Oh well, spring will come and until that happens I'll just call it spring on character and all is well! :happy:

Not sure what I'll eat in the upcoming days but pretty sure that hard boiled eggs will feature heavily.
My cousin invited me to come paint and search for eggs tomorrow with a lot of family members so I decided to bring some cool eggs, the Indian runner ducks and turkeys keep providing more than we can eat. :)
But I forgot to tell my cousin so I'm adding 19 very large eggs to the likely too many they already bought. :hilarious:
19 because one of the turkey eggs cracked after boiling so I had that one with my meal today.

Tips on what to do with lots of hard boiled eggs welcome!
Any dishes you can freeze?

I already decided I'll hide some where my neighbour-in-the-garden will find them when doing his daily search for eggs, finding hard boiled and painted eggs on your sleepy morning rounds must be pretty funny. :cool:
I'll post a picture of the eggs after painting tomorrow. :)

Tuesday 4 April - bed 6.6 FBG 7.2. I'm picking up eldest later as we're all off to the dentist this afternoon. Checkup time, and he wanted lunch here first.

B. TAG and a slice of SRSLY toast with melted cheese. I'm still smiling about the flying cheese in the Air Fryer. Was it @AndBreathe that told us about flying chicken skins??

L. A bit of crustless quiche. 6 almonds, then dentist.

Wednesday 5 April bed 7.2 FBG 7.4. Another quiet day as the rest of the family are away sightseeing. I wish I'd got on with things, as I'll explain later.

Thursday 6 April bed 7.3 FBG 7.1. We took the eldest to the Doctor Who event today at the National Museum. Grandson went wild with my mobile, taking photos.

L. At the event - away a good 4 - 5 hours. Nothing foodwise.

D. A spicy chicken SRSLY pizza. CC little chocolate pot. Peroni 00.

Friday 7 April bed 6.9 FBG 7.6. Legs were giving me problems after all the walking I did yesterday. I didn't take the car as parking is hopeless at the Museum.

B. TAG and a slice of SRSLY toast with melted cheese.

L. Nothing - had to get out shopping (and thank goodness I did).

D. Peppered chicken breast with GF Black pudding and broccoli. CC little chocolate pot. Peroni 00.

I was waited on hand and foot. When I got back from the shopping, I turned to take my jacket off. Leg and ankle were so solid that I lost my balance, went over on my left ankle, grabbed a chair to balance, chair tipped up, sent me flying, and everything else on the nearby table. Pint of water went everywhere, soaking me and everything around. Poor hubby was panicking, as me falling is not good with the spinal injuries. Saturday 8 April bed 8.1 (guessing it was the shock of the tumble) FBG 7.6. Ended up being waited on again. Tried to get up, and I couldn't put any weight on my left leg/foot. I've also bruised my left arm/shoulder and left hip. Paracetamol wasn't helping. I had to get Hubby to bring me a crutch upstairs, but it was still difficult. Getting downstairs required sliding down on my behind! Goodness knows how I'll get back upstairs.

D. Cold cuts. Roast pork, ox tongue, ham, pork and egg, mini German sausage, coleslaw. CC Little chocolate pot.

Spent the day working on my leg/ankle, convincing hubby - No, I do not want to go to A&E and taking an age to get anywhere. Hubby is going out to get me an ankle support tomorrow as I doubt I'd make it to the car.

Thankee thankee, that is indeed a top tip, never ever thought of it, then again didn't own a freezer until I started a family so never used to freeze much.

Didn't have the mushrooms as spent most of the day kids swimming lessons and in the park, but it's on in the week, esp now I know that.

Shared dinner with mrs mitten with the same base as yesterday, but seasoned as you would a lamb kofte, with pan fried grilled cheese as the "meat" (hesitate to call it halloumi as it was made from cows milk in Edgware, rather than Cyprus :D)

Sorry to hear about the tumble and the fallout from that.

Went to the Doctor Who experience and exhibition Cardiff when it was there for a while and then it just shut down, looks like it "regenerated" as maybe a travelling exhibition.
