What have you eaten today? (Low carb forum)

Tuesday 25 April - bed 7.1 FBG 7.3. I have most of this week planned out (although I may swap some meals around).

B. TAG and 2 slices of SRSLY toast with benecol spread and, thanks Mrs T123, nursery food! 2 mashed up boiled eggs with a little butter and salt. Benecol dairy free.

L. 6 almonds

D. Tuna melts on 2 slices of SRSLY toast. Tuna in spring water mixed with small spoonful of corn, spring onion, red pepper, 50/50 mayo & sour cream, mustard, lemon juice, grated Emmental, paprika. I think that's it.
CC little chocolate pot later. Currently, sipping a Peroni 00. View attachment 60566
Could I ask what TAG and SRSLY are please. Very new to all this

TAG is just Tassimo Americano Grande - a big black coffee in simple terms.

SRSLY is the new abbreviation for SLC - Seriously Low Carb. They've had a brand change. They are seriously good, low-carb bakers. I love their sliced bread and their artisan seeded rolls. They do quite a range of low-carb items. Not cheap, but very good.

Haven't been posting so have missed a lot of the thread and haven't been eating so well at all this last week or so

Took to eating a bit more (but still low carb) to help with the strength I needed as started CPAP treatment, which has made me feel like I've been living under a veil all my adult life, and now that veil has been lifted, which is great. but then the start of the week we suffered a sudden devastating bereavement in a family member who was relatively young, which I'm feeling wonky about, and using as an excuse to stuff my face with rubbish... trying to limit the damage to this week though, and return to a fully low carb way of life.

Haven't got a meal to post today because it wouldn't fit in at all with the ethos of this thread but forcing myself to post so I do tomorrow.

@ravensmitten , sometimes life gets in the way, please don't beat yourself up about it.
Just return to a more sensible way of eating but don't see it as a failure if it doesn't always work out.

Losing people is hard, and more so if they are young. And sometimes things like this don't leave enough room to stay on track with our own choices for a bit, which is fine.

And wonderful to hear that the CPAP improves things so much, what a wonderful result!

B: Almond milk smoothie with blueberries and psyllium husk
L: Fritata (is that how you spell it? Quiche without a base) with salad
D: Lamb shank with very small cabbages (Brussel's sprouts), cauliflower and broccoli. I was tempted to make mashed potato but resisted mainly because boiling the water was too hard
Post-dinner snacks: the usual :) I reckon that I eat more after dinner than for actual dinner most nights except the lamb shank was pretty huge! Fred Flintstone would have been proud

Thank you. I’m not a big coffee drinker or perhaps I would have got the first one

Thank you for the link to the low carb bakers. I’ll take a look at them as it would be good to find some low carb bread.

We tend to order their bread, etc, in multiples. It has to be kept in the fridge or freezer. It has a life span in the fridge. What I tend to do is first, make sure I have space in the freezer, secondly, order 6 loaves, finally put 5 in the freezer, and keep one out for use that week.
After that, I tend to remove from I am going to use from the freezer. It thaws quickly, and it toasts from frozen.

Thursday 27 April - bed & FBG 7.6. BGs comIng well down during the day but sticking stubbornly in the 7's bed & FBG.
@Annb Rosslyn is a fascinating place, and only about 20 mins from my home. It still gets very busy, and there were coaches galore when I was there during the week.

Another busy day. Boys here for dinner as DIL, her parents, son all out as their stay comes to an end. It was 8 pm. before they got back. I was going to go collect them, but son decided an Uber was quicker. How wrong he was! I warned them about the road closures for the latest tram installations. It seems the Uber guy didn't have a clue about them!

B. TAG and a DD croque madam. Photo is from the Diet Doctor site. It's very tasty. Benecol dairy free.

L. 8 almonds

D. This got complicated. I made 3 versions of the same meal. GF for eldest, including more tomato & cheesy sauce for youngest, and no cheesy sauce for Hubby! It was so late by the time I got boys home that I was past doing yet another version for myself.
I ended up with 2 slices of SRSLY toast with Benecol spread, ox tongue, and coleslaw. CC little chocolate pot.Screenshot_20230428_102421_DietDoctor%20eat.jpg

That‘s great, thank you. I’ll see what space I have in the freezer.

Late morning: black coffee and a H&B protein bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: Keralan chicken curry with cauliflower rice.

Hi, I’ve never had cauliflower rice. How do you find the flavour? I’m assuming it taste nothing like rice…

Life's got a bit busy I might have missed a day or 2 and now I can't remember..

Last nights dinner was cooked for me by host who specially bought in cauliflower rice to go with a chilli. However she'd also added beans and loads of veg into the chilli, and then kept filling the red wine up!
Have severe headache today.

Today breakfast was out in a cafe and I learned the expression greasy spoon still applies! A fried egg, bacon and sausage swimming in fat, and the sausage was so cheap I reckon there was next to no meat in it at all, just sawdust.

3pm 30g cheese with spoonful coleslaw.

Breakfast: RyVita with cream cheese and couple of cherry tomatoes.

2nd meal: Hotpot from yesterday to finish off.

BG's a bit lower today - started about 12 but came down to the 7's. Better than the last few days. Must be the effects of stress, which is odd. I'm usually a very laid back kind of person, but have had difficulty getting a supply of heating oil over the last month. Finally sorted it out this morning. I had thought I had lost £350+ purchasing oil that wasn't delivered and that made me angry and upset. Back to normal now.
