What have you eaten today? (Low carb forum)

Crossing fingers 're your dizziness staying away and you get some time out of the house. Im interested in your seed growing to produce mixed sproutings. Do you use seed trays or a special unit ? I'm hoping to do more gardening this year but this would be good to start meanwhile. I know you can get special units for sprouting but wondered about trying some trays would wet kitchen towel work as a mat do you think?

Re the sprouting seeds - I remember growing cress on paper towels at school, and I did try to sprout broccoli seeds a while ago following tips from someone in this thread- putting them in water in a dark cupboard. I didn’t have any success though, so I bought a kit from this company

They have a lot of varieties, I was looking for something to give me more magnesium ( Chronometer indicates I don’t get enough). It’s more expensive than paper towel obviously, or the glass jar in a cupboard, but I’m really pleased with the results. It’s a nice website with growing tutorials and nutritional info for all the seeds. I’m no gardener but It’s quite satisfying to snip a few leaves from the windowsill onto a salad.

For lunch today I air-fried a slightly disfigured spatchcock poussin. I couldn't be bothered cooking again, so for dinner I visited the local Indian takeaway and they gave me a lamb tikka dish with a side salad.

Although I've only just got to your post @IanBish (I'm still miles behind), your disfigured poussin must have been the source of my odd dream. I was away from home in the dream, staying in a hotel, but I had gone to M&S to buy a small chicken. I have no idea why, but since when do dreams make sense! Returning to the hotel, said chicken kept escaping (even although it was deceased & plucked). I eventually made it into hotel with a tight grip on the chicken, only to go into the smallest lift ever! In real life, I would not have gone in this thing. Not surprisingly, the lift jammed, I was stuck inside with this chicken, and you could not move to raise the alarm. I woke up then, thankfully. I kept seeing your chicken when scanning the posts.
Even stranger, I noticed another post on our town page asking if anyone had lost a chicken as one was strutting up a steep hill quite near us. It had escaped from one of the larger houses at the other side of a very busy roundabout. How it made it over and on its way up the hill I'll never know. There were a lot of jokes about HOW did the chicken cross the road.

No Sainsburys near me now unfortunately, but I’ve found the organic coconut cream from BuyWholefoodsOnline is great and lower carb than most.
 
All the family round for lunch today, I love it when we can all get together. There was much excitement discussing the new puppy which will be joining No 1 daughter’s household in a couple of weeks.
brunch was coffee, chaffles and streaky bacon.
lunch/dinner- slow roast brisket, cooked in low oven overnight. No liquid at all, just double sheet of foil to cover. Puréed swede. Creamy Parmesan cabbage and steamed broccoli. No one expects pudding anymore which is just as well.
 
Going to friends Saturday
. Have promised to take a dessert that carb eaters won't notice is low carb!
What are your best recipes please... using minimal sweetners
We're past Saturday now, but for next time, there are loads on my CMT, and you are in my recipe circle. There's a Black Forest Gateau there, which I've made many times. No one has ever guessed it is low carb. I doubt you'd want to know the calories in it though!
 
Early post for me as I’m doing a virtual wine tasting this evening! It’s run by the company I bought the lovely low carb lager from, they also sell low carb and low cal wine. Most are fairly low alcohol too, but that’s probably not a bad thing.
B- scrambled egg
L- tuna melt muffin. A slight variation in @Rachox ‘s recipe - this uses blitzed cottage cheese in place of the mayo and sour cream. H/m yoghurt with raspberries and seeds.

I had a look at their website but couldn't see this. Was it a seasonal special? I thought it would be a great gift.

Sautéed bok choy and a Wiener schnitzel, both with a creamy keto mushroom sauce. :hungry:

Not sure about the carb count of the schnitzel, I bought them on friday and remember thinking it wasn't as bad as I thought, but I've forgotten what it said on the pack. Didn't look how much one weighed either, and I got rid of a significant amount of breadcrumbs before frying, so the carb count on the package would be off anyway.
None of this matters much; even if I'd know the exact carb count I still wouldn't know how much insulin to take for it, those ratios don't really seem to work with me.

So as usual, I'm simply winging it and we'll see what happens! :joyful:

Basing my guess on yesterdays Turkish pizza. I took 13 units initially, later topped up by 3 units 3 times, so a total of 21, which resulted in a wonderful straight line in the higher 5's and low 6's overnight. The half pizza likely had a LOT more carbs than my schnitzel, so I went with 9 units today, less than half of yesterdays dose.
Two schnitzels in a pack, so tomorrow I'll come back to this post and I'll likely be able to make a better educated guess on dosing before my meal. :cool:

I'm sorry my poussin was the source of your weird chicken-related dreams. I got the poussin from Tesco. To my knowledge, although it may have tried to escape its captors, I doubt very much that it had been in a hotel lift, and it were, it would have meant you no harm.

Today, however, I had a baby chicken. A bit more meat on it than the aforementioned poussin, but it wasn't great. I think I'll stick with the chicken legs in future. Don't have nightmares...

