What have you eaten today? (Low carb forum)

Only tea and a cup of hot milk since the salad I had for breakfast yesterday. Just beginning to feel a bit peckish now but not sure I can stand up to make any breakfast/brunch. At least Neil managed to get me some eggs this morning as well as some chicken and some pork. I saw strawberries in the bag as well so maybe that would do me - strawberries and yoghurt.

BG finally down to below 7 (6.7). It's been high despite no actual food for more than 24 hours.
 
So far today pre work out.....
B - Couple of slices of Parma ham, small portion of salted nuts, cream/ almond milk tea.
L - Chicken breast with green salad and crushed walnuts cream/almond millk tea

Lunch was egg mayo, slice of ham and chopped salad.
Supper was mini chicken fillets,broccoli and a little Nandos Lemon & Herb sauce.
today same brekkie.
Lunch was a tin of mackerel in spice tomato sauce (don’t like the oil version) and a small avocado chopped up. I am a wuss with avocado but this one was just the right texture for me, not slimy.
Supper since its Firsday will be chunky cod finger, broccoli or cauli cheese.
@Annb I am sorry you are having such a rough time, you are so stoic and brave despite the pain and discomfort. I hope you start to feel good enough to get back on your feet. Suggest comforting scrambled eggs which are quick to make.

Scrambled egg is a great suggestion for 2nd meal today.

For brunch I had 3 strawberries chopped into a mix of zero fat yoghourt (Alistair bought it in error) and an equal quantity of double cream.
 
First thing kefir with last spoon of home cooked rhubarb
Late am two boiled eggs and one slice of LC toast followed by the peel of one Apple
Mid pm a few squares of 100% chocolate with mint oil
Dinner venison meatballs in LC passata and glass of red wine followed by LC crumble with yoghurt
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and phd bar.
Skipped lunch.
Mid afternoon: black coffee and a Holland & Barrett protein bar.
Dinner: cheesy scrambled egg on Marmite on LC toast followed by SF strawberry jelly and cream.

@Outlier I share your joy! I find OMAD difficult too, so a wholehearted congrats from me!
B- scrambled eggs on HiLo toast.
L- 1/2 avocado, 1 h/b egg and smoked salmon
D- airfried pork chop, broccoli and cauli cheese ( I knew those little ceramic baked Camembert dishes would come in useful)
Definitely had some nuts somewhere along the way but no chocolate. IMG_2212.jpg

Those little pots are so useful for a single portion, aren't they? I have quite a collection because I hate to dispose of anything so well made but I don't use them very often. Quite useful as saucers for flower pots as well.

The pork chop looks lovely - how long do you cook it in the air frier? and do you put tin foil in the bottom or what do you use? (yes, I just got a new air frier - so all ideas and tips are welcome) :)

Your Camembert comes in ceramic pots? Cool. I’m just used to just the the very thin wood or cardboard. A ceramic pot would be much more useful.

Great looking pork chop!

For the 3 months we have been here, the resident air fryer has not been turned on once. I doubt the home one will be 24hrs before being deployed. . How differently we live.
 
Yesterday

Breakfast: Smoothie thing (almond milk, faba bean protein powder, psyllium husk, sugar free drinking choc)
Morning tea: see comment at end
Lunch: rye cruskits x 3, ham, tomato, lettuce
Dinner: minced chicken thing (minced chicken, garlic, ginger, chilli, oyster sauce, leek) with cauliflower rice
After dinner snacks: 95% cocoa chocolate, protein bar, 99.6% sugar free choc ice cream

1/4 normal bolus insulin but I had to have an orange juice and crackers with cheese mid-morning because breakfast was only 1.4g net carbs and I was going low. I think for me 1.4g is too low so if I have that again I’ll have to add toast or something (not low carb I know)

I agree, and yes they have a myriad of uses.
@MommaE it was just at Christmas my local Coop sold them like this, we’re back to the little cardboard/wooden boxes now.

I’m a very slapdash cook when it comes to temp and timings. I think it was somewhere between 180-200degrees. I rubbed a little oil on it and salt and pepper then cooked it for the same amount of time as Pauls potato wedges took. Maybe 20 mins?
My daughter came round while I was cooking so I forgot about it for a bit. When I took it out she said it looked better that when she’d tried to cook one in her a/f and we decided I must have cooked it longer. It was still juicy inside.
I usually do put foil in the bottom.

I nearly bought another last week in Portsmouth! There was a Tefal shop opposite the hotel which had the new all singing and dancing a/f with steam function for 1/2 price. It took great willpower to walk away and think about it, then keep myself away until the shop had closed.
 
Your Camembert comes in ceramic pots? Cool. I’m just used to just the the very thin wood or cardboard. A ceramic pot would be much more useful.
A lot of the time it comes in cardboard but once in a while in a ceramic dish. The last one I bought was in cardboard and it tasted horrible! Maybe it was a cheap version or maybe older than I would normally have it and it tasted kind of chemical. Threw it out.
 
I've taken to whizzing up cauliflower really small with the hand blender and frying it with onions, cabbage, kale etc in olive oil with various herbs and spices

Before I was using a grater and I'm sure you all know the mess that can happen :D

Bits of cauliflower everywhere! and then trying to scrub it off a grater...

I cleaned the flipping thing 3 times the other day and there was still cauliflower stuck to the sides like some sort of bizarre magnetic vegetable.

Then I find out we have a chopper attachment to the hand blender, one pulse and its finely chopped and far less mess and much easier to clean afterwards

what is this wizardry!?! (and where have I been living)

Do you chop the other vegetables as small as well? I might try to do that next time I have a cauliflower.

For today: Breakfast/brunch, shortly, will be very thin slices of steak cut from a roasting joint (I chilled it down before slicing so I could cut thinner slices) with a couple of fried eggs - Neil managed to get me some eggs yesterday.

2nd meal will be a thicker cut from the beef, fried with some mushrooms and a mixture of oniony things ( leek, onion, garlic) also fried in butter.

Yesterday for my second meal I had scrambled egg eith one RyVita (7.9 g carbs). I suppose the 3 strawberries at brunch time added to the carb count, but not very much.

I bet there are emporia selling Tefal all over. Just sayin’………..