Mine was farmed, I think. The texture wasn't all that great. I think I'd have to go to the fishmongers in town for wild salmon. I might get distracted as they have all sorts of weird and wonderful fish there.
Evening @IanBish. Yes, it's safe to assume salmon on sale in the UK is farmed, unless labelled otherwise.

I count my lucky stars that we have a first class fishmonger within striking distance. Currently, he has no plans to retire. Long may that continue. We've already lost our sole remaining greengrocer.

Well, tht went downhill (or rather uphill) pretty fast.
Went from 4.8 to 8.0 (fingerprick) in less than 40 minutes, straight arrow up on my Libre.
Straight arrows up aren't good for my mood, and nor is seeing an 8 when I know I'm still rising. (Unless on special occasions. A cheap schnitzel is definitely not a special occasion, even though it tasted really good.)

I added a rage bolus of 5 units (don't try this at home, definitely not recommended to add more insulin this soon after your last dose!), and I'll see if my neighbour wants to eat a schnitzel tomorrow.

Back to normal tomorrow, this dosing for higher carb foods clearly isn't my thing. Still, nothing wrong with giving it a try every once in a while! :joyful:

I thought it may have been. Apart from the taste and texture, I like to think that the fish I eat has been swimming in the sea and enjoying its life, rather than being crammed into an underwater cage with thousands of other fish. I have some frozen salmon which is supposedly wild caught, but I'm not sure I trust that. Is our food natural any more?
 
@MrsA2 couldn’t agree more - it is sad and frustrating to see people so resistant to the idea of low carb. Even my GP said she couldn’t give up bread!

Dear me @DJC3. I take it your GP is not diabetic then. Should she develop type 2, I suspect she'd cut out the bread PDQ!

Sadly, you have only to walk round a hospital ward to see the long-term consequences of relying solely on antidiabetic meds and making no changes after diagnosis.
 
A lovely long beach walk today, the ocean was exceptionally calm, beautiful.
Breakfast, bought sausage and scrambled egg
Lunch, was quite late after playing pickleball, made some grilled local shrimp in a bit of mayo/ ketchup sauce on normal white bread roll with fresh spinach and tomato…delicious but not wise.
Dinner, currently thinking the shrimp sandwich was enough to not really need dinner too. May just be a snack and cocktail.
 
Wednesday 21 February - bed 6 FBG 7.1. Wonderful, second day back at school and youngest gets injured on an outing, elder gets caught up in avoiding a known troublemaker who has been kicked out of the other senior school.

B. TAG and 2 slices of SRSLY toast with coronation chicken. Benecol dairy free.

L. Nothing

D. A lot of running about so I ended up with a very late sandwich with prawn mayo on SRSLY bread. Gin and soda.

Thursday 22 February - bed 7.7 FBG 7.3

A straight repeat of yesterday's food. Breakfast & dinner was exactly the same. Add lunch a bit of crustless quiche.

Glad to say youngest was just a bad wrist sprain. Elder we've worked out a revised timetable, which means I'll be teaching him at times again. It should only be a few weeks, hopefully. No Aqua today - I was on maths & physics duty!

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears smothered with butter.
A medley of baked broccoli, leeks, onions, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, white cup mushrooms, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnuts.
Water to wash down tablets.
 
Last evening I threw some sausages in the oven so that I would have some ready for breakfast and some left over for another meal, maybe Monday or Tuesday. They had to be cooked because they were right on their use-by date.

So, this morning, instead of using the sausages in something, I just had cold sausages (3). Then I just kind of snacked on cold sausage for the rest of the morning. Still some left to use in a proper meal. That was enough but this evening I thought I should have something so had some raspberries with double cream. Really wasn't all that hungry and I should have stopped at that, but there's a box of walnuts sitting on the worktop and I've had a few of them. Just greed really - certainly not essential. I don't usually do this and it must stop! I've put some weight back on so must reverse that.

So back to Saturday.. brekkie usual slice LC toast cooled, good butter, copious tea. My fussiest meal of the day since I like my toast cooled before I spread a thick layer of butter and my tea very strong with dribble of milk, sort of mahogany colour. Just some useless info!
Lunch was avocado and prawn salad.
Supper was t/a of Tandoori King Prawns with cauli bhajee.
Yesterday same brekkie.
Lunch was big chunk of Red Storm with 3 Carrs water biscuits (2.5g each so not bad). Needed something quick and easy as was pottering in the garden in some very welcome sunshine.
Supper was half a small spatch**** chicken with broccoli preceded by gin & soda and 6 walnuts!
@DJC3 glad the dizziness is getting better, a week is a very long time. @maglil55 thanks for the advice about the specials at Antica. @Antje77 well done on handling your delicate conversation with your neighbour and glad it had a good result and you are still friends. @shelley262 I agree about homegrown tomatoes, the flavour and they are the perfect temperature if picked before eating. In 2020 I grew lots of stuff but broccoli defeated me. It was invaded and devoured by white flies. the following year we had tomato blight and it was in the whole village so I didn’t feel guilty just disappointed. Since then I have grown tumbling cherry toms in hanging baskets with great success after been told if they’re up high off the ground the blight won’t get them.
